1 boneless whole pork loin roast (4 pounds)

Steps:

  • Combine the seasonings; rub over roast. Place on a rack in a shallow roasting pan. , Bake, uncovered, at 350° until a thermometer reads 145°, 80 minutes. Let stand for 10-15 minutes before slicing.

4 garlic cloves, pressed
4 teaspoons fresh rosemary, chopped
4 teaspoons fresh thyme, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
2 1/2 lbs pork loin roast, trimmed of fat

Steps:

  • Preheat oven to 400°F
  • Line 13 x 9 x 2" roasting pan with foil.
  • Mix first 5 ingredients in bowl. Rub garlic mixture all over pork.
  • Place pork, fat side down, in prepared roasting pan.
  • Roast pork 30 minutes.
  • Turn roast fat side up.
  • Roast until thermometer inserted into center of pork registers 155°F., about 25 minutes longer. (some brands have a handy dandy pop-up timer-Life is Good!
  • Remove from oven; let stand 10 minutes.
  • Pour any juices from roasting pan into small saucepan; set over low heat to keep warm.
  • Cut pork crosswise into 1/3-inch-thick slices.
  • Arrange pork slices on platter.
  • Pour pan juices over.
  • Garnish with rosemary sprigs, if desired.

2 -3 lbs boneless pork loin
8 fresh sage leaves, plus some
fresh sage leaf, for garnish
salt & pepper
3 tablespoons unsalted butter
1 tablespoon olive oil
2 garlic cloves, left whole
1 bay leaf
1/2 cup dry white wine
2 tablespoons balsamic vinegar
2 tablespoons all-purpose flour

Steps:

  • Trim excess fat from pork.
  • Tie with butchers string.
  • Put 3 sage leaves on top and 3 on the bottom of roast under string.
  • Rub the meat with salt & pepper.
  • In a dutch oven, on med-high heat, melt butter and oil, when hot add the pork and sear quickly on all sides, 5 minutes or so. The sear is very important. Reduce heat to med-low and add garlic (whole) 1-2 minutes transfer meat and garlic to plate, pour off fat.
  • Return meat to pan( with garlic) and bay leaf.
  • Add 1/2 cup wine, vinegar, and 2 more sage leaves.
  • Cover tightly, reduce to low, simmer for 2 hours turning 1/2 way through cooking, add more wine if needed.
  • Let meat rest covered in foil.
  • Meanwhile, discard bay,garlic,and sage from pan.
  • Skim fat off (you need about 1 cup of liquid, add water if needed.
  • Melt 1 tbsp butter into separate pan add flour and cook 1-2 minutes add pan juices whisking constantly until thick and smooth.
  • Arrange meat on platter, spoon sauce over top and garnish with sage leaves.

1 boneless pork loin (about 2 pounds)
1 1/2 teaspoons chopped fresh sage plus 2 sprigs
1 1/2 teaspoons chopped fresh rosemary plus 2 sprigs
1 teaspoon minced garlic plus 2 cloves, peeled and lightly crushed
3 tablespoons extra virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375°F. Using a long knife with a thin blade or a clean sharpening steel, make a channel lengthwise through the center of the loin running from one end to the other.
  • Mix the chopped sage and rosemary in a small bowl. Add the minced garlic and 1 tablespoon oil. Season the mixture with salt and pepper, then poke it through the channel in the meat (I find it easiest to work from both ends more or less at once).
  • Season the outside of the loin generously with salt and pepper. Heat 2 tablespoons oil over medium-high heat in an ovenproof skillet large enough to hold the loin. Brown the meat on all sides and on each end, about 8 minutes in all.
  • Add the herb sprigs and crushed garlic to the pan and put it in the oven. Roast for 15 minutes, then turn the loin and roast 15 minutes more, basting from time to time with the pan drippings.
  • Remove the pan from the oven, cover with foil, and set aside in a warm place for 15 minutes to rest the meat. To serve, cut the loin into generous slices, season with sea salt, and drizzle with the pan juices.
  • Chef's notes:
  • If you are roasting a larger, thicker loin, make two channels through the meat so the seasoning can be better distributed. Cook the loin longer.
  • If you want, you can use a meat thermometer to check the temperature. I prefer pork cooked so it's still a little pink at the center. You can expect a reading before the final resting of about 135°F. If you like your pork more thoroughly cooked, cook it until the internal temperature reaches 150°F.

6 garlic cloves, minced

1 cup water
8 green onions, chopped

1/4 cup brown gravy mix
2-1/2 cups beef broth
1-1/4 cups sour cream
2 tablespoons prepared horseradish

Steps:

  • Preheat oven to 350°. In a small bowl, combine soy sauce, garlic, herbs and mustard; rub over roast. Place on a rack in a shallow roasting pan. Pour water into the pan. , Bake, uncovered, until a thermometer inserted in pork reads 145°, 70-90 minutes. Remove roast from oven; tent with foil. Let stand 15 minutes before slicing. , Meanwhile, in a large saucepan, saute onions in butter until tender. Combine gravy mix and broth until smooth; stir into pan. Bring to a boil. Reduce heat; cook and stir until thickened. Stir in sour cream and horseradish; heat through (do not boil). Serve with pork.

