Toasting the challah adds flavor, but more importantly, it helps the cubes to soak up and hold onto more of the deliciously rich custard (a high ratio of cream to milk makes it that way). And if that wasn't enough, we use not 1 but 2 vanilla beans to amp up the custard - plain old extract just doesn't do it justice. For a pleasing textural contrast, we top the pudding with turbinado sugar before baking to get a sweet crunch with every bite.

3 tablespoons unsalted butter, at room temperature
10 cups challah (about 18 ounces, 1-inch cubes)
3 cups heavy cream
2 cups whole milk
1 cup granulated sugar
2 vanilla bean pods, seeds scraped
1/2 teaspoon fine salt
1/4 teaspoon ground cinnamon
4 large eggs, plus 4 yolks
3 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 300 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon butter.
  • Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.
  • Whisk together the cream, milk, sugar, vanilla bean seeds, salt, cinnamon, eggs and yolks in a large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for 30 minutes, pushing the bread down occasionally so that it is completely covered.
  • Pour the bread mixture into the prepared baking dish. Microwave the remaining 2 tablespoons butter in a small microwave-safe dish until melted, about 1 minute. Drizzle the butter over top of the custard and then sprinkle with the turbinado sugar. Bake until the custard is set and the top is golden brown, 1 hour 15 minutes to 1 hour and 30 minutes. Let cool slightly before serving. Serve warm or at room temperature.

4 cups roughly chopped day-old white bread
3 large eggs, whisked
1 cup milk
1 cup heavy cream
3/4 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup roughly chopped chocolate candy bar
1/2 cup cranberries
2 tablespoons brandy
butter
extra sugar
ground cinnamon

Steps:

  • Cranberries and brandy in a bowl to soak.
  • Use the bit of butter to grease a small casserole dish; I use a 10-inch round casserole, but you get the drift.
  • Chop up bread into bite size pieces, uniformity just doesn't matter.
  • Chop up chocolate, and just leave it sitting on the chopping block with the bread.
  • Whisk eggs, milk, cream, sugar, vanilla, salt.
  • Dump in bread, chocolate, cranberry/brandy and stir it all up.
  • Dump into greased pan.
  • Flatten out the top, sprinkle with sugar and cinnamon.
  • Bake at 350°F for 30 minute.
  • --So to summarize -- chop chop stir dump shove in oven -- not so bad huh? Enjoy! It is very nice with homemade whipped cream.

Steps:

  • Preheat the oven to 325 degrees F. Butter a 9-inch baking dish.
  • Arrange the bread cubes tightly in the prepared baking dish. Beat together the butter, milk, vanilla and eggs in a large bowl. Add the granulated and brown sugars and mix until dissolved. Pour the mixture over the bread.

450 g/16oz/16 slices 2-inch thick/one loaf day-old bread*
1 cup pecans ((or raisins, chocolate chips, cranberries, etc.))
6 large eggs
1 cup (200 g/7 oz) granulated sugar
4 cups heavy cream ((or milk, half & half, or a combination))
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13-inch pan, and set aside.
  • Cut bread into 2-inch cubes. In a large bowl, mix together bread cubes and pecans. Place the mixture evenly in the pan.
  • In a large bowl, whisk eggs and sugar. Add cream and vanilla extract, and whisk to combine. Pour cream mixture over bread mixture in the pan until completely covered. Gently press down the bread cubes to fully cover with custard. It's best to let the casserole sit for 1 hour, covered, at room temperature, but if you're in a hurry, bake it right away.
  • Preheat oven to 325F/160C. Bake for 40-50 minutes or until custard has set and the top is golden brown. If the top is browning too fast, cover loosely with aluminum foil. Don't over bake or the bread will be dry. Let the pudding cool slightly before serving.
  • Bread pudding can be served warm or cold. It is best the same dat it's made.

TRADITIONAL FRUITY AND SPICED BREAD PUDDING - WITH BRANDY!

