This is a really easy recipe that tastes great. Fresh veggies in a light sautee. You can add a cup of cooked pasta if you wish to give it more heft as a side dish. We always make too much pasta during the week so this is a great way to work through some of the leftovers.

1 tablespoon butter
1 sweet onion, chopped
1 clove garlic, minced
2 tomatoes, chopped
½ cup water, divided
1 cube chicken bouillon
1 large zucchini, thinly sliced
ground black pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, about 5 minutes. Add the garlic; cook and stir 1 minute more. Stir the tomatoes and 1/4 cup water into the mixture; cover. Cook until the tomatoes have reduced slightly, stirring occasionally, about 5 minutes.
  • Pour another 1/4 cup water into the skillet, and add the bouillon cube; stir until the bouillon is dissolved. Add the zucchini; continue cooking until the zucchini is tender, 5 to 7 minutes. Season with black pepper to serve.

Wonder, rich, and something people don't expect. You will have people wanting this recipe once you serve it. There are variation at the end that makes it even richer.

2 lbs zucchini
2 tablespoons butter
1 tablespoon olive oil
3 tablespoons minced shallots or 3 tablespoons scallions
salt and pepper

Steps:

  • Grate the zucchini and measure.
  • For each two cups of zucchini toss with 1 tsp salt.
  • Let squash drain in a colander for 3 to 4 minutes or until you are ready to begin cooking. If too salty rinse and drain again.
  • Squeeze in a clean kitchen towel until most liquid is pressed out.
  • In a skillet heat 2 Tbsp butter and the olive oil.
  • Saute the shallots/scallions briefly.
  • Add the zucchini and toss, cooking about 4 minues or until tender.
  • Serve.

  • Stir in 1 cup creme fraiche or heavy cream and simmer until the cream has been absorbed.

3 medium zucchini, sliced into 1/2-inch-thick rounds
3 sprigs fresh thyme, leaves chopped
1 clove garlic, minced
1/2 lemon, juiced

  • Heat a cast-iron pan over medium-high heat. Once hot, add the oil. Add the zucchini in batches and sear on both sides until golden brown, about 1 minute per side. Once the second batch is seared, add the first batch back into the pan, and then add the thyme and garlic. Saute until the garlic is fragrant, another 30 seconds. Add the lemon juice, season with salt and pepper and stir to combine and heat through.

Another from "Pacific Fresh". This is a simple and rather unusual side dish. It is very tasty and one more way to use up that zucchini. Good served with roasted chicken!

3 medium zucchini, grated (leave peel on)
2 tablespoons butter
1/4-1/2 cup light sour cream
1/4 teaspoon salt
fresh ground pepper, to taste
freshly grated parmesan cheese, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Wash zucchini, leaving skins on, and grate either by hand or in a food processor.
  • Blot zucchini with paper towels to remove as much moisture as possible.
  • Place in an 8 inch square baking dish that has been sprayed with cooking spray.
  • Cut butter into small pieces and place evenly over zucchini.
  • Bake for 15 minutes, uncovered.
  • Remove from oven and pour off any liquid that has accumulated in the bottom of the dish.
  • Stir in sour cream, salt and pepper. Sprinkle top with parmesan cheese and bake until zucchini is tender and cheese melts. About 5-10 more minutes.

3 cups coarsely shredded zucchini

1 cup diced fresh tomato
2 tablespoons sliced ripe olives
