2 lb Asparagus
12 oz Bacon
1 tbsp Garlic Parsley Salt

Steps:

  • Prepare all ingredients for the recipe. Cut off and discard about 1 inch from the ends of asparagus. Cut them into preferred size pieces.
  • Cut bacon into bite-size cubes. Fry bacon on a preheated skillet, until it's completely cooked. Remove bacon and set aside.
  • Add asparagus to the same cooking pan. Season it with garlic parsley salt. Cook for about 5 minutes. Add bacon crisps back to the skillet and turn off the heat.

  • In a large skillet over medium high heat, cook the bacon until crisp. Remove and wipe out the grease.
  • Add the butter, garlic, asparagus, Italian seasoning, and salt and pepper. Sauté until tender about 5-7 minutes.
  • Add the bacon back into the asparagus and serve.

1 tablespoon unsalted butter
1 tablespoon olive oil
1 small shallot, sliced
1 bunch thin asparagus, trimmed and cut into 2-inch pieces
Kosher salt and freshly ground black pepper
1 teaspoon lemon zest, for garnish

Steps:

  • Heat the butter and oil in a large saute pan over medium heat. Add the shallots and cook until they begin to soften, about 1 minute. Add the asparagus and season with 1 teaspoon salt and some pepper. Cook the asparagus, stirring occasionally, until cooked through but still bright green, about 4 minutes. Transfer the asparagus to a platter and garnish with lemon zest.

1 1/2 pounds asparagus, trimmed
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 thick-cut strips bacon, diced
1 tablespoon Dijon mustard
1 tablespoon sherry vinegar
2 teaspoons honey
1/2 cup feta, crumbled
1/2 teaspoon flaky sea salt

Steps:

  • Preheat the oven to 450 degrees F.
  • On a baking sheet, toss the asparagus with 1 tablespoon of the oil and the salt and pepper. Arrange in a single layer and roast until the asparagus is tender, 10 to 13 minutes.
  • Meanwhile, in a skillet over medium-high heat, cook the bacon until crisp, 3 to 4 minutes. Remove to a paper-towel-lined plate to drain, reserving 3 tablespoons of the bacon drippings.
  • In a medium bowl, whisk the bacon drippings, mustard, vinegar, honey and the remaining 2 tablespoons oil until combined.
  • To assemble: Plate the asparagus. Sprinkle with bacon and feta, and drizzle with Dijon dressing. Finish with flaky sea salt. Serve warm.

1 pound fresh asparagus, trimmed
1 shallot, thinly sliced
1 pinch salt, or to taste

  • Cook and stir bacon in a skillet over medium heat until crisp, about 5 minutes. Discard grease.
  • Melt butter in the same skillet.
  • Cook and stir asparagus and shallot with salt and black pepper in melted butter and bacon. Cover skillet and cook, stirring occasionally, until asparagus are tender, about 5 minutes.

⅛ teaspoon salt

I saw a recipe similar to this while watching Iron Chef. This isn't the exact recipe used, but it's pretty close. Only one pan is used, so cleanup is minimal. Saute the garlic in oil for a minute or so before adding the asparagus if you like your garlic crunchy & toasty tasting. This is the only way I can get my picky husband to eat asparagus.

1 lb bacon
4 -6 chopped garlic cloves
2 tablespoons olive oil

Steps:

  • Cut tough ends off asparagus.
  • Bundle together 3-4 asparagus stalks & wrap, bottom to top, with a slice or two of bacon.
  • Tuck loose bacon end between asparagus stalks to secure.
  • Repeat with the rest of the asparagus.
  • Heat Olive Oil in skillet over medium heat.
  • Add chopped garlic & asparagus bundles to skillet.
  • Saute 5-10 minutes, turning occasionally, until asparagus is tender & bacon is cooked.

1/4 cup black vinegar
1/4 cup sherry vinegar
2 small shallots, thinly sliced into rings
4 ounces slab bacon, cut into 1x1/4-inch pieces
1 tablespoon vegetable oil, plus more for frying (about 3 cups)
1/4 cup all-purpose flour
1/4 cup fine-grind cornmeal
Kosher salt
1 pound asparagus, trimmed, thinly sliced on a diagonal
1 tablespoon white soy sauce
Special Equipment
A deep-fry thermometer

Steps:

  • Combine both vinegars in a medium bowl. Add shallots and let sit, tossing occasionally, 1 hour. Drain and pat dry.
  • Meanwhile, cook bacon in a large skillet over medium heat, stirring occasionally, until most of fat is rendered and bacon begins to brown, 5-7 minutes. Transfer to paper towels. Pour off fat; reserve for another use (scrambled eggs!). Wipe out skillet; reserve.
  • Fit a medium pot with thermometer and pour in oil to come 2" up sides of pot. Heat over medium-high until thermometer registers 300°F. Whisk flour and cornmeal in a shallow bowl. Dredge shallots in flour mixture, shaking off excess. Fry, tossing occasionally, until golden and crisp, about 3 minutes. Transfer to paper towels; season with salt.
  • Heat reserved skillet over medium-high. Swirl remaining 1 Tbsp. oil in pan to coat (this keeps food from sticking); pour out excess. The oil should be shimmering-if it's not hot enough, the asparagus will steam not caramelize. Add asparagus, season with salt, and cook, tossing, until almost cooked through, about 1 minute. Add bacon and 1 Tbsp. water; cook, tossing, until asparagus is cooked through, about 30 seconds. Add soy sauce; toss to coat. Serve topped with shallots.
