SHRIMP CAKES WITH SCALLION DIP



Shrimp Cakes with Scallion Dip image

1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 scallion, roughly chopped
1 small clove garlic, grated
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 pound medium shrimp, peeled and deveined
1 cup panko breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon grated lemon zest
3 tablespoons vegetable oil, plus more for forming
1 5-ounce package mixed greens (about 6 cups)
4 radishes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
  • Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
  • Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
  • Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

For the cakes
1/2 cup water
1/3 cup uncooked whole-wheat couscous (may substitute quick-cooking couscous; see headnote)
3 scallions
1/4 cup crumbled feta cheese
3 tablespoons egg substitute (may substitute 1 large egg)
1/8 to 1/4 teaspoon freshly ground black pepper
2 teaspoons olive oil
For the salad
2 Campari or small, vine-ripened tomatoes (about 5 ounces total)
6 pitted kalamata olives
Leaves from 6 stems flat-leaf parsley
2 teaspoons red wine vinegar
1 teaspoon olive oil
1/8 to 1/4 teaspoon freshly ground black pepper
3 cups herb salad or baby mixed greens

Steps:

  • For the cakes: Bring the water to a boil in a small saucepan over high heat. Stir in the couscous; cover and remove from the heat. Let sit for 5 minutes, then uncover and fluff with a fork. Meanwhile, finely chop the white and light-green parts of the scallions. Stir into the couscous, along with the cheese, egg substitute and pepper (to taste), until well incorporated. The mixture should be moist and a bit loose. Grease a large nonstick skillet with nonstick cooking oil spray; place the skillet over medium-high heat. Add the 2 teaspoons of oil and swirl to coat the bottom of the skillet. Divide the couscous mixture into 4 equal portions; they won't hold together well, but they will firm up as they cook. Transfer to the skillet and use a spatula to flatten them to a thickness of 1/2 inch. Coat the tops of the cakes with nonstick cooking oil spray. Cook for 2 minutes or until lightly browned on the bottoms, then carefully turn over the cakes and cook for 2 minutes to brown lightly on the second sides. Turn off the heat. For the salad: Coarsely chop the tomatoes, leaving as much of the seeds behind as possible. Finely chop the olives and parsley; combining them is okay. Transfer those three ingredients to a medium bowl; add the vinegar, 1/2 teaspoon of the oil and the pepper (to taste), stirring to incorporate. Rinse and spin-dry the greens, then place in a bowl. Drizzle with the remaining 1/2 teaspoon of oil and toss to coat evenly. Divide the greens between individual plates. Top each portion with 2 warm couscous cakes, then spoon the tomato-parsley mixture evenly over the cakes. Serve right away.

Yield Makes 4 scallion cakes. Serves 6 to 8 as apart of a multicourse lunch

Number Of Ingredients 6

2 cups all-purpose flour, plus additional flour for kneading
3/4 teaspoon sugar
2 teaspoons sesame oil
1 1/4 plus 1/2 teaspoon salt
1/3 cup finely minced scallions
2/3 cup vegetable oil

Steps:

  • In a medium bowl, combine flour and sugar. Stir in 2/3 cup boiling water, mixing flour and water just until flour absorbs all the water. Gradually stir in enough cold water (1/4 to 1/3 cup) so that a dough is formed and pulls away from the sides of the bowl. The dough should not be sticky.
  • Remove dough from the bowl and knead on a lightly dusted board with floured hands 3 to 5 minutes, or until the dough is smooth and elastic, adding more flour if necessary. Lightly cover with a dampened cloth and allow to rest for 1 hour.
  • Redust the surface and hands with flour, and knead again for a few minutes or until smooth. Divide the dough into 4 equal pieces. As you work, always cover any unused dough with a lightly damp cloth. Using a floured rolling pin, roll each section into a 7-inch round. Lightly brush each round with sesame oil. Evenly sprinkle 1 1/4 teaspoons salt and scallions on each round, and then tightly roll each round into a fat rope. Tightly coil each rope, pinching the end of the rope into the dough to seal. Cover with a lightly damp cloth and allow to rest 15 to 20 minutes. Redust surface with flour, and using a floured rolling pin, roll each coiled bun into 7-inch rounds.
  • In a 14-inch flat-bottomed wok or skillet, heat vegetable oil over medium-high heat until oil is hot but not smoking. Carefully add one scallion round and fry 1 to 2 minutes, until golden. Carefully turn cake over and fry 30 seconds to 1 minute, or until golden brown. As the cake fries, lightly press the center with a metal spatula to make sure center is cooked. Transfer each cake to a plate lined with several thicknesses of paper towels. Continue frying the remaining scallion rounds one at a time. Sprinkle with remaining 1/2 teaspoon salt. Set oil aside to cool before discarding. Cut cakes into 6 to 8 wedges and serve immediately.

