- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
- Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
- Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

- Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.

- In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.

- In a bowl, add the canned soups, milk, garlic powder and pepper; stir to mix well.
- In a greased 13x9-inch baking pan, add half the sliced potatoes.
- Toss in half the onions, over the potatoes.
- Pour half the soup mixture over the potatoes.
- Sprinkle half of the cheese over the potatoes.
- Place the sliced ham pieces evenly over the potatoes.
- Add the remaining sliced potatoes, onions, soup mixture, and cheese.
- Cover, and bake in a 375 degree oven for 1 hour.
- After 1 hour, uncover the pan, and continue baking for 30 minutes more.
- Note: Sometimes I'll use ham steaks that come in a 16-oz pkg., which I cut them into 3/4 to 1-inch pieces. (I used John Morrell Ham Steaks, and I used the entire pkg.). Also, I think one could add a bit more garlic powder & white pepper (possibly an 1/8 teaspoon more of each).

- Cook potatoes in boiling, salted weater until just tender. About 5 minutes. Drain, rinse under cool water. and set aside to dry.
- FILLING:.
- Heat oil in large skillet over medium heat. Add onion, stirring occasionally until caramelized and brown, about 30 minutes. Cool. Toss with remaining filling ingredients in separate bowl.
- In bowl, combine evaporated milk and water. Melt butter in saucepan over medium heat. Whisk in flour and cook for 20 seconds; slowly add evaporated milk/water mixture (about 1/4 cup at a time) whisking continuously to remove any lumps before adding more liquid. Stir in mustard, increase heat to high and bring to a boil, whisking constantly. Once the mixture boils, reduce heat to low and cook 1 more minute or until thickened. Season to taste and remove from heat.
- Preheat oven 350F . Lightly oil a 9-inch square dish with sides at least high.
- Place overlapping potato slices in dish followed by 1/2 cup of the filling and 1/3 cup of the sauce. Repeat 5 times, ending with a sauce layer on top. Bake in oven for 30 minutes or until mixture is hot and bubbly and potatoes in centre of pan are tender. Let stand 20 minutes before serving.
- TIPS: Cooking and baking time will vary according to how thinly you slice your potatoes and the depth of your pan.
- If top browns too quickly, cover lightly with foil.
- Place under broiler for the last few minutes fora browned top, if desired.
- For the bst results, use Carnation Regualr Evaporated MIlk.

- Heat gas or charcoal grill. Spray 25x18-inch sheet of heavy-duty foil with cooking spray. Without cutting all the way through, cut loaf of bread into 12 (3/4-inch) slices, cutting to within 1/4 inch of bottom.
- Stir together butter and mustard. Spread every other slice of bread with slightly less than 2 teaspoons mustard mixture, creating 6 sandwiches. Fold each slice of cheese in half diagonally; tuck each into sandwich. Divide ham evenly among sandwiches, tucking in to fit. Place loaf on center of foil. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion.
- Place foil-wrapped loaf on grill over medium heat. Cover grill; cook 20 to 25 minutes or until cheese is melted and loaf is hot, turning loaf frequently. To serve, open packet carefully to allow steam to escape. Remove foil from loaf; pull apart sandwiches.
