After reading several recipes for traditional Swiss Steak, I made up this version from things I had on hand. DH really liked it and said it was "a keeper".

1 1/2 lbs beef eye round, sliced to half inch thickness
1 1/2 cups flour
3 tablespoons olive oil
1 medium onion, sliced
1 (14 ounce) can Mexican-style diced tomatoes
1 (10 ounce) jar beef gravy
1 teaspoon seasoning salt (to taste)
2 teaspoons tomato bouillon
2 teaspoons Mexican oregano, crushed
1 garlic clove, crushed
2 teaspoons potato starch (for thickening)

Steps:

  • 1. Mix flour with seasoning salt to your taste, then dredge steaks in flour and pound with meat hammer or edge of plate to incorporate flour into steaks.
  • 2. Heat olive oil in heavy skillet and brown the steaks to seal in juices.
  • 3. Place sliced onion in bottom of 5-6 qt slow cooker.
  • 4. Place browned steaks over the onions.
  • 5. Mix together remaining ingredients, EXCEPT potato starch flour, and pour the mixture over the meat.
  • 6. Cook on low heat for 7-8 hours or until meat is fork tender.
  • 7. Remove meat from slow cooker and set aside.
  • 8. Mix potato starch flour with about 1/4 cup water then slowly stir into the liquids in the slow cooker until thickened. Return meat to cooker to keep warm.
  • 9. I served this with with gravy poured over rice.

1½ lbs round steak, cut into ½ in strips
¼ cup flour
½ tsp salt
½ tsp pepper
1 small onion
4-5 garlic cloves
1 green pepper, diced
1 red pepper, diced
1 (16 oz) can Italian style tomatoes
1 tbsp beef bouillon
2 tbsp Worcestershire sauce
1 tbsp steak seasoning
1 tbsp steak sauce

Steps:

  • Toss steak in salt, pepper, & flour and add to gallon-sized freezer bag. In a med bowl mix together the rest of the ingredients, add to bag. Zip close and place in freezer. When ready to use thaw in fridge overnight. Cook on low 8 hours.

I sometimes get a craving for steak, but I have no grill to prepare this tender delicacy! Crock pot saves the day again! Yes, you CAN prepare a moist and tender steak in your crock pot. This dish comes with it's own rice and gravy, too - just add a salad or vegetable and you have a complete meal.

1 lb beef top round steak, boneless, cut thin
1/4 c mustard, spicy brown (grainy is good too)
1/4 c steak sauce of your choice (i used a-1)
1/2 c dry white wine (i used chardonnay)
1 c beef broth
3 c white or brown rice, cooked
salt and pepper, to taste
cornstarch
cooking spray

Steps:

  • 1. Spray crock pot with cooking spray halfway up the sides.
  • 2. Mix mustard and steak sauce in small bowl (I used a teacup!). Slather this mixture over both sides of steak, coating well. Place in bottom of crock pot. Pour wine and broth around steak (not over it). Drizzle remaining mustard mixture over the wine and broth. Turn on low and cook 3.5 - 4 hours. Steak will be fork-tender.
  • 3. About 20 minutes before end of cooking time, you can prepare your white rice (45 minutes before if serving brown rice). Halfway through the rice cooking time, remove steak from crock pot to platter and keep warm. Mix cornstarch with water, just enough to dissolve it. Drizzle the cornstarch mixture into the wine/broth/mustard mixture in the bottom of the crock pot and cook on high until desired consistency. You may have to prepare more cornstarch to achieve this.
  • 4. When gravy is ready, add salt and pepper, to taste. Return steak to gravy while you plate the rice. Then plate the steak and serve with rice and gravy. Enjoy!
  • 5. NOTE: For those of you that don't cook with wine, you can substitute 1/4 cup beef broth and 3 Tbsp each of lemon juice and balsamic vinegar.