2 -3 lbs center cut pork loin
1 tablespoon olive oil
2 tablespoons summer savory
15 slices double-smoked bacon
3 cortland apples, peeled, cored and cut into wedges
6 garlic cloves, chopped
3 shallots, roughly chopped
salt and pepper
1/2 cup red wine
1/2 cup white wine
3 ounces pure maple syrup
4 ounces hard butter, cubed

Steps:

  • Preheat a stainless steel pan over medium heat.
  • Rub pork loin with olive oil and summer savory, ensuring it sticks, then wrap the loin with bacon.
  • Over medium heat, sear pork loin with bacon until bacon has bronzed; add apple, garlic and shallots. Season lightly wiht salt and pepper, blend together in pan and place pan in 325F oven for 30-35 minutes.
  • Set pork on cooling rack. Over medium high heat, bring juices in pan to a rolling simmer. Add wines to deglaze, and reduce liquid to a concentrate flavor. When it's reduced by 1/2, add maple syrup, and keep reducing.
  • When it starts to have a nice glaze or sheen to it, take it off the heat and let sit for 2 minutes. Add in cold butter whle swirling the pan in a circular motion on the stovetop.
  • Season with salt and pepper if needed and set aside.
  • Slice the pork. Place on a serving platter and pour sauce over liberally.

The Creole Seasoning is Emeril's Essence, but I could not add that to the recipe ingredients. If you do not want to use the Essence, I have used other spices with good results as well. 1 (3 lb) boneless pork loin roast
1 tablespoon creole seasoning
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
6 ounces thick cut bacon, diced
6 tablespoons all-purpose flour
1 large yellow onion, finely chopped
1 celery rib, finely chopped
1/2 medium red bell peppers or 1/2 medium orange bell pepper, seeded and chopped
1 tablespoon minced garlic
6 ounces button mushrooms, thinly sliced
1 quart canned low sodium beef broth
1 teaspoon Worcestershire sauce
2 tablespoons sliced green onion tops

Steps:

  • Season the roast evenly with 2 teaspoons of the Essence, the salt, and black pepper and rub into the meat.
  • Heat a cast iron Dutch oven and, when hot, add the bacon. Cook, stirring occasionally, until the bacon is crispy, about 6 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain and set aside.
  • Add the roast to the pan and increase the heat to high. Cook until the roast is evenly browned on all sides, about 6 to 8 minutes. Transfer the roast to a platter and set aside.
  • Add the flour to the pan and cook, stirring constantly, until a roux the color of milk chocolate is formed, 1 to 2 minutes.
  • Add the chopped onion, celery, bell pepper, and cook, stirring, until the vegetables have wilted, 4 minutes.
  • Add the remaining 2 teaspoons of Essence and the garlic and cook for 1 minute.
  • Add the mushrooms and cook, stirring frequently, until they have released their liquid, about 4 minutes.
  • Add the beef broth and Worcestershire and bring sauce to a boil.
  • Return the roast to the pan and cover the pan. Reduce heat to low and cook the roast for 30 minutes.
  • Turn the roast over, cover the pan, and continue to cook on low heat until an instant-read thermometer inserted into the center of the roast registers 145 to 150 degrees F, about 20 minutes longer.
  • Remove the roast from the pan and transfer to a platter. Cover loosely with foil to keep warm.
  • Add the green onion tops to the sauce and cook for 10 to 15 minutes, uncovered, until the sauce is thick enough to coat the back of a spoon.

1 boneless center-cut pork roast (about 3 pounds)
1 tablespoon oil
1 3/4 cups water
2 packages McCormick® Pork Gravy Mix

Steps:

  • 1. Preheat oven to 350 degrees F. Mix sage, garlic salt, ginger and pepper in small bowl. Place roast on rack in foil-lined roasting pan. Brush pork with oil. Sprinkle seasoning mixture evenly over entire roast.
  • 2. Roast pork 1 1/2 hours or until desired doneness. Transfer pork to cutting board or serving platter. Cover loosely with foil.

5-7 lb pork roast ( center cut,or crown roast)
handful of sage leaves, fresh ( 1/2 a bunch)
handful thyme leaves fresh(1/2 a bunch)
1 tsp salt
1 tsp black pepper
1/2 lb bacon ( i use cider cured) any bacon will do.
1-2 clove garlic

Steps:

  • 1. Rinse and dry pork roast. Preheat oven to 375 degree's take the sage and thyme and put in a food processor and chop.
  • 2. Fry the bacon in a large fry pan. Remove bacon and set aside.Sear the roast on all sides in the bacon fat until nicely browned.Use 2 sets of tongs to do this. You do not want to pierce the meat with a fork etc.
  • 3. Put roast in a pan for roasting.Grate the garlic cloves.mix with the Sage,and Thyme. Add a bit of the bacon fat to this mixture.
  • 4. Rub all sides of the browned roast with the herb mixture,and place the some whole stems of herbs on top of roast. Sprinkle with salt and pepper. Add some chopped bacon on top of roast and in the pan.
  • 5. Put in lower half of oven,and loosely cover with foil. Bake for around 2-3 hours.or until meat thermometer reaches 150 degree's.About 30 minutes per pound. Let roast rest 30 minutes before slicing. Remove roast to a platter.
