Scalloped Potatoes, Cabbage, and Smoked Sausage image

Great warm comfort food. I found the recipe on the internet and made some changes to make it even better. Easy and you can make it ahead of time and bake it later on.

Time 1h45m

Yield 6 serving(s)

Number Of Ingredients 10

1/3 cup margarine
1/2 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
2 1/4 cups milk
4 medium potatoes, sliced thin
1 medium sweet onion, sliced thin
2 cups cabbage, sliced about 1/2 inch thick
8 ounces kielbasa, sliced thinly or 8 ounces smoked sausage
1/2 cup shredded cheddar cheese

Steps:

  • In a saucepan or in the microwave, melt the margarine. Add the salt, pepper, and flour. Stir until smooth, then gradually add the milk with a wire whisk. The mixture doesn't have to get thick, it does that as it cooks in the oven, you're just mixing it all together uniformly at this point.
  • Add a layer of sliced potatoes to a thinly greased 13X9 pan. You can use the wrapper on the margarine or butter to lightly grease the pan if you like. It doesn't need much.
  • Then add 1/2 of the cabbage as the next layer, sprinkle with 1/2 of the onions, and then add 1/2 of the smoked sausage or kielbasa.
  • Then layer it all again, starting with potatoes, then cabbage, then onions, then smoked sausage, and top it all off with the remaining potatoes.
  • Sprinkle the cheese on top. Stir up the sauce and pour it over the top of all uniformly.
  • Cover your pan with aluminum foil tightly and bake in a 350 degree oven for about 1 hour, until potatoes are tender. Then remove the foil and bake another 15 minutes at 400 to brown the top slightly or place under the broiler until lightly browned.

Fine sea salt
12 small new potatoes (about 1 1/2 inches in diameter)
2 tablespoons extra-virgin olive oil
1 1/3 to 1 1/2 pounds solid piece boneless pork shoulder (Boston butt)

SAUSAGE, CABBAGE AND POTATOES

Sausage, Cabbage and Potatoes image

This is my super easy go to dinner when I am running short on time but still want a hot meal to serve for dinner. It's a one pot wonder that I learned how to make by watching my dad as I grew up, it was something he made for us often.

Time 35m

Number Of Ingredients 4

2 lb red potatoes, small, quartered
1 head of green cabbage
1 pkg beef smoked sausage
salt and pepper to taste

Steps:

  • 1. Cover the bottom only of a medium or large size stock pot with water and add quartered red potatoes (do not peel potatoes) and begin cooking on med to med high heat. While the potatoes begin to cook, cut up the beef smoked sausage in bite size pieces and add to the cooking potatoes. Last, cut up the head of cabbage and add it to the pot. Cover and let simmer for about 15 to 20 mins or until potatoes and cabbage are tender. Salt and pepper to taste as this dish cooks. I personally use a generous amount of pepper in this dish as it makes it quite tasty. I also always use beef smoked sausage, it makes this dish taste the best.
  • 2. Note: There is no need to add oil to the pot while cooking as the beef sausage provides just enough oil/grease as it cooks.

CARAWAY CABBAGE WITH SAUSAGE AND POTATOES

Caraway Cabbage With Sausage and Potatoes image

This is so much better when made with cabbage and potatoes straight from the ground. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere. I'm sure it would work with any kind.
