Steps:
- Heat pan and add onion, smoked sausage, and potatoes. Season with the seasoned salt lightly (because the smoked sausage is salty enough), and add the paprika. Cook and stir over medium heat until potatoes are cooked about halfway through.
- Next add the chopped cabbage and 1 cup of chicken broth. Cook, stirring occasionally until cabbage is crisp-tender and most of the liquid evaporates.

Steps:
- Place the potatoes in a bowl; toss with the salt and pepper until the potatoes are well coated. Heat the oil in a heavy oven-safe skillet and drop in the potatoes carefully, a few at a time.
- Flip potatoes several times with tongs during cooking to ensure even browning.
- About halfway through cooking, add the onion and mix while cooking. When they're done, the potatoes should be crispy. Sprinkle on the rosemary leaves. Spoon out unwanted oil, if you wish.
- While potatoes are cooking, in a nonstick pan, saute the Italian sausage over medium-high heat for a few minutes, or until it is no longer pink.
- Add the sausage to the potatoes and onion. Mix it very well and break eggs (sunny side up) into the pan; add few dashes of salt to season eggs. Try to go in between the potatoes, allowing the egg whites to go all around and under potatoes and sausage; try not to break egg yolks. Once the egg whites are getting almost cooked, turn on the broiler to high, and set a baking rack in the middle of the oven.
- Place the pan under the broiler and let it cook for a minute or two, just so the egg whites are completely cooked; the yolks may be still a little runny/soft. If you do not like runny/soft eggs just let them cook under broiler longer. Sprinkle chopped chives or scallions on at the end and dig in!

SAUSAGE ASPARAGUS AND POTATO SKILLET
We just tried this tonight and it was delicious! Try it as it is or add bell peppers and herbs for extra seasoning. We put vegan mozzerella cheese on top, which melts quickly and becomes like a smooth sauce. The asparagus blends nicely into the other flavors. This is best in the spring when the vegetable is in season.

- Add mushrooms, green pepper, red pepper and sauté with the onions.
- Season the egg mix with hot sauce, replace half-and-half with yogurt.
- Cheese selections, I prefer a small amount of provolone and Parmesan mixed in the eggs with none on top--the wife likes cheddar on top and mixed inches.

Steps:
- In a large deep skillet, heat the oil; add sausage and cook until lightly browned and fat is rendered. Remove sausage and drain on paper towels. Using paper towels, wipe most of the fat out of the skillet; add onion and saute until crisp tender. Add the sausage back to the skillet with the onions; sprinkle with the creole seasoning and garlic salt. Add the drained tomatoes and cook over medium-high heat until liquid is reduced. Add the green beans & potatoes and cook until all the liquid cooks out, stirring only occasionally. (I used a egg turner to flip the mixture over periodically). Serve hot with cornbread and another side if desired. ((NOTE: If desired, after the dish is completely done, top with shredded Monterey Jack cheese and cover skillet until it melts. Serve with or over rice.))

POTATO/GREEN BEAN/MUSHROOM SAUSAGE SKILLET
For some reason, this dish always reminds me of home (and my mom didn't even make it growing up....go figure). I usually have the ingredients on hand and it is a hearty dinner that goes together in a flash. This is usually my go to meal after a long day at the office. There really aren't measurements, so feel free to add/subtract as you like. I prefer a simple sprinkling of Greek Seasoning, but you may prefer to cater to your family's tastes.
