ORECCHIETTE PASTA WITH BROCCOLI RABE, SAUSAGE, AND PECORINO CHEESE
The combination of sausage, broccoli rabe, and Italian Pecorino cheese from lamb's milk is incredible.

Steps:
- Bring 4 to 6 quarts of water to a boil in a large pot.
- Cut 1 to 1 1/2 inches off of the bottom of the broccoli rabe stalks; cut into 1 1/2-inch sections.
- Place trimmed broccoli rabe and orecchiette into the boiling water and boil until pasta is tender, 12 to 14 minutes.
- Meanwhile, heat 3 tablespoons oil in a large pan over medium heat. Add sausage and cook for 6 minutes; stir in garlic and cook until sausage is browned and crumbly, 2 to 3 minutes more.
- Heat a medium-sized pan over medium heat. Add enough oil to coat the bottom of the pan. Stir in bread crumbs. Cook until browned and crunchy, about 5 minutes.
- Drain the pasta pot. Add drained broccoli rabe and orecchiette to the sausage. Add red pepper flakes and 1/2 of the bread crumbs and stir well.
- Transfer 1/2 the pasta mixture to a large bowl. Stir in 1/2 the Pecorino cheese. Add remaining pasta mixture to the bowl and top with remaining cheese; mix well. Top with remaining bread crumbs.

- Cook pasta according to package directions. Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Bring to a boil; cook 1-2 minutes or until liquid is reduced by half., Stir in broccoli and tomatoes. Reduce heat; simmer, covered, 4-6 minutes or until broccoli is crisp-tender. Drain pasta; add to skillet and toss to coat. Serve with cheese.

CREAMY ORECCHIETTE PASTA WITH ITALIAN SAUSAGE AND BROCCOLINI
Little ear pasta, also known as orecchiette, in a creamy sauce with Italian sausage and broccolini. Serve with a salad and garlic bread for a hearty Puglia-style supper. Serve with salad, bread, and your favorite Italian red wine.

- Bring a large pot of salted water to a boil. Add 1 tablespoon olive oil and orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside.
- Meanwhile, heat a large (10-inch) skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard most of the fat. Transfer cooked sausage to a bowl and return skillet to medium-high heat.
- Add bell pepper and green onion to the skillet. Saute until white of onion becomes translucent, about 5 minutes. Add broccolini and garlic; saute until broccolini is crisp-tender, about 3 minutes more. Set vegetables aside.
- Melt butter in a larger skillet over medium heat. Add half-and-half and Parmesan cheese, stirring constantly until bubbly, about 5 minutes. Add cream cheese, Italian seasoning, salt, and pepper. Cook until sauce begins to thicken, about 5 minutes more.
- Add cooked sausage and vegetables to the skillet. Stir in drained pasta. Serve immediately.

The sausage nests well with the pasta, the broccoli rabe blends well with the garlic and sausage flavors and the Feta tops it all off. Well balanced meal that sounds more difficult to make than it is.... Enjoy !!

- Bring a large Saute Pan up to medium heat. Place in the EVOO, once it starts to dance, place in the garlic and anchovies. Combine together, being careful not to burn the garlic, should only take a few minutes. Keep Stirring. Add in the loose Sausage and fennel, continue stirring till the sausage is browned. Turn to low and hold.
- While the Sausage is cooking, add the salt to a large pot of water and bring to a boil. Add in the Orecchiette, set the timer for 5 minutes. Prep the broccoli rabe to small 1.5"x1.5" cuts. When the timer is up for the Pasta, add in the broccoli rabe and cook for 5 additional minutes. When pasta & broccoli are cooked, pull a cup of the water and save (it might be used in the next step).
- Turn the Sausage mixture back up to a medium heat. Drain the Pasta and Broccoli, add it to the Saute Pan and stir in with the Sausage (add in the water a little at a time to keep mixture moist). Burn-off the liquid after a few minutes (while turning the mixture) and add and cut in the Feta.

- 1. Heat broiler. place peppers, skin side up, on foil lined baking sheet broil them on each side til char like (18-20min) when cooke place in bowl & cover w/ plastic wrap to keep steam inside for easy peeling,remove w/ paper towel & shred w/ fingers into strips,reserve juice from peppers do not discard.Set aside both peppers & juice.
- 2. In pot of boiling water salt & cook pasta according to box,drain & reserve 1/2cp pasta water.Meanwhile , heat skillet w/ olive oil over med. heat & cook sausage breaking it up into sm. pieces, brown 10min or so till all cooked, add roasted peppers & its juice, cook 7min more. Transfer sausage mixture to serving bowl; add pasta, butter,reserved pasta water & parm-regg cheese.Toss & enjoy
ORECCHIETTE PASTA WITH CHICKEN SAUSAGE AND BROCCOL

- Bring a large pot of salted water to a boil. Meanwhile heat a large nonstick skillet and brown the sausage over medium-high, breaking it up as it cooks with a wooden spoon until browned, 5 to 7 minutes; remove from heat. When the water boils, add the pasta and bring back to a boil, when the water is boiling, add broccoli and cook according to pasta instructions for al dente. When pasta is almost done cooking, reserve about 1 cup of the pasta water and set aside. Drain pasta and broccoli. Return the pot to the stove and set heat to high; add 1 tbsp olive oil, when hot, add garlic. Cook until golden, about 1 minute, reduce flame to low and add pasta back to the pot with the sausage. Mix well, add remaining olive oil, grated cheese, salt and pepper to taste mixing well and smashing any large pieces of broccoli to break up. Add 1/2 cup of reserved pasta water and mix well adding more if needed. Serve in pasta bowls with additional grated cheese on the side, if desired
