- For the cakes: Bring the water to a boil in a small saucepan over high heat. Stir in the couscous; cover and remove from the heat. Let sit for 5 minutes, then uncover and fluff with a fork. Meanwhile, finely chop the white and light-green parts of the scallions. Stir into the couscous, along with the cheese, egg substitute and pepper (to taste), until well incorporated. The mixture should be moist and a bit loose. Grease a large nonstick skillet with nonstick cooking oil spray; place the skillet over medium-high heat. Add the 2 teaspoons of oil and swirl to coat the bottom of the skillet. Divide the couscous mixture into 4 equal portions; they won't hold together well, but they will firm up as they cook. Transfer to the skillet and use a spatula to flatten them to a thickness of 1/2 inch. Coat the tops of the cakes with nonstick cooking oil spray. Cook for 2 minutes or until lightly browned on the bottoms, then carefully turn over the cakes and cook for 2 minutes to brown lightly on the second sides. Turn off the heat. For the salad: Coarsely chop the tomatoes, leaving as much of the seeds behind as possible. Finely chop the olives and parsley; combining them is okay. Transfer those three ingredients to a medium bowl; add the vinegar, 1/2 teaspoon of the oil and the pepper (to taste), stirring to incorporate. Rinse and spin-dry the greens, then place in a bowl. Drizzle with the remaining 1/2 teaspoon of oil and toss to coat evenly. Divide the greens between individual plates. Top each portion with 2 warm couscous cakes, then spoon the tomato-parsley mixture evenly over the cakes. Serve right away.
COUSCOUS WITH TOMATOES AND SCALLION
This is a terrific, simple and quick side dish. I've also used this recipe to spice up a box the "Near East" brand flavored couscous as well. Simply use the amount of water specified on the box, and add the extra ingredients. It will still be ready in 5 minutes

- Combine canned tomatoes, scallion, pepper, garlic powder, water, and salt in a medium saucepan.
- Bring liquid to a boil.
- Stir in couscous.
- Cover pan and remove from heat.

- Stir in olives and fresh parsley and serve.

- Put the couscous in a medium heat-proof bowl. Cover with boiling water. Cover with a lid and let sit for 8 minutes.
- While the couscous is steaming, heat the butter in a small sauté pan; sauté scallions and parsley for 2 minutes. Turn heat off, and add salt and pepper. Stir together.
- With a fork, stir couscous. When couscous is tender, add the scallion mixture. Mix well.

GINGERY GRILLED FLANK STEAK WITH ORANGE-SCALLION COUSCOUS
Steps:
- 1) Heat grill to medium-high. Rub steak with 1 Tbs olive oil, then ginger. 2) Season with 1/2 tsp each salt and pepper and let sit for 5 minutes. 3) Meanwhile, using a vegetable peeler, remove two strips of orange zest. Thinly slice zest and transfer to a medium bowl. Squeeze juice from orange into a small bowl; set aside. Add couscous to the bowl with the zest. Add 1 cup tap water, cover and let sit for 10 minutes. 4) Grill the steak, occasionally brushing with orange juice, to desired doneness. 4 to 6 minutes each side for medium-rare. Transfer to a cutting board and let rest at least 5 minutes before slicing. 5) Fluff the couscous with a fork and fold in the scallions, remaining 1 Tbs oil and 1/4 tsp each salt and pepper. Serve with the steak.
SAFFRON SCALLION COUSCOUS
This is from Food to Live By. Everyone loves this side dish. I noticed there is one other recipe posted on recipezaar that is very similar to this one. There are a slight change of ingredients and the preparation is a bit different.

Steps:
- Place couscous in a medium size shallow heat proof bowl and drizzle olive oil over it.
- Rub the couscous between your palms until all the grains are coated with oil.
- Heat the stock in a small saucepan until just begins to boil.
- Remove stock from heat and add the saffron, stirring to blend.
- Add half the stock to the couscous.
- Keep the remaining stock warm over low heat.
- Stir and fluff the couscous with a fork.
- Cover the bowl with a plate or plastic wrap and let sit for 5 minutes.
- Add the remaining stock to the couscous.
- Using a rubber spatula, scrape up an saffron that may be stuck to the saucepan and add it to the couscous.
- Fluff the couscous with a fork, and recover the bowl. Let it sit for 5 minutes longer.
- Season the couscous with salt and pepper to taste and stir in the scallions just before serving.

- In a small saucepan combine 3/4 cup water, the oil, the cuminseed, and the salt and bring the mixture to a boil. Stir in the couscous and let the mixture stand, covered, off the heat for 5 minutes. Fluff the mixture with a fork and stir in the scallion, the parsley, and salt and pepper to taste.
MEDITERRANEAN CHICKEN AND SCALLION COUSCOUS

- Mix yogurt, lemon juice, 1/2 teaspoon cumin, 1/2 teaspoon coriander and red pepper flakes together. Place chicken tender in a food storage bag and pour in yogurt mixture. Refrigerate 1 hour to overnight.
- Preheat oven to 200 degrees F. Place foil wrapped bread in oven. Remove chicken from bag, pat off excess yogurt and season with pepper, garlic powder, and onion powder. Heat a large skillet over medium heat with 2 tablespoons of extra-virgin olive oil, add chicken to skillet and cook 2 to 3 minutes each side until golden brown. Remove chicken from pan and cover to keep warm.
- Meanwhile add 2 cups of chicken stock to a saucepan over medium high heat and bring to a boil. Add chopped scallions, couscous and salt and pepper to taste. Remove from heat cover with lid and let stand 10 minutes.
- Add remaining 2 tablespoons of extra-virgin olive oil to skillet. Cook onions, red peppers and garlic 2 to 4 minutes. Add artichoke hearts, olives and remaining cup of chicken stock bring to a simmer. Return chicken tenders to skillet. Cover and simmer 8 minutes or until chicken is cooked through.
- Fluff couscous with fork. Mix cornstarch with water and pour into simmering mixture stir to combine. Top chicken with fresh chopped parsley. Remove bread from oven. Serve over couscous with warm flat/pita bread.
