ADOBO SEASONED CHICKEN AND RICE



Adobo Seasoned Chicken and Rice image

2 tablespoons kosher salt
2 teaspoons granulated garlic
1 teaspoon ground cumin
2 teaspoons granulated onion
1 teaspoon paprika
2 teaspoons freshly ground black pepper
2 teaspoons ground turmeric
1 tablespoon finely chopped fresh oregano leaves
4 chicken thighs, with skin, cut in 1/2
4 chicken breasts, with skin, cut in 1/2 lengthwise
5 tablespoons olive oil
1 large Spanish onion, finely diced
1 medium green bell pepper, finely diced
1 medium red bell pepper, finely diced
About 1/3 cup tomato powder or 1 to 2 plum tomatoes, seeded and finely diced
4 cloves garlic, finely chopped
3 cups long-grain rice
4 3/4 cups homemade chicken stock
1 bay leaf
Salt and freshly ground black pepper
1 cup frozen peas (not thawed)
3/4 cup pimento stuffed green olives
3/4 cup pitted picholine olives
Freshly chopped cilantro leaves
Freshly chopped flat-leaf parsley
Finely chopped fresh oregano leaves
Squeeze lime juice

Steps:

  • Mix together the salt, granulated garlic, cumin, granulated onion, paprika, black pepper, turmeric and oregano in a small bowl. Season both sides of the chicken pieces with salt and pepper and then season with the adobo seasoning mixture.
  • Heat 3 tablespoons of oil in a large Dutch oven over high heat. Place the chicken in the oil skin side down, in batches, if necessary, and saute until golden brown. Turn the chicken over and cook until the second side is golden brown. Transfer the chicken to into a separate pot with all cooking juices, cover and allow to cook through over medium heat. Keep warm.
  • Place the browning pan with the remaining 2 tablespoons oil back over high heat. Add the onions, green and red peppers and cook until soft. Add the tomato powder, garlic and cook for 1 minute.
  • Add the rice to the pan, stir to coat the rice in the mixture and cook for 1 minute. Add the chicken stock, bay leaf, salt and pepper and bring to a boil. Stir well, cover, reduce the heat to medium and cook for 10 minutes.
  • After 10 minutes add the peas to the pot, cover and continue cooking until the rice is tender and the chicken is cooked through, about 8 minutes.
  • Remove the pot from the heat and let sit 5 minutes covered. Remove the lid, fluff the rice and gently fold in the olives, cilantro, parsley, oregano and squeeze of lime juice. Add the chicken and stir to combine.

1/2 C mango or peach nectar (blend until smooth)
1/4 C honey
1-2 T red hot sauce
salt and freshly ground pepper
2 t garlic powder
2 t onion powder
2 t turmeric
40 chicken wings rinsed well and patted dry
2 T canola oil
2 T finely chopped fresh oregano or 2 t dried oregano

Steps:

  • Preheat oven to 425 degrees. Stir together mango nectar, honey, and hot sauce in a bowl; season with salt and pepper. Set aside. Mix garlic powder, onion powder, and turmeric in a small bowl for adobo seasoning. Add 1 T of salt and 1 t black pepper. Toss adobo seasoning with wings in a bowl and then add oil and cover well. Line cookie sheet with foil and spray with cooking oil. Place wings on cookie sheet in a single layer. Bake 20 minutes. Turn the wings over; continue baking for 20 minutes. Remove the wings from the oven and generously brush with the glaze, then bake another 10 minutes until cooked through. Remove to a platter and sprinkle with the oregano.

I'll be darned if I know where I got the recipe from but if and when I find out, I'll attribute it to the proper provider. I have made a few minor alterations to fit our taste and I believe it was for the better.

2 cups flour
1/2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1 tablespoon celery salt

2 teaspoons garlic salt
1 teaspoon ground ginger
1 teaspoon msg (optional) or 1 teaspoon Accent seasoning (optional)

Steps:

  • Combine all ingredients in a bowl.
  • Using sparingly as this batch will do number of dishes.
  • Dip chicken pieces in beaten eggs.
  • Next, toss chicken pieces in bread crumbs (seasoned or unseasoned).
  • Finally, toss chicken pieces in Seasoned Flour recipe.
  • Pre-heat oven to 350 deg.
  • Place chicken in a tray or cookie sheet lined with foil (shiny side down), spray with Pam or equivalent.
  • Place chicken pieces on the tray after completing above the process. Spray chicken with Pam, turn, spray other side.
  • Cover with foil and bake for 40 minutes for drums, chicken breasts (bone-in), thighs etc.
  • For wings and chicken fried chicken, follow the above procedure but reduce cooking time to about 15 minutes.
  • Remove foil cover and put chicken back in the oven for the same amount of time. (cut time back by 25% if using a convection oven).
  • Chicken should be nicely browned, crispy and moist.

