4 tilapia fillets (6 ounces each)
1/4 teaspoon seasoned salt
1 tablespoon lemon juice
2 tablespoons olive oil
1 small red onion, chopped
1 can (10 ounces) diced tomatoes and green chiles, undrained
3/4 cup chopped roasted sweet red peppers
1/2 cup chicken broth
1/4 cup tomato paste
1 teaspoon garlic powder
1 teaspoon dried oregano
Hot cooked pasta, optional

Steps:

  • Sprinkle fillets with seasoned salt; drizzle with lemon juice. In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add tomatoes, peppers, broth, tomato paste, garlic powder and oregano; cook and stir 2-3 minutes longer., Place fillets over tomato mixture; cook, covered, 6-8 minutes or until fish flakes easily with a fork. If desired, serve with pasta.

Baked Tilapia with mushrooms, onions, and parmesean, bread crumb topping. Good alone or over potatoes. I've made Tilapia as a spicy dish from another recipe but this is my own concoction. DH and kids said they like it too.

Number Of Ingredients 8

7 tilapia fillets (frozen or fresh)
1 cup butter or 1 cup margarine
1 cup mushroom
4 white pearl onions
6 ounces sun-dried tomatoes
dried parsley
3/4 Italian seasoned breadcrumbs
grated parmesan cheese

Steps:

  • Defrost filets if frozen.
  • Preheat oven to 400 degrees.
  • Melt butter in dish and lay filets in deep dish pan.
  • Pour butter over filets and add mushrooms, tomatoes and onions.
  • Sprinkle bread crumbs and cheese over fish.
  • Add as much Parsley as you desire.
  • I do not add salt and its not needed IMHO if you eat the fish along with the veggies.
  • Cook 20 minutes or until fish is white in color.

1 tablespoon olive oil
1 can (14-1/2 ounces) diced tomatoes with roasted garlic, drained
1 can (14 ounces) water-packed quartered artichoke hearts, drained
2 tablespoons drained capers
4 tilapia fillets (6 ounces each)

Steps:

  • In a large skillet, heat oil over medium heat. Add tomatoes, artichoke hearts and capers; cook until heated through, 3-5 minutes, stirring occasionally., Arrange tilapia over tomato mixture. Cook, covered, until fish begins to flake easily with a fork, 6-8 minutes.

We had some beautiful tilapia fillets, but no recipes! I had recently bought some amazing sun-dried tomatoes packed in oil, and decided to invent a slightly Mediterranean fish dish for a quick weeknight dinner. My husband is a recipe purist, always follows them to the letter, but after this, he's learned to trust my inventions!

3 tablespoons sun-dried tomatoes packed in oil, drained and chopped
1 tablespoon capers, drained
2 tilapia fillets
1 tablespoon oil from the jar of sun-dried tomatoes
1 tablespoon lemon juice
2 tablespoons kalamata olives, pitted and chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the sun-dried tomatoes, olives and capers. Set aside.
  • Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice.
  • Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. Check after 10 minutes, so as not to overcook, or the fish may be dry. When fish is done, top with the tomato mixture, and serve.

This is my favorite 'tomato-as-a-side-dish' recipe. It adds color to your plate, great flavor, and depending on what crumbs you use, can be low-fat (low-fat cheese works well, too), and can take on a variety of flavors.

4 medium tomatoes
salt and pepper
1/2 teaspoon crushed basil
1/2 teaspoon crushed oregano
1/3 cup coarsely crushed cracker crumb (or crouton crumbs)
1/3 cup shredded cheddar cheese (reduced fat, if desired)

Steps:

  • Remove stem ends from tomatoes.
  • Cut tomatoes in half horizontally.
  • Trim ends to make the halves stand flat, if necessary.
  • Arrange cut side up on microwaveable plate.
  • Mix crumbs and herbs; mound evenly on tomatoes.
  • Microwave uncovered on high for 2 minutes, rotating after 1 minute.
  • Sprinkle cheese on top of tomatoes and either microwave 1 minute until cheese is melted, or transfer tomatoes to an appropriate pan to broil in the oven or toaster oven until the cheese is bubbly and begins to brown.
