1 pound turkey Italian sausage links, casings removed
1 medium sweet red pepper, diced
1 small onion, diced
4 cartons (8 ounces each) egg substitute
1 can (4 ounces) chopped green chilies
1 teaspoon chili powder
10 flour tortillas (8 inches), warmed
1-1/4 cups salsa

Steps:

  • In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture., Bake, uncovered, at 350° for 30-35 minutes or until set. Break up sausage mixture with a spoon. Place 2/3 cup down the center of each tortilla; top with salsa. Fold one end over sausage mixture, then fold two sides over.

Here's what you need: canola oil, Kroger® Brand Mild Italian Sausages, medium yellow onion, Kroger® Brand Mini Sweet Peppers, water, kosher salt, freshly ground black pepper, flour tortillas, shredded mozzarella cheese, fresh parsley, long skewers

2 tablespoons canola oil, divided
5 Kroger® Brand Mild Italian Sausages
1 medium yellow onion, sliced
2 cups Kroger® Brand Mini Sweet Peppers, sliced
¼ cup water
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
5 flour tortillas, 8 in (20 cm)
2 cups shredded mozzarella cheese
1 tablespoon fresh parsley, for garnish
10 long skewers

Steps:

  • Preheat a gas grill to medium heat.
  • Lightly oil the grates of the grill with canola oil. Add the Kroger® Brand Mild Italian Sausages and close the lid. Cook for 8-10 minutes covered, turning frequently to brown on all sides until sausage juices run clear. Remove from the grill and set aside.
  • Heat a tablespoon of canola oil in a skillet over high heat. Add the onion, Kroger® Brand Mini Sweet Peppers, and water, and season with the salt and pepper. Sauté for 8-10 minutes, or until the vegetables are caramelized.
  • Lay the flour tortillas on a cutting board and sprinkle evenly with the shredded mozzarella cheese. Top with the pepper mixture, then place a sausage on top of each tortilla. Tightly roll up.
  • Wipe the pan with a damp paper towel. Set the pan over medium-high heat, then add the pepper and sausage wraps, seam-side down. (Depending on the size of the pan, you may need to work in batches.) Cook for 3-4 minutes, or until the tortillas are golden brown, pressing down slightly to seal. Flip and cook on the other side for another 3 minutes, until golden brown and the cheese is melted.
  • Transfer the wraps to a cutting board and use a serrated knife to trim the ends. Then cut each wrap into 6 pieces.
  • Skewer 3 pieces of wrap onto each skewer. Garnish with parsley.

2 tbsp French's (American) mustard
2 tbsp tomato ketchup
8 tbsp light muscovado sugar
12 good quality sausages
packet wheat flour tortillas
4 baby gem lettuces
sweetcorn relish, to serve

Steps:

  • Combine the mustard, ketchup and sugar. Preheat the barbecue. Toss the sausages on and sizzle for about 15 minutes, or until they are crispy, but not quite cooked through. Brush the sticky sauce all over the sausages and cook them for another 5 minutes, basting regularly.
  • Heat the tortillas on the barbecue for 30 seconds each side. Roll the sticky sausages in the wraps, along with some baby gem leaves. Finish with a dollop of corn relish.

You can either use already formed sausage patties or make your own patties from a tube of sausage. I prefer to make my own, you can make them a bit smaller and have a little variety as to what kind of seasoned sausage you use.

1 (16 ounce) package sausage (I like the mild)
1 (8 ounce) package refrigerated crescent roll dough
2 ounces cheese, of your choice (I like the pepper jack or swiss)
3 teaspoons mustard

Steps:

  • Preheat oven to 375.
  • In a skillet cook up the patties or form your own patties, small.
  • Remove from heat and blot on paper towel.
  • Seperate and cut dough into triangles enough for each patty.
  • Brush with the mustard and place piece of cheese small enough to fit under the patty.
  • Place sausage on top of triangle and wrap around it, covering most of it by crisscrossing.
  • Place wrapped patty on ungreased cookie sheet or baking stone and bake for 11-13 minutes or until golden brown.
  • How many this yields depends mostly on how big you make the patties and how many triangles you cut.
  • For ready made patties it makes 8.

2 tablsps fresh lime juice
2 Tablsps sugar
1 thai chile or 1/2 serrano chili with seeds minced and divided
1 lb ground chicken
1/2 cup minced shallots ( about 2 large)
1/4 cup oyster suace
1 Tasblsp all purpose flour
1 garlic clove, minced
3 Tablspns veggie oil divided
1 head bib lettuce leaves separated
Thinly sliced scallions

Steps:

  • Combine 2 Tbsps fish sauce , lime juice, sugar, half of the chili and seeds and 2 tbsps water in shallow bowl. Whisk to blend set dipping sauce aside. Combine remaining 2 Tbsps fish sauce remaining chili and seeds, chicken, shallots, oyster sauce, flour and garlic in a medium bowl, mix until all ingredients are evenly incorporated. Using damp hands ( to prevent the chicken mixture from sticking to you hands while forming the patties ) shape chicken sausage mixture in to eight 3 " diameter patties. Place patties on a plate Cover and chill for 30 mins to allow flavors to meld. Heat 1 1/2 Tbsp oil in a med heavy skillet over medium heat. Add 4 chicken sausage patties and cook until browned and cooked through 3-4 mins per side Repeat with remaining 1 1/2 Tbsps oil and 4 patties Wrap each patty in a lettuce leaf Garnish with sliced scallions if using. Serve wraps with dipping sauce
