SEAFOAM SALAD - DESSERT
This yummy dessert/salad has been in the family for ages. Works just as well with sugar free jello and light products. I usually double this recipe, and serve it as a nice light dessert or side salad whenever the weather warms. Great for potlucks! Enjoy! Note: Cook time is chill time.

Steps:
- Fold cottage cheese and cool whip together.
- Add dry jello and mix well.
- Add well-drained pineapple and refrigerate 20 to 30 minutes or overnight.
- Garnish with pineapple tidbits.

Steps:
- In a saucepan, heat 1 cup reserved pear juice to boiling.
- In a small bowl add lime jello; pour pear juice over jello; stir until dissolved; set aside.
- In a large bowl, beat cream cheese with milk until smooth; blend in jello mixture.
- Chill in refrigerator until partially thickened, about 20-30 minutes.
- In a small bowl, mash pears until smooth.
- Fold pears and Cool Whip into jello mixture.
- Pour into a mold.
- Chill until set, about 2-3 hours.
- Dip mold in warm water for approx 5 minutes.
- Invert onto serving platter.

MAMA'S SEAFOAM SALAD
Oh my gosh, I love this salad. My mother would make it for holidays, and as far as I was concerned, it was so good, it could be dessert. There is something wonderful about the smoothness of the jello with the bite of the cottage cheese and the crunch of the pecans. When I eat it today, it takes me back . . . My mother's notes...

Steps:
- 1. Dissolve jello in hot water. Add cold water and let cool in refrigerator until it thickens to a stiff syrup. (Really watch the jello to be sure that it doesn't set up. Mine turned to a syrup consistency in around an hour or maybe a little over an hour.)
- 2. In a separate bowl, add pineapple, cottage cheese, mayonnaise, and Eagle Brand milk, and nuts and mix together with electric mixer.
- 3. As soon as the jello begins to thicken, whip it well, and then add the other ingredients to the jello and mix well. Lightly grease (with spray) an 11X13 glass baking dish and pour in the jello mixture. Let set up at least 24 hours before serving. Cut into squares like brownies.
- 4. This gets even better as it sits a couple of days and the flavors meld. Ahh, the memories.
WOOD FAMILY'S SEAFOAM SALAD AKA "GREEN STUFF"
A very yummy side dish that the whole family will enjoy. This has become a staple at our family's Thanksgiving, Christmas and Easter dinners. It's a good thing that it makes a lot! My daughter always asks, "Are we having Green Stuff?" I received this recipe from my mother-in-law when I married into the family. She is a wonderful cook! My recipe calls for ingredients that are a little more healthy, as I follow Weight Watchers so feel free to substitute the "real" things. ENJOY!

Steps:
- Drain the pears.
- Put the pear juice in a measuring cup and add enough water to make 2 cups of liquid.
- Make the Jello using the 2 cups of the liquid.
- When the Jello is dissolved, place in the refrigerator until almost set.
- Mash the pears.
- Mash the softened cream cheese adding the milk as you mash and blend this mixture until smooth.
- Add the pears to the cream cheese mixture.
- Put the cream cheese mixture and the Jello in the mixing bowl and blend together.
- Fold in the Cool Whip and mix all together well.
- Pour your Seafoam Salad into a pretty glass bowl.
- Put the halved cherries on the top for decoration.
- Chill well and serve.

This recipe was my mother's. She'd make it for Thanksgiving or Christmas every year. I have made it for my family for 35 years. My daughter says its not a holiday dinner without it.

Steps:
- Make Jello flavors separately; let set (not firm).
- Whip cream till peaks appear.
- Cut small chunks of cream cheese and blend till smaller pieces appear in thick whip cream.
- Fold in both Jello flavors with pineapple and marshmallows.
- Pour into large serving bowl.
- Cover with plastic wrap.
- Let set overnight.

GREEN SEAFOAM SALAD
Steps:
- Drain pears and reserve juice. Put pears aside to puree. Heat pear juice to just boiling. Thoroughly dissolve lime Jell-O in hot juice & put in fridge to cool (about 10 minutes).
- Whip cream cheese with Miracle Whip (about 1 minute). Add cooled Jell-O & whip thoroughly till cream cheese seems dissolved or almost dissolved (takes several minutes). Add Cool Whip and beat till smooth (about 2 minutes.) Put in fridge to set about 1 hour.
- Meanwhile put pears in blender and puree. Add pureed pears to cooled mixture and beat 1 - 2 minutes more. Put in pretty container (clear glass bowl looks great!) Refrigerate an hour or more before serving.

- 1. Pour pear juice over jello and dissolve.soften cream cheese with cream. Add cream cheese mixture to jello. Stir until cream cheese melts. Refrigerate until jello gets thick. Add pears and whipped topping. Mix well. Refrigerate until set.

- 1. Drain pears and heat pear juice to boiling. Dissolve jello in pear juice. Mash cream cheese with 3 tbsp milk until smooth. Stir into hot Jello. Cool and put in refrigerator until slightly thickened. Mash pears with a fork, fold into jello. Fold in cool whip. Put in the refrigerator until set. I put it in a nice decorative bowl and enjoy!
