SAUSAGE BALLS WITH TWO DIPPING SAUCES
Traditional, classic, and always a hit! These sausage balls are even better with a choice of dipping sauces.

Steps:
- Preheat the oven to 350 degrees.
- In a stand mixer fitted with a dough hook, mix the cheese and sausage briefly on slow speed. Add the biscuit mix a little at a time increasing the mixer speed as needed.
- Roll the mixture into 1" diameter balls and place on baking sheets. Cook for 15-18 minutes or until a light golden brown. Remove from the oven and cool on the pans.
- Note: the sausage balls may be mixed and rolled, placed on the baking sheets, and frozen. When frozen, remove and place in plastic freezer storage bags. If cooking from frozen, allow several more minutes of cooking time.
- To prepare the dipping sauces, mix each sauce's ingredients together in a small bowl. Stir until well blended.

KIELBASA WITH MUSTARD DIP
Steps:
- Slice the kielbasa crosswise 1/2 inch thick diagonally. Heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan, add the kielbasa, and cook over medium-high heat for 5 to 6 minutes, turning occasionally, until the kielbasa is nicely browned on both sides.
- Meanwhile, in a medium bowl, whisk together the mayonnaise, Dijon mustard, whole-grain mustard, horseradish, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve the kielbasa hot from the pan with small wooden skewers and a dish of the mustard sauce on the side for dipping.

Steps:
- Heat oven to 400ºF.
- Remove pizza dough from can. (Do not unroll dough.) Place dough on cutting board; cut crosswise in half. Unroll each half. Place 3 Singles down center of each dough piece; top diagonally with 1 sausage piece. Fold corners of dough over ends of each sausage piece, then fold 1 of the remaining corners of dough over sausage. Roll dough to completely enclose sausage; pinch seams together to seal. Spray lightly with cooking spray; roll in poppy seed until evenly coated.
- Place, seam sides down, on baking sheet sprayed with cooking spray.
- Bake 12 to 14 min. or until golden brown. Let stand 5 min. Meanwhile, mix remaining ingredients until blended.
- Cut each log into 14 slices. Serve with mayo mixture.

SAGE SAUSAGE BITES WITH BALSAMIC APRICOT DIP

- Preheat a small pot over medium heat and the oven to 425 degrees F.
- To the pot, add oil and onion. Saute the onion for 1 minute.
- In a mixing bowl, combine sweet sausage and chopped sage.
- Next, add balsamic vinegar to onion and reduce by half, 1 minute. Remove vinegar from heat and combine with apricot all-fruit spread or preserves and spicy mustard. Stir until mustard is fully incorporated. Dip will be glossy and brown in color.
- Add 2 tablespoonfuls of apricot dip to bulk sausage and mix. Form meat into bite size nuggets, coat in bread crumbs then place on nonstick cookie sheet. Recipe will make 20 to 24 pieces. Bake 15 to 17 minutes, until evenly browned, turning occasionally. Drain, then serve with party picks for dipping with remaining balsamic apricot mustard dip.

- Preheat oven to 400°F. Mix all ingredients until well combined. Roll into 1 inch balls. Bake for 20 to 25 minutes or until golden. You can make these ahead and refrigerate until needed or also freeze until ready to use, you will need to add a few minutes to the baking time. DIPPING SAUCE: Combine all ingredients. Chill until serving.
