1 tablespoon baking powder
6 ounces frozen butter
4 ounces blue cheese crumbs
3 ounces chopped fresh spinach
2 tablespoons chopped fresh parsley leaves
3 ounces chopped green onion
3 eggs, beaten
2 to 3 cups buttermilk, divided

Steps:

  • Preheat the convection oven to 350 degrees F.
  • Add all the dry ingredients into a large bowl and stir to combine. Grate the frozen butter into the dry ingredients. Add the blue cheese, spinach, parsley, and green onions. Make a well and add the eggs and half the buttermilk. Fold until just holding together , adding more buttermilk as needed. Line a sheet pan with parchment paper. Scoop 3-ounce portions of batter onto the paper. Bake for 22 minutes.

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment.
  • Sift together flours, baking powder, baking soda, sugar and salt. Rub in butter, or place in a stand mixer fitted with the paddle and beat at low speed until incorporated. Add chopped rosemary and thyme and buttermilk and mix just until the dough comes together.
  • Transfer to a lightly floured work surface and gently shape into a 1/2-inch thick rectangle. 1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup cold butter, cut up
1 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/3 cup milk
1 egg, beaten
3 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 450ºF.
  • Mix first 4 ingredients in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in shredded cheese.
  • Make well in center of flour mixture. Mix sour cream and milk. Add to flour mixture; stir with fork just until moistened.

I've been trying a variety of scones lately at the local cafes but they're usually sweet. I decided to develop a recipe for a savory scone that I think fits the bill nicely. This version makes eight small (2 1/2-inch in diameter) hemispheres with a bacon center in each. The recipe as written requires that you cool the bacon grease so it's helpful to cook and cut the bacon the day before and finish the scones the next day. I like to minimize the kitchen mess so I've optimized the dough-related work to be in the bowl rather than on the countertop.

½ pound bacon
1 ¾ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking powder
10 tablespoons whole milk
2 teaspoons whole milk
1 egg yolk
⅛ teaspoon maple syrup

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon grease into a small glass container and chill until set, at least 1 hour. Cut bacon strips into 1/4-inch slices.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Combine flour and 1 tablespoon plus 1 teaspoon baking powder in a large bowl. Measure out 6 tablespoons plus 2 teaspoons chilled bacon grease into the bowl. Knead grease into the flour mixture with one hand, turning bowl with the other, until dough is crumbly.
  • Make a well in the center of the dough and slowly pour in 10 tablespoons plus 2 teaspoons milk. Mix with one hand until milk is incorporated and dough feels wet to the touch. Form dough into a thick disc. Cut into 16 equal-sized pieces with a knife.
  • Roll dough into individual balls and place them on the baking sheet. Flatten them into circles about 2 1/2 inches in diameter. Place a tablespoon of bacon slices in the center of 8 circles. Top with remaining circles of dough. Seal so that the top circle meets the bottom using your fingertips.

This is a savory, but not super-rich, scone recipe. I like the fact that I was able to whip these up with ingredients that I always have around the house. These are a nice addition to breakfast/brunch/lunch, as a side with dinner (poultry or fish would be a good companion), or for a snack. They're pretty good for entertaining if you want to make more than one batch at a time.

½ teaspoon lemon juice
½ cup soy milk
2 cups all-purpose flour
5 tablespoons lemon juice, divided

1 egg
1 egg, beaten
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Stir 1/2 teaspoon lemon juice into soy milk in a small bowl to make mock buttermilk. Let sit until curdled, 5 to 10 minutes.
  • Mix flour, 3 tablespoons lemon juice, sugar, baking powder, dill, and salt together in a large bowl using a fork. Mix in butter with a pastry blender until dough starts to clump together.

8 tablespoons unsalted butter
1 tablespoon plus 1 teaspoon caraway seeds
1 large red onion, peeled, halved through the root and thinly sliced crosswise
1 tablespoon extra virgin olive oil
Fine sea salt
130 grams rye flour (about 1 cup)
130 grams all-purpose flour (about 1 cup)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sour cream plus more for brushing
1 large egg
1 teaspoon honey
1/3 cup dried currants or chopped raisins
Demerara (raw) or granulated sugar, for sprinkling
Flaky sea salt, like fleur de sel or Maldon, for sprinkling (optional).