  • Season both sides of the chicken pieces with salt and pepper, and then with the adobo seasoning mixture.
  • Heat the oil in a large Dutch oven over medium heat. Place the chicken in the oil, skin side down, in batches if necessary, and sauté until golden brown, about 4 minutes. Turn the chicken over and cook until the second side is golden brown, about 4 minutes. 1 1/3 cups uncooked regular long-grain white rice
2 2/3 cups water

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp. Add bell pepper, onion and celery; cook 2 to 3 minutes longer or until crisp-tender. With slotted spoon, spoon bacon and vegetables into 3 1/2- or 4-quart slow cooker.
  • Sprinkle chicken thighs with 1 teaspoon of the Cajun seasoning; place in same skillet. Cook chicken 4 to 5 minutes, turning once, until browned on both sides. ROASTED TACO-SEASONED CHICKEN WITH LIME CREMA



Roasted Taco-Seasoned Chicken with Lime Crema image

3 1/2 pounds bone-in chicken parts, breasts cut in half, if using
1 red onion, cut into 8 wedges
One 1.25-ounce package taco seasoning
1 tablespoon vegetable oil
1/3 cup Mexican crema or sour cream
3 tablespoons fresh lime juice plus 1 teaspoon finely grated zest
2 tablespoons finely chopped fresh cilantro, plus sprigs for garnish
Kosher salt

Steps:

  • Put the chicken and onion in a large bowl and sprinkle with the taco seasoning. Drizzle with the oil and toss well to coat. Cover with plastic and refrigerate for at least 2 hours and up to overnight.
  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with 2 layers of foil.
  • Arrange the chicken and onions on the prepared baking sheet in a single layer, skin-side up. Roast until the skin is crisp and the chicken is just cooked through or an instant-read thermometer inserted into the thickest part of the breast registers 160 degrees F, about 45 minutes.
  • While the chicken cooks, stir the crema together with the lime juice and zest and cilantro. Season with salt.
  • Arrange the chicken and onions on a serving platter and garnish with the cilantro sprigs. Serve with the lime crema on the side.

5 (48 ounce) cans boneless chicken
6 (10 3/4 ounce) cans cream of celery soup (undiluted)
2 1/2 cups hot water
3 chicken bouillon cubes
1/4 cup plain breadcrumbs
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon poultry seasoning
120 hamburger buns

Steps:

  • Open boned chicken and place in large roaster.
  • Stir chicken until all pieces appear to be shredded.
  • Dissolve bouillon cubes in hot water and add to chicken.
  • Add remaining ingredient except hamburger buns.
  • Stir thoroughly.
  • Heat mixture up to 300 degrees.
  • Once mixture is heated through place 1/3 cup of mixture on hamburger bun and serve.

2 tablespoons butter
1 cup Progresso™ plain panko crispy bread crumbs
3 tablespoons everything bagel seasoning
1 egg
1/2 cup chive & onion cream cheese spread (from 7.5-oz container)
1/4 cup chopped fresh chives
4 boneless skinless chicken breasts (7 to 8 oz each)

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper.
  • In 10-inch nonstick skillet, melt butter over medium heat; stir in bread crumbs. Cook and stir 3 to 5 minutes or until golden brown. Remove from heat; transfer to pie plate or shallow dish. Stir in seasoning; set aside. In small bowl, beat egg; set aside.
  • In another small bowl, mix cream cheese and 3 tablespoons of the chives, mixing well.
  • Cut pocket in each chicken breast by making a horizontal slit along thin long edge, being careful to not cut through to opposite side. Stuff each pocket with about 2 tablespoons of the cream cheese filling. Press edges of chicken together to seal, and secure with toothpick.
  • Dip chicken into egg to coat both sides, then dip into bread crumb mixture, pressing to coat chicken completely. Transfer to pan. Bake 30 to 35 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Let stand 5 minutes. Garnish with remaining 1 tablespoon chopped chives before serving.

1/2 cup chopped green pepper
1/4 cup chopped onion
4 -6 chicken breasts
2 teaspoons cajun seasoning
2 (14 1/2 ounce) cans diced tomatoes

Steps:

  • Cook bacon over medium high heat until crisp.
  • Add bell pepper & onion, cook until tender.
  • Spoon bacon & vegetables into crock pot. Sprinkle chicken with 1 t Cajun Seasoning and brown in skillet (cook 4 to 5 minutes).
  • Arrange chicken & drippings in crock pot over vegetables.
