Easy Chicken, Spinach and Cheese Roll Ups image

Easy dinner recipe, chicken fillets loaded with cheese, spinach and wrapped in delicious bacon. Popular chicken appetizer or main meal

24 Chicken Tenderloins
8 oz Package of sliced Swiss Cheese - halved lengthwise, can also use Mozzarella or any other white cheese
26 oz or 730 g frozen, chopped Spinach
1/2 cup or 110 g Butter
1/2 lb Sliced Streaky Bacon

Steps:

  • Preheat oven to 350 F / 180 C / Gas 4. Spray a 9 x 13 pan with non stick spray.
  • In a medium sized sauce pan, cook spinach with butter and half cup water on medium heat. Salt and Pepper to taste. Stir frequently until butter is melted and most of the water is cooked out. Set aside to cool. (I use the large packages of spinach to serve on the side - if you don't want to do this, use smaller packages and reduce the butter to half a stick.)
  • Take your tenderloins or whole chicken breast and with a meat mallet and a gallon zip lock bag, or plastic wrap under & on top of the chicken, flatten these until they are about a quarter inch (1 cm). You need to be able to pick these up and roll them, so don't smash them too much .
  • Next layer a piece of the cheese, the length of the flattened chicken.
  • Take a tablespoon or a little more of the spinach, squeeze any liquid out of this and spread on top of the cheese. Too much will squish out and not roll up.
  • Have 2 slices bacon ready, and wrap up the chicken, cheese and spinach - pinwheel style, leaving the ends underneath the roll. If using larger pieces of chicken you may need another piece of bacon.
  • Bake for 20 - 30 minutes, carefully take pan out of the oven and drain off the liquid that's accumulated. Return to the oven or broiler / grill and brown. By draining the liquid, it allows the bacon to brown up nicely. You may need another few minutes in the oven to brown to your liking.

You'll want to double the recipe, or you can cut the rolls in half for a smaller serving size. I like to serve these over a bed of arugula that has been lightly tossed with olive oil, salt, and pepper.

8 slices prosciutto
5 ounces goat cheese, softened
¼ cup fig preserves
2 tablespoons chopped pine nuts

Steps:

  • Lay prosciutto slices on a large cutting board.
  • Place goat cheese into a small bowl and mix until creamy and spreadable. Lightly spread goat cheese on each slice of prosciutto. Top with a thin layer of fig preserves and sprinkle with crushed pine nuts.
  • Starting from one end, roll each prosciutto slice up into a tube. Place on a small platter and serve.

1 tablespoon finely chopped onion
1 teaspoon olive oil
3 cups fresh baby spinach
1/4 teaspoon dill weed
1 boneless skinless chicken breast half (6 ounces)
2 tablespoons crumbled feta cheese

Steps:

  • In a small nonstick skillet, saute onion in oil over medium heat until tender. Add spinach; cook and stir for 2-3 minutes or just until wilted. Stir in dill. Remove from the heat. , Flatten chicken to 1/4-in. thickness. Place spinach mixture and feta cheese down the center; fold one side over filling and roll up tightly. Secure with a toothpick. , Place seam side down in the skillet. Cover and cook over medium heat for 15-20 minutes or until chicken juices run clear, turning occasionally. Discard toothpick.

These Spinach Stuffed Chicken Roll Ups are filled with yummy ricotta, sundried tomatoes and fresh mozzarella then topped with marinara sauce.

3 egg whites
1 cup breadcrumbs
6 chicken cutlets
1 tbsp olive oil
Salt & pepper to taste
1/2 cup ricotta cheese
1 cup mozzarella cheese, divided
1 cup finely chopped fresh mushrooms
1/2 cup sundried tomatoes
1 cup finely chopped spinach
1/2 tsp each Salt and pepper
1 cup jarred marinara sauce
1 tbsp fresh chopped basil (optional)

Steps:

  • Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
  • In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
  • Season chicken cutlets with salt and pepper. Lay each cutlet flat and fill with a thin layer of ricotta-spinach stuffing mix. Roll up chicken cutlets, then dip in bowl of egg whites, then bowl of breadcrumbs.
  • Add each chicken roll up to the greased baking dish and bake in the oven for 25 minutes. Remove from oven, top with marinara sauce and cheese and bake another 5-10 min until cheese is melted.
  • Garnish with basil (optional) and serve with your choice of green (I roasted a bunch of broccoli rabe with 1 tbsp of olive oil, a pinch of salt and two cloves of garlic at 400F for 10 min). Enjoy!

1 tablespoon butter
1/2 cup onion, chopped
1 garlic clove, minced
1/2 cup mushroom, chopped
2 slices prosciutto, chopped
3 artichoke bottoms, diced
1 lb fresh spinach, chopped, cooked
1 cup rice, cooked
8 boneless chicken breast halves
1 cup seasoned flour (about 1 cup)
2 -3 tablespoons extra butter
salt
pepper
tarragon
3 tablespoons oil
3 tablespoons butter
1/2 cup onion, chopped
1 garlic clove, minced
1 cup mushroom, chopped
1/4 cup celery, chopped
3/8 cup carrot, chopped
2 tablespoons flour
1/2 cup white wine
1 cup chicken stock
1 tablespoon tomato paste
1/8 teaspoon thyme
2 bay leaves

Steps:

  • Preheat ovent ot 375°F
  • For Filling: Saute onions in butter for 3 minutes. Add garlic and mushrooms; cook for 2 minutes. Add the remaining filling ingredints. Add herbs to tast: salt, pepper and tarragon. Set aside.
  • Pound chicken breasts until 1/4" thin. Place one TB filling on each breast. Roll and tie with cooking string. Dredge in seasoned flour. Chill for 30 minutes or overnight. In skillet, brown roll-ups in butter for 5 minutes and place in a casserole dish.
  • For Sauce: Saute onions, garlic, mushrooms, celery and carrots in oil and butter. Add flour and cook until golden. Add white wine, chicken stock and tomato paste, stirring until smooth. Add thyme, bay leaves, salt and pepper to taste.
  • Pour sauce over chicken roll-ups in casserole. Cook, covered, in the oven for 30 minutes. Serve with rice.
  • These freeze well, so make extra while greens and veggies are in season.
