1 roll (16 oz) maple-flavored bulk pork breakfast sausage
1 round uncut loaf (16 oz) Hawaiian bread, cut into 8 slices
8 eggs
2 cups half-and-half
1 cup milk
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon vanilla
1/3 cup powdered sugar
Real maple or maple-flavored syrup, if desired

Steps:

  • In 10-inch nonstick skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, arrange 4 of the bread slices, cutting as needed to fit dish. Spoon sausage over bread. Top with remaining 4 bread slices.
  • In large bowl, beat eggs, half-and-half, milk, granulated sugar, cinnamon, salt and vanilla with whisk until well blended. Pour evenly over bread. Cover; refrigerate 8 hours or overnight.
  • Heat oven to 350°F. Uncover baking dish. Bake 40 minutes or until golden brown and set. Sprinkle with powdered sugar. Serve with syrup.

FRENCH TOAST
1 lb loaf of challah or french bread, cubed
8 oz cream cheese, softened
1/3 c brown sugar, packed
1 1/2 tsp cinnamon
6 eggs, slightly beaten
2 c whole milk
1 tsp pure vanilla extract
1/2 c seedless raisins
5 oz dried apples, diced
1 granny smith apple, peeled and chopped
1 lb breakfast sausage, cooked and crumbled
CINNAMON SYRUP
1 c brown sugar, packed
3/4 tsp cinnamon
1/8 tsp salt
1 c water
1 Tbsp corn starch
1 tsp pure vanilla extract
2 Tbsp unsalted butter

Steps:

  • 1. Spread cubed bread in a single layer on 2 sheet pans and bake in a 325 degree oven for about 15 minutes. Cool slightly then transfer bread into a greased 9 by 13 inch baking pan.
  • 2. In a large bowl, mix cream cheese, brown sugar and cinnamon. Add eggs, milk, and vanilla.
  • 3. Sprinkle the raisins, dried apples, chopped apple and the sausage over the bread. Now pour the egg mixture over the bread. With a spoon, gently push the bread down until it is soaked.
  • 4. You can bake it now or cover with foil and refrigerate overnight to bake in the morning.
  • 5. If you are baking it in the morning leave the casserole at room temperature while the oven preheats. Bake uncovered at 350 degrees F, for 35 - 45 minutes just until the center is set.
  • 6. While the french toast is baking, prepare the cinnamon syrup. Combine the brown sugar, cinnamon, and salt in a small saucepan. Combine the water and corn starch in a measuring cup then pour into the pan.
  • 7. Cook over medium heat and bring to a rolling boil, stirring often. Remove from heat and add the vanilla extract and butter. It will be the consistency of syrup.
  • 8. When the french toast is out of the oven drizzle some syrup over it and serve the rest on the side. By now everyone has smelled it cooking and they will be ready to eat! Serve hot.

  • 1. In a large saucepan heat the olive oil over medium heat. Add the onions and cook, until soft, for about 3-4 min. Add the garlic, celery and fennel and cook for another 3-4 minutes. Add the sausage meat and cook for another 5 minutes, until the meat is nicely browned. 2. Add the wine (both dry and sweet) and bring to boil. Add the tarragon. 3. Add the clams, cover with a lid and cook, shaking the saucepan from time to time, until the clams are open, for about 6 minutes. 4. Add the heavy cream, gently shake the saucepan to mix, and simmer over low heat uncovered, for another 2-3 minutes. 5. Spoon the clams into bowls or soup plates. 1 1/2 teaspoons granulated garlic, half a palmful

2 tablespoons extra-virgin olive oil
8 slices thick cut good quality white bread
2 tablespoons butter
2 cups halved or sliced strawberries
1/2 cup thinly sliced or torn fresh basil leaves
1 teaspoon sugar
Good quality honey of your favorite variety, for liberal drizzling

Steps:

  • Preheat the griddle to medium.
  • Whisk together the eggs, milk or cream, the cheese, the nutmeg and salt and pepper, to taste, in a shallow dish.
  • In a medium bowl add the pork, sage, onion, garlic, fennel, cloves, lots of black pepper and salt, to taste, and mix to combine. Divide the mixture into 4 pieces and form each piece into 2 small patties, about 2 1/2-inches wide. Heat the extra-virgin olive oil in large skillet over medium heat. Add the patties and cook 3 to 4 minutes on each side. Turn off the heat and keep warm in the pan.
  • Wipe the hot griddle with butter nested in a paper towel. Soak the bread, a few slices at a time, in the milk mixture, shaking off the excess. Add the bread to the griddle and cook until toasted, crispy and golden, about 3 minutes on each side. Cook in batches, if necessary.
  • While the bread toasts, combine the strawberries, basil and sugar in a medium bowl.
  • Halve the toast from corner to corner. Serve the toast on individual plates layered with sausage patties, a liberal drizzle of honey and the berries with basil.

