12 MINUTE STICKY ASIAN SEA BASS
12 minute sticky Asian Sea Bass - Soft, flaky sea bass with a sweet and spicy flavour kick.

Steps:
- Preheat the oven to 200c/400f
- Mix the oil, chilli, honey, soy sauce, ginger, garlic and lime in a small bowl.
- Place the sea bass fillets, skin-side down, on a baking tray. Sprinkle on the cornflour and rub it into the fish gently.
- Spoon on the honey-soy sauce mix (it will pour off a little, but that's fine). Sprinkle on the sugar and place in the oven to cook for 8 minutes. Half-way through cooking, open the oven and baste the fish with the sauce in the tray (it will be stickier now it's been in the oven).
- Once the fish is cooked, take out of the oven and baste again with sauce, then sprinkle the top with coriander (cilantro), spring onion (scallion) strips and slices of chilli.
- Serve with lime slices and some boiled rice or salad.

SIMPLE OVEN-BAKED SEA BASS
If you're looking for a simple recipe that really preserves the delicate flavor of sea bass, then I highly recommend you try this one. You can try this with other types of fish but my version used a Chilean sea bass. The original recipe came from SparkRecipes and this is my simplified version of it. Enjoy!

Steps:
- Preheat oven to 450F°.
- In a cup, mix garlic, olive oil, salt, and black pepper.
- Place fish in a shallow glass or ceramic baking dish.
- Rub fish with oil mixture.
- (Optional) Pour wine over fish.
- Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).
- Drizzle remaining pan juices over fish and garnish with lemon wedges.
- Enjoy!
ROAST SEA BASS WITH HERBS AND ONION CONFIT
Steps:
- In a covered pan, cook the onions in 2 tablespoons oil over a very low heat, for about 30 minutes, stirring occasionally, until they are very soft and lightly colored. Stir in the saffron and honey, and season with salt and pepper. Cook, uncovered, for another 10 minutes, or until most of the liquid has evaporated, then spread over the bottom of an overproof dish.
- Slash the fish in a few places across the thickest part to ensure that it cooks evenly. Rub the fish with salt and the remaining olive oil, then stuff with a mixture of the parsley, coriander, garlic, lemon juice, and a little salt and pepper.
- Place the stuffed fish on the bed of onions and roast in an oven preheated to 375°F for about 25 minutes, or until the flesh flakes away from the bone when you cut into the thickest part with the point of a knife. Serve with the lemon quarters.
SEA BASS BAKED WITH ONION AND HONEY
This is an easy recipe to pull together. If you're being really indulgent you'll want one fish each. But if you have a few side dishes, one fish per two people will be enough for a taste of this treat. We serve it with mashed potatoes (with some of the extra onions mixed in) and green peas.

Steps:
- Preheat the oven to 200 C (about 400 F).
- Heat the olive oil in a frying pan and gently sauté the onions and garlic until soft, about 5-8 minutes.
- Meanwhile, use a sharp knife to score the outside of the fish.
- When the onions are soft, take them off the heat.
- Pull the thyme leaves off the stem and mix in with the onions.
- Season to taste and let cool.
- Smear the honey on the inside of the sea bass, then fill with the onion mixture.
- Use kitchen string to secure the fish.
- Lay the fish in a baking tray and sprinkle over some salt and pepper.
- If you have extra onions you can also set them in the tray.
- Drizzle over the olive oil and bake on the top rack of your oven for 20-25 minutes.
