Baked Rice Pudding image

Number Of Ingredients 13

RICE MIXTURE
1/2 cup white uncooked regular long-grain rice
2 tablespoons sugar
2 cups milk
1 tablespoon margarine or butter
PUDDING
6 eggs
1 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup raisins
2 cups milk

Steps:

  • 1. In medium saucepan, combine all rice mixture ingredients. Bring to a boil. Reduce heat to low cook uncovered 20 to 25 minutes or until creamy, stirring occasionally. Remove from heat cool 10 minutes.2. Heat oven to 350°F. Lightly grease 8-inch square (2-quart) baking dish. In large bowl, beat eggs stir in all remaining pudding ingredients and rice mixture. Pour into greased baking dish.3. Bake at 350°F. for 55 to 60 minutes or until set. Serve warm or cold. If desired, serve with cream or whipped cream.
