Easy Sausage and Potato Skillet image

A delicious dish that is easily customizable and takes 30 minutes from start to finish.

Number Of Ingredients 9

1 lb baby yukon potatoes ((chopped))
2 cups sliced sausage ((Equivalent to about 1 lb. Flavor/brand of your choice, we used Aidells Chicken Apple Sausage))
1 medium onion ((chopped, equivalent to about 3/4 cup))
1 large red bell pepper ((chopped, equivalent to about 3/4 cup))
1 tbsp butter
1 tbsp olive oil
salt and pepper to taste
1 tbsp fresh chopped parsley ((optional, for garnish))
1 whole avocado ((optional, sliced for garnish))

Steps:

  • Heat a skillet (we prefer cast iron) on medium high heat. Add butter and olive oil. Heat until bubbly.
  • Add sausage and potatoes. Continue to cook, stirring often, until sausage and potatoes develop brown crust. Add salt and pepper to your liking.
  • Once sausage and peppers have desired amount of 'crust', add peppers and onions. Saute until onions are semi translucent, about 5-7 minutes.
  • Garnish with parlsey and avocado if desired. Enjoy!

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

Also called, "Le gratin des Terres Froides aux saucisses de kaion," from Brigitte Tilleray's, The Frenchwoman's Kitchen. This recipe originates from Savoy in the southeast of France. Perfect with a green salad and a glass of the wine used in the recipe.

2 ounces butter
6 sausages (author recommends herb-flavored, I used bratwurst and plan to try Italian sausage)
2 medium onions, sliced (I used Vidalia)
5 ounces water
5 ounces white wine (I used Chardonnay)
2 lbs waxy potatoes, peeled and diced (I used 2 baking potatoes)
salt and pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Melt the butter in a large flameproof gratin dish or a large cast-iron pan. As soon as it begins to froth, add the sausages and onions and saute until golden brown, about 10-15 minutes.
  • Add the water and wine, then the diced potatoes. Mix well and season with salt and plenty of pepper.
  • Transfer dish or pan to the oven and bake until potatoes are tender and fall apart, about 40 minutes. While cooking, stir occasionally and add more water, if necessary.

3 tablespoons olive oil
1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin
1 red bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. My family loves this dish ! It makes its own sauce as it cooks . We love it just the way it is but you could always add in some broccoli or peas if you like . This is also very good started on the stove and then finished on the grill (or smoker) instead of the oven !

2 pkg smoked beef sausage
6 medium potatoes, cubed
1 small fine diced onion
1 carrot, fine diced
3 c chicken stock, reduced sodium
1/4 tsp garlic powder
1/4 tsp black pepper
3/4 tsp salt
1/4 tsp celery seed
2 Tbsp parsley flakes
1 Tbsp olive oil
1/3 c flour

Steps:

  • 1. Preheat oven to 350 degrees (f). * or grill
  • 2. Fine dice the onion and carrot and set aside. You may use a food processor for this if you want to.
  • 3. Cut sausage about 1/2 in. - 3/4 inch slices . Set aside.
  • 4. Cut potatoes into 1- 1 1/2 inch cubes. Set aside. (sometimes I will cut the potatoes while I'm browning the sausage)
  • 5. Heat large pot. Add olive oil then brown sausage. Remove from pot with a slotted spoon and set aside. You want to leave as much oil as possible in the pot.
  • 6. Add the diced carrot and onion to the pot and cook for just a minute.
  • 7. Now add back the sausage and add potatoes, along with the garlic powder, celery seed, parsley and salt and pepper. Give it a good mix then add the flour and stir to coat everything.
  • 8. Add chicken stock and stir well remembering to scrape the bottom to loosen the yummy bits. Spray a 9x13 in. baking dish . Pour mixture into the pan,cover with foil and bake for 40 minutes to an hour or till potatoes are tender. Let sit for 5 minutes so the liquid will thicken before serving.
  • 9. * You can skip the oven all together and put it on the grill or smoker. Keep it over indirect heat. Check it and give it a stir every so often.... Very good !
