ISLAND BBQ SAUCE image

Number Of Ingredients 12

3 Cubanelle Peppers (or Anaheim)
Half White Onion, Diced
1 1/2 cups fresh chunked pineapple (You can also add some Papaya as well)
1 Red Jamaican Pepper (Two for Spicier Sauce)
3/4 Cup Spiced Rum
1/2 Cup Lime Juice
1/2 Cup Apple Cider Vinegar
1 Six Ounce Can of Tomato Paste
3 Tbs of Molasses
1 Tsp allspice
1 Tsp coriander
Celery Salt and Pepper to taste

Steps:

  • Chop up Cubanelle peppers, onion, and Jamaican Pepper. Place into a saucepan along with Spiced rum and Lime Juice. Cook on medium until soft, approximately 40 minutes. Then place in food processor and process until smooth and creamy. Return to pot. Now stir in remaining ingredients on low heat for thirty minutes. This sauce will do best if allowed to sit for a few days. The sweet spiciness of it goes very well pork.
