DILLED SCANDINAVIAN-STYLE POTATO SALAD
In traditional Scandinavian style this potato salad combines color with the addition of radishes and peas with fresh dill flavor. This is a super simple salad to whip up quickly. Cooking time does not allow for chilling time.

Steps:
- Add potatoes to large saucepan.
- Cover with water and bring to a boil.
- Cook until tender about 20 minutes.
- Drain and cool slightly.
- When cool enough to handle cut into halves or wedges.
- Transfer to large serving bowl.
- Add remaining ingredients.
- Toss gently.
- Cover and chill for at least 1 hour to meld flavors.
- Serve chilled or at room temperature, garnished.

Steps:
- Boil the potatoes and cut into bite-sized pieces. Crush the garlic and finely chop the herbs. Rinse and chop the herrings.
- While the potatoes are still warm, mix with the garlic, herbs, olive oil, lemon juice and zest. Leave covered for 10 minutes. Taste and add more oil or lemon juice as required. Season to taste, remembering that the herring has been in salted water. Add the herring to the mix and serve in a large bowl.
SCANDINAVIAN POTATO SALAD
Steps:
- Cook potatoes with 1 tablespoon salt in a large pot of water. Cook until potatoes are tender, 10-15 minutes. Drain potatoes in a colander, place colander with potatoes over the empty pot off the heat and cover with a dry, clean kitchen towel. Leave potatoes to steam for 15-20 min. In a small bowl whisk mayonnaise, buttermilk, Dijon and whole-grain mustards, dill, salt and pepper. Cut potatoes into quarters or halves and transfer to large bowl. Pour dressing over along with celery and red onion. Toss, season to taste with salt and pepper. Refrigerate for a few hours before serving.
