COLLEGIATE TAILGATE PASTA SALADS



Collegiate Tailgate Pasta Salads image

Take this to your tailgate party for a game day touchdown!

Number Of Ingredients 6

1 cucumber
1 orange pepper (Note: substitute pepper colors to match your team colors!)
1 green pepper (or coordinating color for your team!)
1 red onion
Red wine vinegar
Olive or vegetable oil

Steps:

  • Vinaigrette: Combine seasoning packet, ½ cup red wine vinegar, and ¼ cup olive or vegetable oil in glass bowl. Heat in microwave, stirring occasionally, until packet is dissolved, about 1 ½ minutes. Set aside to cool.
  • Pasta: Cook pasta 6-8 minutes in GENTLY boiling water (salt optional). To achieve your school colors, food coloring was used, please note that the water may become slightly colored. Drain pasta in colander, rinse with cold water.
  • Add Fresh Additions: Peel, seed, and dice cucumber, chop ½ orange and ½ green pepper, chop ½ red onion.
  • Gently Toss: Pasta, vinaigrette, and veggies. Refrigerate until ready to serve. Easy to make a day ahead, just toss again before serving.

4 canned peach halves, drained
4 ruffly lettuce leaves
16 celery sticks, 3 inches long
4 large marshmallows
Raisins, if desired
2 maraschino cherries, cut up, if desired
Shredded cheese, if desired

Steps:

  • For each salad, place 1 peach half, cut side down, on 1 lettuce leaf on plate. Add celery sticks for arms and legs; marshmallow for head; raisins for eyes, nose, buttons, hands and feet; a piece of maraschino cherry for mouth; and shredded cheese for hair.
  • Refrigerate until serving.

1 package (12 ounces) tricolor spiral pasta
4 cups fresh broccoli florets
1 pint grape tomatoes
1 can (6 ounces) pitted ripe olives, drained
1/8 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups Italian salad dressing with roasted red pepper and Parmesan

Steps:

  • In a Dutch oven, cook pasta according to package directions, adding the broccoli during the last 2 minutes of cooking. Drain and rinse in cold water., Transfer to a large bowl. Add the tomatoes, olives, salt and pepper. Drizzle with salad dressing; toss to coat. Chill until serving.
