Steps:
- Heat oil In a large lidded sauce pan over a medium heat.
- Add garlic and toss (or stir) until it just starts to turn color.
- Remove from heat and IMMEDIATEY add spinach.
- Toss with a set of tongs to coat the spinach with oil/garlic.
- Salt to taste, some folks like it with a just a bit of fresh grated nutmeg.
- Cover and let sit for a couple minutes, toss again and serve.
- It should just be slightly warmed and retain it's crunch.

SAUTEED BABY SPINACH WITH GARLIC, MUSHROOMS AND BEANS
This is one of my favorite, feel good meals. It's quick, healthy and delicious. I usually use cannellini beans, but any beans are good - garbanzos, navy beans, black beans. I just think the white beans look nice. All amounts are approximate. This is a very flexible recipe. Add more garlic, less garlic, Just remember that the spinach will shrink down even more than you might expect it too - so I use plenty of spinach. I like this as a vegetarian lunch, but it would be good as a side dish as well.

Steps:
- Heat oil in large skillet.
- Add chopped garlic and stir a minute or two. Add sliced mushrooms and stir until garlic begins to turn golden. Add spinach and cannellini. Continue to stir until beans are warm and spinach is wilting. Remove to a plate and season to taste. Serve immediately.

BABY SPINACH, RED ONION, PANCETTA AND PEACH SALAD W/ SAUTEED SCALLOPS
Steps:
- Scallops Heat oil, and add shallots, garlic, lemon juice, peel . Sautee scallops, add wine. (Use some of the pancetta oil w/ olive oil.) Salad: Mix vinegar, shallot, and lem juice in bowl. Whisk in 3 tbsp olive oil and grapeseed oil. Preheat oven to 400. Brush rimmed baking sheet w/ oil. Place onion rounds on sheet, and drizzle w/ oil and s/p. Roast 30 minutes, turn and roast another 10 minutes. Sautee pancetta til crisp and drain. When cool, break into pieces. Mix spinach and peaches in bowl. Separate onions into rounds and add with pancetta. Toss w/ dressing and place scallops around plate.
SAUTEED BABY SPINACH WITH ALMONDS AND GOLDEN RAISINS
Steps:
- Place spinach and water in a large microwave safe bowl and cover completely with a plate. This may require more than one batch. Microwave for 3 minutes, then remove bowl and keep covered for 1 minute. Remove place and transfer spinach to colander in sink. Press spinach against colander to remove water, then coarsely chop spinach, return to colander, and press again to remove additional water. Heat 2 tbsp. oil, garlic, pepper flakes, and raisins in a skillet over medium-high heat. Cook 3-6 minutes until the garlic is light brown. Add spinach to the skillet with 1/4 tsp. salt, and stir with tongs until uniformly wilted, about 2 minutes. Remove from heat, and stir in vinegar and almonds. Drizzle with 2 tsp. olive oil and season with salt to taste.