A really fruity & spicy bread pudding which has a drop of brandy in it too! There are quite a few bread pudding recipes around, but this is the one I always make - it was my grandmother's recipe and I remember eating this at her house when I was little! I added the brandy one Christmas when I made this as a last minute Christmas-type pudding! You don't have to add the brandy - just add the fruit with the other ingredients, after the bread has been soaked in milk. Serve warm as a dessert with cream, ice-cream or custard. You used to be able to buy these in a local bakery where my grandmother lived - they were sold cold, I always prefer mine warm, but it's up to you!

8 ounces sliced white bread, crusts removed or 8 -12 slices white bread, depending on the thickness
2 -3 teaspoons mixed spice
6 ounces raisins (all mixed together) or 6 ounces currants (all mixed together)
4 ounces candied peel
10 fluid ounces milk
4 tablespoons brandy
3 ounces butter
4 ounces soft brown sugar

1 orange, zest of, grated

Steps:

  • First marinate the fruit & peel in the brandy - set aside.
  • Tear the bread into even sized pieces and soak in the milk for about 30 minutes.
  • Pre-heat oven to 180C/350F/Gas 4.
  • Melt the butter in the microwave or a small saucepan.
  • In a large roomy bowl, mix the sugar, beaten eggs, melted butter, spices, orange & lemon zest together, then add the brandy-soaked fruits & mix well again.
  • Tip it all into the milk soaked bread.
  • Mix it all together - and then pour into a well buttered baking dish.
  • Sprinkle demerara sugar on top & add some grated nutmeg if you wish.
  • Bake for 1 hour, or until the bread pudding is well puffed up, crispy and golden brown. It will sink on cooling, but that's fine!
  • Cut into squares - serve warm with cream, ice-cream or custard.
  • As a final flourish - you can also grate some orange zest over the cream etc!
  • N.B. You can also make this with Brioche or any type of Bread product, as long as it it not too savoury.

1/4 cup heavy cream
2/3 cup sugar (use more or less depending on your sweet tooth)
1 teaspoon vanilla extract

3 rolls (stale Great Big Poufy Buns Great Big Poufy Buns)

Steps:

  • Butter a 7 x 11" baking dish.
  • Trim the dark crust tops off of the rolls and cut them into large cubes, about 1 1/2 inches.
  • Mix custard ingredients well and pour over the cubed rolls. Dot with butter Cover with plastic wrap and refrigerate several hours or overnight until custard soaks into the stale Recipe #379727.
  • Remove the pudding from the fridge and let it come to room temperature and then preheat the oven to 350*
  • Leave the plastic wrap on and then cover tightly with foil. Set into a hot water bath and bake covered for 40 minutes. Remove foil and plastic wrap and continue baking another 15 - 20 minutes or until a knife inserted in the center comes out clean.
  • Variations include orange zest, almond extract, citron, currants, what you like.
  • We like it plain but you can add a rum sauce at serving time if you like.
  • Easy, plain and yummy.

This recipe is here to give you a new lease on the classic dessert. It's almost too easy, but yields utterly decadent results. The key is in the ratio of bread to custard base; this recipe calls for quite a bit of bread, but also has an adequate amount of liquid components to balance it out.

Steps:

  • Prepare the pudding. Whisk eggs in a large mixing bowl to beat lightly. Whisk in milk, 1 cup white sugar, 1 cup brown sugar, heavy cream, butter, vanilla extract, and salt until evenly combined.

3 cups bread cubes (Just tear up bread, no need to buy bread cubes)
2 1/4 cups milk
2 eggs, slightly beaten
3/4 cup brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup raisins

Steps:

  • Place bread cubes in a greased 9x9 inch baking dish.
  • Combine remaining ingredients.
  • Pour over bread cubes.
  • Place in oven and bake at 350 degrees for 45 minutes or until knife comes out clean.
