WILD RICE & SAUSAGE HOT DISH
A good cold weather dinner. You can sauté the vegetables to soften before adding to the pot if you like, but I've found that adding them to the rice while it is cooking softens them sufficiently. . For convenience, packaged matchstick-cut carrots work well for quick fine chopping. A 16-oz roll of turkey breakfast sausage can be substituted for the12-oz roll of pork sausage.

Steps:
- Cook rice according to package directions - the Minnesota hand-harvested type I use takes 35-45 minutes.
- While rice is cooking, chop vegetables and add to rice pot.
- Cook sausage in a skillet until browned; drain and set aside.
- Once rice is done, mix sausage into pot. Add soups; stir to combine well. Cook over medium heat, stirring occasionally, until hot.

- Crumble half of the beef into a 2-1/2-qt. microwave-safe dish. Layer with half of the potatoes, carrots and onion. Sprinkle with half of the thyme, salt and pepper. Repeat layers. Pour water over top. Cover and microwave at 70% power for 16 minutes. Meanwhile, in a skillet, cook sausage over medium heat until no longer pink; drain. Spoon over beef mixture. Microwave, uncovered, on high for 5-7 minutes. Sprinkle with cheese. Heat 30 seconds longer. Let stand for 5 minutes before serving.

SAUSAGE CHEESE BREAKFAST HOT DISH
First, I don't like Mushrooms, but I LOVE this!! Whenever I take this to a breakfast or brunch get together, it is gone within 15 minutes!!!! If I make this just for hubby and I, I cut it up into serving size squares and wrap in plastic wrap, then whenever we want one we just pop a square in the microwave for 2 ½ to 3 minutes (remove plastic wrap and put on microwave safe plate). Great for people on the run in the morning!

Steps:
- Brown the sausage and drain. (If using the Crumbles, you don't need to brown them). Pour into the bottom of a greased 13x9 pan. Sprinkle the cheese over the sausage.
- Beat the eggs. Add 2 ½ cups of the milk and mix well. Pour over the sausage and cheese mixture. Top with the croutons. Refrigerate overnight.
- Next morning, preheat oven to 300°. Mix together the cream of mushroom soup, mustard and the ½ cup of milk, and pour over the top of the casserole.
- Bake for 1 ½ hours at 300°.
- * Psssst - sometimes I cheat and use Jimmy Dean Sausage Crumbles if I decide I want to make this at the last minute (late the night before). I use 3 bags (9 oz each).

- PLACE CROUTONS IN A GREASED 8X10 INCH BAKING DISH. TOP WITH CHEESE. COOK SAUSAGE IN SKILLET TILL BROWN, DRAIN ON PAPER TOWELS. PLACE SAUSAGE OVER CHEESE.
- BEAT EGGS, MIX IN MUSTARD POWDER, MILK, MUSHROOM SOUP, AND PIECES TOGETHER. POUR OVER SAUSAGE.
