3/4 cup butter, softened
1-1/4 cups sugar
3 large eggs
1 can (20 ounces) crushed pineapple, well drained
1-1/2 teaspoons lemon juice
4 cups firmly packed cubed white bread (crusts removed)

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pineapple and lemon juice. Gently fold in bread cubes. , Spoon into a greased 2-qt. baking dish. Bake, uncovered, 40 to 45 minutes or until top is lightly golden. Serve warm.

3 large eggs
1/2 cup sugar
1/2 cup butter, melted
1/2 cup sweetened condensed milk
1 can (20 ounces) unsweetened crushed pineapple, undrained
4 cups cubed bread

Steps:

  • In a large bowl, whisk the eggs, sugar, butter and milk. Stir in pineapple with juice; fold in bread cubes. Transfer to a greased 8-in. square baking dish., Bake, uncovered, at 350° for 40-45 minutes or until a thermometer inserted in the center reads 160°. Let stand for 10 minutes before serving.

This recipe was given to me from a friend of mine. The ingredients may sound a little different, but it is really good and easy to make. We make this for holiday dinners such as Easter, Thanksgiving and Christmas. We don't like pineapple on the ham, but love this as the side dish to go with our ham.

3/4 cup butter
1 cup sugar
3 eggs
1 (20 ounce) can crushed pineapple, well drained
1 1/2 teaspoons lemon juice
1 cup grated cheddar cheese
4 cups cubed white bread (crusts removed)

Steps:

  • In mixing bowl, cream butter and sugar.
  • Add eggs, one at a time, mixing well after each addition.
  • Stir in pineapple, cheese and lemon juice (will look broken from the lemon juice).
  • Fold in bread cubes.
  • Place in buttered 2 qt baking dish.
  • Bake uncovered at 350 for 40-45 minutes until top is light golden brown.
  • Serve warm.

2 sticks butter, room temperature
1 1/4 cup sugar
3 eggs
20 oz can crushed pineapple in heavy syrup
1/2 cup half/half cream
4 cups soft bread cubes (cut in 1 inch cubes from french style bread loaf)

Steps:

  • Combine together softened butter and sugar. Add 3 eggs. Mix well. Add together remaining ingredients until well mixed. Pour into greased 9x13 casserole pan. Bake at 325 for 1 hour.
