With an abundance of potatoes in our garden each summer, I often make this easy recipe. We love the combination of parsley and spices, and the lemony butter sauce. They make a great accompaniment to grilled fish. -Sandra McKenzie, Braham, Minnesota

12 small red potatoes
1/3 cup butter, cubed
3 tablespoons lemon juice
1 teaspoon salt
1 teaspoon grated lemon zest
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
2 tablespoons minced fresh parsley

Steps:

  • Peel a strip from around each potato. Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or just until tender., Meanwhile, in small saucepan, melt butter. Stir in the lemon juice, salt, lemon zest, pepper and nutmeg. Drain potatoes and place in a serving bowl. Pour butter mixture over potatoes; toss gently to coat. Sprinkle with parsley.

  • Cook potatoes in boiling salted water until tender, about 15 minutes; drain. Combine butter, lemon juice and parsley; pour over the potatoes and stir gently to coat.

3 lb baby potatoes (mixed, such as white- and red- skinned)
6 Tbsp butter
6 Tbsp chopped fresh parsley
1 Tbsp grated lemon peel
1 Tbsp fresh lemon juice
1 1/2 tsp salt
1/2 tsp ground black pepper

Steps:

  • 1. Cook potatoes in large pot of boiling salted water until tender, about 20 minutes. Drain. (Can be made 2 hours ahead. Let stand at room temperature.)
  • 2. Melt butter in heavy large skillet over medium-high heat. Add potatoes, 4 tablespoons parsley, lemon peel, lemon juice, salt, and pepper. Cook until potatoes are heated through and beginning to brown, tossing often, about 5 minutes.
  • 3. Transfer to bowl. Sprinkle with 2 tablespoons parsley and serve.

From The Popular Potato, Best Recipes (1989). I wanted to try something different with my fave vegetable. I ate it on its own, but I can see this along-side fish or chicken! I used smaller potatoes and cut them in wedges instead of using slices.

4 large potatoes, peeled
3 tablespoons oil
4 tablespoons butter or 4 tablespoons margarine
1 lemon, grated rind of
1 lemon, juice of
3 tablespoons chopped fresh parsley
3 garlic cloves, crushed

Steps:

  • Cut potatoes into thin slices, less than 1/4 inch.
  • Cook in boiling water for 4 minutes; drain carefully and pat dry with paper towels.
  • Heat oil and 3 Tbsp butter in a heavy-based frying pan.
  • Add enough potatoes to cover the bottom of pan and cook, shaking pan so potatoes do not stick; continue until all potatoes are browned (if necessary, add more butter and oil).
  • Combine remaining butter, lemon rind, and juice, parsley and garlic in a pan.
  • Heat until butter turns a pale brown.
  • Add potatoes and toss until potatoes are well coated.
