3 tablespoons butter, divided
1/3 cup panko (Japanese breadcrumbs)
1/2 cup chopped fresh Italian parsley, divided
1 1/4 pounds uncooked large shrimp, peeled, deveined, tails left intact
2 tablespoons extra-virgin olive oil
1 1/2 cups thinly sliced red onion
5 garlic cloves, minced
1/2 teaspoon dried crushed red pepper
2/3 cup dry white wine (preferably Sauvignon Blanc)
Lemon wedges

Steps:

  • Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Add panko and stir until golden and crisp, about 2 minutes. Transfer to small bowl; mix in 2 tablespoons parsley. Wipe out skillet.
  • Sprinkle shrimp with salt and pepper. Melt remaining 2 tablespoons butter with olive oil in same skillet over high heat. Add red onion and sauté until beginning to soften, about 3 minutes. Stir in garlic and crushed red pepper and sauté 1 minute. Add shrimp and sauté until barely opaque in center, about 1 minute per side. Add white wine and simmer until liquid is slightly thickened and reduced, 2 to 3 minutes. Season to taste with salt and pepper. Stir in remaining 6 tablespoons parsley. Transfer to shallow bowl. Sprinkle sautéed panko over and serve with lemon wedges.

Number Of Ingredients 13

2 pounds large shrimp, shelled and deveined, tail left on
3 (28 oz) cans Italian plum tomatoes
1/4 to 1/3 cup olive oil
8 whole peeled shallots
1 can fat-free chicken broth
1 can water
10 leaves fresh basil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1 pound dried linguine, Cecci preferred

Steps:

  • Drain half the liquid from canned tomatoes and save for another purpose. In a food processor, blend tomatoes with remaining juice. In a wide heavy casserole, heat the olive oil over medium heat. Add half of the shrimp and simmer 3 minutes. Scoop shrimp out and reserve. Add the remaining shrimp and cook 3 minutes. Scoop out and reserve with the first batch. Add garlic and shallots to the pan and cook, turning them as necessary, until lightly caramelized. Add broth, water, half of the fresh basil, the salt, pepper, dried basil and oregano, and red pepper flakes. Bring the sauce to a steady strong simmer and cook until sauce is rich and creamy, about 30 minutes. Return shrimp to sauce and simmer 3 minutes. Turn off heat and set aside. Cook linguine in a large pan of salted water according to package directions until al dente. Drain and add to the sauce. Pile on a large oval platter and top with remaining fresh basil, torn into small pieces.

RISOTTO SCAMPI FRA DIAVOLO

3 cups chicken stock
One 28-ounce can diced tomatoes
1 pound large shrimp (25/30 count), peeled, deveined, tail on
5 tablespoons olive oil
2 teaspoons crushed red pepper flakes, plus more for garnish, optional
Kosher salt and freshly ground black pepper
1 medium onion, diced
2 cups arborio rice
4 cloves garlic, minced
1/4 cup vodka
1/2 cup fresh parsley leaves, minced
2 tablespoons butter
Grilled bread, for serving

Steps:

  • Combine the chicken stock and diced tomatoes in a saucepan, bring to a simmer and keep at a simmer.
  • Heat a large Dutch oven over high heat. In a bowl, toss the shrimp with 2 tablespoons of the olive oil, 1 teaspoon of the crushed red pepper and some salt.
  • Add the shrimp in an even layer to the Dutch oven. Without stirring the shrimp, sear each side hard until golden brown and just barely cooked through, about 2 minutes a side. Transfer the shrimp to a baking sheet.
  • Lower the heat to medium and add the remaining 3 tablespoons olive oil. Add the onion, some salt and pepper and the remaining 1 teaspoon crushed red pepper and saute until the onion is translucent, about 5 minutes. Add the rice, stir to coat and cook until lightly toasted, about 2 minutes. Add the garlic and saute until fragrant, about 30 seconds. Deglaze with the vodka, scraping the bits off the bottom. Simmer for 1 minute, then add 1 cup of the hot stock mixture and cook, stirring occasionally, until all the stock is absorbed. Continue to cook, adding the stock mixture a ladle at a time, until the rice is creamy but still somewhat firm in texture, 15 to 20 minutes.
  • Add the shrimp and any accumulated juices to the pan. Add another ladle of the stock mixture, cover and gently simmer until the shrimp is perfectly cooked, 3 to 4 minutes. Add the parsley and butter and stir. Season with salt and pepper. Garnish with more crushed red pepper if desired and serve with grilled bread.