24 ounces package Simply Potatoes Sour Cream and Chive Mashed Potatoes
1 1/4 lbs skinless salmon fillet, cut into half-inch chunks
1 cup chopped scallion
2 large eggs, beaten
3 cups panko breadcrumbs

Steps:

  • Preheat oven to 350. Line a large sheet pan with parchment paper. Beat eggs in shallow bowl. Add 1 cup panko breadcrumbs to another shallow bowl. Set aside.
  • To assemble each cake, scoop ½ cup mashed potatoes, 2 tablespoons scallions, and 8-10 salmon chunks; assemble into 1-inch-thick patties by hand, each about 4-inches wide. Place each one on a platter until all 8 are assembled.
  • Carefully dip each one in egg; fully-coat both sides, then dip both sides in panko breadcrumbs - adding additional panko to bowl as needed. Place on prepared sheet pan. Bake on middle oven rack for 35-40 minutes, flipping each cake halfway through. Serve hot.

1 pound kale, stemmed
Canola oil
Kosher salt and freshly ground black pepper

1/4 cup grated Spanish onion
2 or 3 russet potatoes (1 pound), peeled, coarsely grated, and squeezed dry
1 large egg, lightly whisked
1/4 cup all-purpose flour
1 1/2 cups fresh farmer cheese
1/4 cup fresh parsley, finely chopped
2 green onions, dark and pale green parts finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly drizzle the kale with canola oil and season with salt and pepper. Lay on a baking sheet in a single layer, and bake until just crisp, 12 to 15 minutes.
  • Reduce the oven to 250 degrees F.
  • Meanwhile, mix the onions, potatoes, egg and 3 tablespoons of the flour in a large bowl until combined. If the mixture feels very wet, add a little more of the flour.
  • Heat 1/2 inch canola oil in a large high-sided saute pan over medium heat until it begins to sizzle. Spoon 1 heaping tablespoon of the potatoes per pancake into the pan, spreading into a 2-inch round with a fork. Cook until the bottom is browned, about 5 minutes, and then flip and cook 5 minutes more. Transfer to paper towels to drain and season with salt. Keep the pancakes warm on a wire rack set in a shallow baking pan in the oven.
  • Combine the cheese, parsley and green onions in a small bowl and season with salt and pepper.
  • Place the pancakes on a serving platter or cutting board, top each with a dollop of the cheese, and garnish with the kale chips.

I usually make a cracker and similar dip like these to watch the football game with my husband and son. I was reading a Saveur Magazine and saw this recipe and thought you might like to have this recipe too. We like it a lot and it is quite easy to make. This is Yan Can Cook's recipe from 1998.

FOR THE CAKES;
3 1/2 c all purpose flour
1 1/4 c boiling water
2 Tbsp soft butter
2 tsp asian sesame oil
1 1/2 c chopped scallions
1 tsp salt or a little more
1 tsp freshly ground white pepper
vegetable oil for frying
FOR DIPPING SAUCE;
1/2 c chicken stock
2 Tbsp soy sauce
1 Tbsp finely chopped scallions
2 tsp minced garlic
1 tsp asian-style chile sauce

Steps:

  • 1. For Cakes: Place flour in a bowl and add the water, stirring with a fork until dough holds together. Put dough on a lightly floured surface and knead until smooth. Cover with plastic and set aside for 30 minutes.
  • 2. Divide dough into 12 pieces and shape into balls; cover with plastic. Working with 1 ball at a time, roll out onto a lightly floured surface into a 5-inch circle. Brush with a thin film of butter. Sprinkle with a little sesame oil, some scallions and salt and pepper. Roll dough into a cylinder, coil it into a circle and tuck end underneath. Roll again into a 5-inch round. Repeat with remaining dough pieces.
  • 3. Heat 2 Tablespoons of the vegetable oil in a medium skillet. Fry the cakes, one at a time, until blistered and golden, about 2 minutes per side. Add more oil as needed. Drain on paper towels or coffee filters.
  • 4. For the Dipping Sauce: Combine the stock, soy, scallions, garlic and chile sauce in a small bowl. Cut cakes into quarters, and serve with the dipping sauce. Yummy!

CAJUN STYLE CRAYFISH SCALLION RICE CAKES

2 pounds cooked rice
2 large eggs
1 bunch chopped scallions
1 pound grated Parmesan
Hot pepper sauce
Garlic powder
Salt and freshly ground black pepper
Flour, for dredging
Vegetable oil, for sauteing

Steps:

  • Mix the crayfish, rice, eggs, scallions, cheese, hot pepper sauce, garlic powder, and salt and pepper together. Test seasoning by cooking a tablespoons-worth; adjust seasonings. Mold the correctly seasoned cakes into round or oval cakes. Lightly dust in flour and saute in vegetable oil until golden brown on both sides.