1 c sour cream
1/2 c mayonnaise
1/4 c grated parmesan cheese
1 tsp garlic powder
1 Tbsp worcestershire sauce
1 pkg toast squares (melba or rye works well)

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large skillet over medium heat, brown and crumble sausage until no longer pink. Remove from heat and drain off drippings. Add green onions, sour cream, mayonnaise, cheese, and garlic powder; mix well.
  • 3. Top toast squares with about 1 heaping tablespoon of the sausage mix. Bake for 20 minutes until bubbly. Garnish with additional sliced green onions if desired.
  • 4. NOTE: To make this ahead of time, top toast squares as directed then place in the freezer. When ready to bake, remove the squares from the freezer and bake for 25-30 minutes or until the topping has browned slightly and becomes bubbly.

8 slices very dry cinnamon-raisin bread
1/2 lb sweet pork sausage, browned and drained (use maple flavored or brown sugar or apple cinnamon flavored)
6 eggs, beaten
1 (11 ounce) can evaporated milk
1 teaspoon cinnamon
1/4 teaspoon ginger
1/2 cup butter
1 cup firmly packed brown sugar
5 -6 firm bananas

Steps:

  • Grease 8x8 square baking dish.
  • Fit 4 bread slices into the bottom of the pan.
  • Crumble sausage over the bread in the pan.
  • Top with remaining 4 slices bread.
  • Beat eggs together then add the milk, cinnamon and ginger.
  • Pour over the bread in the pan, covering completely.
  • Cover tightly and refrigerate at least 8 hours or up to 24 hours.
  • Remove from refrigerator 1 hour before baking.

  • Reduce heat to low and slice bananas about 1/4 inch thick into the skillet.
  • Continue to cook and stir occasionally until bananas are reducing in size and are becoming caramelized.
  • Keep sauce warm.
  • Remove casserole from oven and let set for 5 minutes.
  • Cut into squares and top with warm banana sauce ladled over the top.

4 pieces Eggs
1/2 cup Low Fat Milk
1 teaspoon Vanilla Extract

Steps:

  • Crush Mom's Best Toasted Cinnamon Squares Cereal in food processor or blender. Mix cereal with cinnamon in shallow plate or bowl; set aside.
  • Slice the crusts off of the bread. Flatten the bread slices with a rolling pin.
  • Place a sausage link on one edge of the bread and roll up tightly. Repeat.
  • Mix eggs, milk and vanilla in a shallow container.
  • Pour 1 tablespoon oil into 12-inch nonstick pan and heat over medium heat.
  • Dip rolls into egg mixture, rolling gently to coat all sides, then dip into cinnamon-cereal mixture; place in heated pan.
  • Cook about 1 minute per side, turning quickly and carefully until golden brown on all sides. Continue to use oil as needed, while browning roll ups. Serve warm and enjoy!

Our family loves sausage in most any manner. I try to keep a batch of these in the freezer. The grandkids love them.

1 lb hot sausage
1 lb lean ground beef
1 lb Velveeta cheese
1 medium onion, finely chopped
1/2 teaspoon Worcestershire sauce
1 tablespoon oregano
1/2 teaspoon garlic powder
2 loaves miniature party rye rounds

Steps:

  • Cook sausage, ground beef and onion in large pan until brown, adding Worcestershire, oregano and garlic powder.
  • Reduce heat and blend in cheese. Mix thoroughly.
  • Spread on slices of rye bread.
  • Place on a baking sheet with wax paper between layers and freeze.
  • When frozen, put in a ziploc bag and store in freezer until ready to use.
  • Bake at 325 for 15 - 20 minutes.

