HASH BROWN EGG NESTS WITH AVOCADO



Hash Brown Egg Nests with Avocado image

Shredded hash browns and cheese nests baked until crispy topped with a baked eggs, crumbled bacon and more cheese. Served with chilled avocado slices.

Number Of Ingredients 8

15 oz. frozen shredded hash browns, thawed
1 1/4 cup cheddar cheese, shredded and divided
1 tablespoon olive oil
Salt and pepper to taste
8 medium eggs
2 slices cooked bacon, crumbled/2 tablespoons bacon bits
1/2 tablespoon parsley, chopped
2 avocados, sliced and chilled (optional)

Steps:

  • Mix the shredded hash browns, 1 cup of cheddar cheese, olive oil and salt and pepper to taste in a mixing bowl.
  • Grease a non-stick regular muffin pan and divide the hash brown mixture. Use your fingers to pack them tightly and shape them into nests.
  • Bake at 425°F or until the edges have browned and the cheese has melted, about 15 minutes.
  • Crack a medium egg into each nest and season with salt and pepper to taste.
  • Top with crumbled bacon, remaining 1/4 cup cheddar cheese and parsley.
  • Bake at 350°F until the egg whites set, about 13 to 16 minutes.
  • Let it cool, gently slide a knife along the edges and use a fork to lift it out of the pan.
  • Dish and serve with chilled avocado slices (optional).

1 slice bread
1 teaspoon butter or margarine
1 egg
Salt and pepper, to taste

Steps:

  • Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
  • When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

1 pound pork sausage meat
2 teaspoons Worcestershire sauce
4 hard-cooked eggs, peeled
1 tablespoon all-purpose flour
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 egg, beaten
⅔ cup dry bread crumbs
1 quart oil for deep frying

Steps:

  • In a medium bowl, mix together the pork sausage and Worcestershire sauce. Combine the flour, salt and pepper; mix into the sausage.
  • Divide the sausage into four equal parts. Mold each part around one of the hard-cooked eggs, rolling between your hands to shape. Place the beaten egg and bread crumbs into separate dishes. Dip the balls into the egg, then roll in the bread crumbs until coated. Shake off any excess.
  • Heat the oil in a large saucepan or deep fryer to 365 degrees F (180 degrees C), or until a cube of bread dropped into the oil turns brown in 1 minute. Lower the eggs carefully into the hot oil. Fry for 5 minutes, or until deep golden brown.

6 eggs
1 pound pork sausage, formed into 6 patties
4 eggs, beaten
2 cups seasoned bread crumbs
1 quart vegetable oil for frying

Steps:

  • Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water and cool; peel.
  • In a large deep skillet heat about 1 inch of vegetable oil until hot.
  • Place whole boiled eggs on top of sausage patty. Roll to form ball around the egg. Dip in beaten egg wash, then seasoned breadcrumbs. Deep fry in hot vegetable oil until meat is fully cooked. Drain and serve hot.

2-3 thin slices black forest ham
1 egg
1 TBSP. Cream
1 Heaping TBSP. Grated swiss cheese
sprinkle of basil
English muffin

Steps:

  • Preheat oven to 350. Grease large muffin tins. Line with ham and break egg over top. Add cream and sprinkle with cheese and basil. Bake 20 minutes. Serve on half a toasted english muffin. (Place water in any unused muffin cups to prevent damage). In a separate pan make a package of Knorr Swiss hollandaise sauce. Spoon the sauce over each egg/muffin and top with a little fresh cracked pepper and there you go eggs benedict.

1 quart oil for frying
4 eggs
2 pounds pork sausage
4 cups dried bread crumbs, seasoned
1 cup all-purpose flour
4 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  • Flatten the sausage and make a patty to surround each egg. Very lightly flour the sausage and coat with beaten egg. Roll in bread crumbs to cover evenly.
  • Deep fry until golden brown, or pan fry while making sure each side is well cooked. Bake in the preheated oven for 10 minutes.
  • Cut in half and serve over a bed of lettuce and sliced tomatoes for garnish. If mustard is desired it looks beautiful over this.