Steps:

  • Put the butter in the freezer until solid, at least 45 minutes.
  • In a large, dry skillet over medium heat, toast the caraway seeds until fragrant, about 1 minute. Transfer to a small bowl. Add the onions to the skillet and increase the heat to medium-high. Cook until they begin to turn dark brown and somewhat soft, about 5 minutes. Add the oil and a pinch of the fine sea salt; continue cooking until the onions are soft and caramelized, about 5 minutes longer. Cool completely.
  • Heat the oven to 400 degrees. Line a large baking sheet with parchment paper.
  • In a small bowl, whisk together the flours, baking powder, baking soda, .5 teaspoon of the fine salt and the caraway seeds. In a separate bowl, whisk together the sour cream, egg and honey.
  • Remove the butter from the freezer. Using the large holes of a box grater, grate about .25 of the butter. Gently toss it into the flour mixture. Repeat with the remaining butter, adding about .25 at a time.
  • Stir the wet mixture into the flour-butter mixture. Stir in the onions and currants or raisins. Stir dough until it just comes together.
  • On a lightly floured surface, pat the dough into a .75-inch-thick round. Cut into eight wedges. Transfer dough to the prepared baking sheet, allowing 1 inch between each scone. Brush the tops of the scones with a little sour cream and sprinkle with sugar and flaky sea salt.
  • Bake scones until the undersides are golden brown but the tops are still a bit soft, 15 to 17 minutes. Cool 10 minutes before serving. They are best served warm.

  • Preheat the grill on a medium flame.
  • Using a medium sized bowl, mix flour, sugar, salt, onions, and bacon together. Let the mixture rise for about 30 minutes.
  • Then add the eggs, buttermilk, and cheese. Continue mixing until a firm dough is formed. If the dough becomes a little watery, just add a little more flour.
  • Place the dough on the counter and with sprinkle with flour. Then flatten it out with your hands. Using a circular cookie cutter, cut out 2-inch rounds.
  • Line a small pan with parchment paper, and place the cut outs in the pan. Sprinkle desired amount of cheese on top and place the pan on a grill, lid closed, for 15 minutes.
  • To plate, slice in half and spread with butter, or preferred topping.

1 whole garlic bulb
2 teaspoons olive oil
1/2 cup butter, softened
SCONES:
2 bacon strips, chopped
1/3 cup chopped onion
2 cups all-purpose flour
3 teaspoons baking powder

1/2 teaspoon salt
1/2 cup cold butter
1 large egg, room temperature
1/2 cup sherry
1/3 cup heavy whipping cream

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off of garlic bulb. Brush with oil. Wrap bulb in heavy-duty foil. Bake at 400° for 40-45 minutes or until softened. 1 1/2 teaspoons kosher salt
3/4 cup honey
1 1/2 cups heavy cream
3/4 cup steamed spinach, squeezed dry and chopped
3/4 cup grated sharp Cheddar cheese

Steps:

  • Position a rack in the middle of the oven. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Combine the flour, baking powder, and salt in a large mixing bowl and set aside.
  • Whisk the honey and cream in a separate bowl until smooth.
  • Stir together the spinach and Cheddar cheese in a small bowl and set aside.
  • Whisk the cream mixture into the flour mixture. Stir in the spinach mixture until smooth. Don't overmix the dough. It's okay if a few lumps of dry ingredients are visible.
  • Turn out the dough onto a lightly floured work surface. Knead the dough very briefly, about 30 seconds, just until it sticks together. There should be as little handling as possible.   • Cut the dough into desired shapes. Gather up the scraps, reroll them, and cut out more scones until the dough is used up. Pat the scones lightly to smooth the tops.
  • Place the scones about 2 inches apart on the prepared baking sheet. Bake the scones for 12 to 14 minutes, or until the tops spring back when pressed lightly and they are golden brown on the top and bottom.
  • Remove the scones from the oven and cool for 5 minutes on the baking sheet. Transfer the scones to a wire rack to cool for at least 5 minutes before serving.

Cut each circle into 12 wedges with floured knife, but do not separate. Brush 1 tablespoon yogurt over each circle.

8 ounces pork sausage
1/2 cup finely chopped onion
2 cups buttermilk baking mix
1/2 cup milk
1 teaspoon instant onion
1/2 teaspoon crumbled dried oregano

Steps:

  • Cook sausage and chopped onions in a skillet over medium heat until browned, breaking up sausage as it cooks.
  • Drain off excess fat; cool slightly.
  • In medium size bowl combine baking mix and sausage mixture.
  • Pour in milk and stir with a fork just until evenly moistened.
  • Turn out on an ungreased baking sheet.
  • With floured hands, pat into an 8-inch round and cut in eighths with a sharp knife.
  • Sprinkle instant onion and oregano over the top.
  • Bake at 400ºF for 20 minutes.
  • Cool 5 minutes and serve warm.
  • Variation: Add a little grated cheese to baking mix.

A rich, make-ahead recipe for delicious scones, that are frozen before baking, and can be adapted with any of your favorite ingredients. When you are ready to serve these, take them directly from the freezer and pop them into the oven.