1 (9.6 ounce) box pre-cooked maple flavored pork sausage links
2 ¾ cups all-purpose flour*
1 (.25 ounce) envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
1 teaspoon salt
1 cup very warm milk (120 to 130 degrees F)
1 tablespoon Mazola® Corn Oil
1 egg
1 teaspoon Spice Islands® Pure Vanilla Extract
2 tablespoons sugar
½ teaspoon Spice Islands® Ground Saigon Cinnamon
2 tablespoons butter OR margarine, melted
Pancake syrup

Steps:

  • Reheat sausage according to package directions (this will remove any excess moisture). Cool on paper towels for 5 minutes; pat dry. Slice into very thin slices and set aside.
  • Combine 1-1/2 cups flour, undissolved yeast, sugar and salt in large mixer bowl. Add milk, oil, egg and vanilla; beat 2 minutes on medium speed. Gradually add remaining 1-1/4 cups flour to make a stiff yet sticky dough. Stir in sausage. Cover bowl and let rest 10 minutes.
  • Portion dough into 12 (2-1/2 inch) generously greased muffin cups using a scoop or two spoons (do not use paper liners). Cover and let rise 35 to 45 minutes. Dough will rise, but not double in size. Combine sugar and cinnamon for topping in a small bowl; set aside.
  • Bake in preheated 375 degrees F oven for 20 to 25 minutes until well browned. Let cool on wire rack for 2 minutes. Brush with butter and sprinkle with cinnamon sugar mixture. Run a knife around each roll to remove from pan. Serve warm with pancake syrup, if desired. Refrigerate any leftovers.

1 package (10 oz) frozen uncooked pork sausage patties (6 patties), thawed
2 eggs
1/2 cup milk
1 tablespoon Dijon mustard
6 English muffins, split
12 slices provolone cheese
6 slices Canadian bacon (3 oz)

Steps:

  • Heat panini pan over medium heat or heat contact grill 5 minutes. Press sausage patties into thinner patties, about 3 to 4 inches in diameter. Cook sausage in panini pan 2 to 3 minutes on each side, or cook in contact grill 2 to 3 minutes, or until thoroughly cooked. Wipe surface of pan or grill. Spray weighted top of panini pan with cooking spray.
  • In small bowl, beat eggs, milk and mustard with wire whisk. Dip muffin halves in egg mixture, soaking well. Place 1 cheese slice and 1 sausage patty on each of 6 muffin halves; top with bacon and second slice of cheese. Cover with remaining muffin halves.
  • Place 3 sandwiches on panini pan; place weighted top over muffins. Cook 2 minutes or until browned. Turn; cook 2 minutes longer or until browned and hot in center. Repeat with remaining sandwiches. Or cook sandwiches in contact grill 2 to 3 minutes.

DOUBLE SAUSAGE & BEAN CASSEROLE WITH CHEESE-ON-TOAST CRUMBS



Double sausage & bean casserole with cheese-on-toast crumbs image

Combine several favourites in this sausage one-pot. This hearty casserole has a wonderful smokiness from the chorizo and reheats well for busy nights or leftover lunches

3 tbsp olive oil
8 pork sausages
2 small cooking chorizo (about 100g), sliced
1 large onion, finely chopped
2 bay leaves
1 tbsp tomato purée
½ tsp light brown muscovado sugar
1 tbsp red wine vinegar
400g can chopped tomatoes
2 x 400g cans cannellini beans or any other white beans, drained but not rinsed
50g crustless white bread, torn into chunks
15g parmesan, finely grated
2 tbsp thyme leaves

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp olive oil in a shallow flameproof casserole over a medium heat and fry the pork sausages for 10 mins until browned on all sides. Transfer to a plate. Drizzle another 1 tbsp oil into the casserole, scatter in the chorizo and cook for 3-4 mins until beginning to crisp and release its oil. Add the onion and bay, and cook for 5 mins more until the onion is soft.
  • Stir in the tomato purée and scatter over the sugar. Turn up the heat to medium-high and cook for another 2 mins until sticky and jammy, then splash in the vinegar. Simmer for 1 min more, then tip in the tomatoes and beans. Stir, then bring to a simmer. Nestle the sausages in the sauce and pour over any of the resting juices. Bake uncovered for 30 mins.
  • Meanwhile, make the crumbs. Tip the bread and parmesan into a food processor and pulse with half the thyme to a chunky texture. Scatter the crumbs over a baking sheet and drizzle with the remaining oil. Bake alongside the casserole for 10 mins, stirring the crumbs once or twice until crisp and golden. Scatter the crumbs over the casserole with the rest of the thyme just before serving, or serve on the side for everyone to help themselves.