2 3/4 cups all-purpose flour (can use 1/2 whole wheat)
2 tablespoons sugar
4 teaspoons baking powder
1/4 teaspoon salt
10 tablespoons butter, melted
6 ounces sharp cheddar cheese, shredded
10 ounces deli ham (optional)
1/4 cup chives, chopped
1/4 cup bell pepper, chopped
1 cup heavy cream
1/4 cup sour cream

Steps:

  • Line a baking sheet with parchment paper.
  • In a large bowl, stir together flour, sugar, baking powder and salt. Drizzle in the melted butter, and stir well. Stir in the cheddar, ham or bacon, chives, and chopped pepper.
  • In a small bowl, stir together the sour cream and the heavy cream.
  • Add the creams to the dry ingredients and stir just until everything is moistened and the dough sticks together.
  • Turn the dough out on to a floured surface. Using your floured hands, form the dough into 2 rounds that are 1 inch thick and 6-7 inches in diameter. Cut each round into 8 wedges, then transfer all to the prepared baking sheet.
  • Freeze at least 10 minutes, if baking immediately. Or freeze until firm and place in a ziplock baggie until ready to serve.
  • When ready to bake, preheat oven to 375 degrees. Place frozen scones evenly spaced about 2 inches apart, on a lightly greased baking sheet.
  • Sprinkle the scones with a small amount of shredded cheese if desired.
  • Bake for 20 minutes until golden and slightly firm, but not too brown.
  • Serve warm.

These are perfect little savory bites for an appetizer table or, if you make them a little bigger, to have with soup. Different herbs will yield different flavors, so be creative with your mix! For this example, I used fresh basil, rosemary and oregano out of my garden. Dried herbs would also be great. Adapted from Bunny. Eats....

3 c all purpose flour (you will also flour your cutting area)
6 tsp baking powder
1/4 tsp salt
6 1/2 Tbsp butter
1 pepperoni stick, chopped into bits
2 Tbsp fresh basil, chopped
2 Tbsp fresh oregano, chopped
1 Tbsp fresh rosemary, chopped
2 Tbsp grated parmsean
1/2 c cheese (finely grated - use the small holes)
1/4 sweet onion, finely chopped
1 c milk, plus 2 tablespoons for brushing

Steps:

  • 1. Preheat oven to 425 degrees. Sift flour, baking powder and salt into a bowl. Cut butter into small cubes. Use a pastry cutter to mix into the flour until the butter is in small crumb-size pieces.
  • 2. Add the pepperoni, onion, herbs and cheese. Mix with a fork to cover with the flour. Pour in the milk and using a spatula, fold the milk into the flour, bringing the flour up from the bottom and into the milk just until incorporated.
  • 3. Place the dough onto a well-floured surface. Using your fingers, press the dough out until it is a little less than 1". Use a 2" biscuit cutter and push straight down onto the dough - don't twist - and pull straight up. The edges of the scones should look "rough" - these layers are what will separate to give you the puff.
  • 4. Spray a cookie sheet with non-stick spray. Transfer scones to the cookie sheet. Brush with milk. Re-roll dough, press out and cut until all dough is used. Bake until the scones are nicely browned - my oven took 15 minutes. If you opt for a larger sized biscuit cutter, adjust to a longer baking time. Serve warm or at room temperature.

3 Tablespoons baking powder
3 Tablespoons sugar
1 1/2 teaspoon kosher salt
1 teaspoon freshly ground pepper
1 teaspoon finely chopped thyme
3 1/4 Cups AP flour, plus more for surface
3/4 Cup (1 1/2 sticks) cold, unsalted butter, diced
1 Cup cold heavy cream, plus more for brushing
2 Medium zucchini, coarsely grated, excess liquid squeezed out
5-6 Ounces Gruyère cheese, diced into small 1/4 inch pieces
Flaky sea salt (Maldon is nice)

Steps:

  • Preheat oven to 350 degrees Whisk baking powder, sugar, salt, pepper, thyme and 3 1/4 cups flour in a large bowl. Add butter, using your fingers to work into the dry ingredients until the butter is about the size of peas. Drizzle the 1 cup of cream into the mixture and use your fingers to distribute it evenly; dough will begin to clump together. Add the zucchini and cheese pieces and gently knead until dough comes together. Try not to overwork it - the less you work the dough, the more tender your scones will be, and we all want tender scones ? The dough may seem dry, but not to worry, that is where the zucchini magic comes in - releasing a nice amount of liquid during baking. Turn dough onto lightly floured surface and pat into a 2″ thick disc. Roll out gently to about 1 inch thick with a rolling pin. Using a 3″ biscuit cutter, punch out the scones and place them on a parchment lined cookie sheet about 2″ apart (these guys will spread). Brush tops with the extra heavy cream and sprinkle with a bit of the sea salt. Bake scones, rotating baking sheet halfway through, until golden brown and thoroughly baked, about 35-40 minutes. Transfer to wire rack, cool and devour! NOTES Hot tip: Let scones rest on the baking sheet for about 20 minutes before baking and they will be taller and more stately when they come out of the oven ?
