SMOKY SAUSAGE & APPLE PIZZA

- In a small bowl, combine the all-purpose flour, 1/2 cup whole wheat flour, yeast, salt and sugar. Stir in the water, oil and honey; beat just until moistened. Stir in enough remaining whole wheat flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 30 minutes., Meanwhile, in a large skillet, saute the onion, 2 teaspoons vinegar, 1 teaspoon syrup, salt and cayenne in oil until onion is tender. Remove from the heat; stir in the sage, mustard and remaining vinegar and syrup., Grease a 12-in. pizza pan; sprinkle with cornmeal. Roll out dough to fit prepared pan; prick thoroughly with a fork. Bake at 450° for 5-8 minutes or until edges are lightly browned., Arrange the onion mixture, beet greens, apple, sausages and cheese over top. Bake 5-7 minutes longer or until crust is golden and cheese is melted.

Sage and apple meatless sausages with a hint of maple, veggie bacon, and convenient sliced peppers top this easy pizza.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Heat oil in a large non-stick skillet over medium-low heat. Add onion; cook, stirring often, for 7 minutes or until soft. Set aside.
- Place pizza crust on a baking sheet; spread with sauce. Top with veggie sausage, veggie bacon, peppers, cooked onion, Parmesan and mozzarella.
- Bake in the preheated oven for 8 to 10 minutes, until heated through and cheese is melted.

SAUSAGE & APPLE PIZZA
Steps:
- Toppings: 1) Preheat the oven to 425. 2) Apples-set the slices in a bowl or glass with a 1/2 c. of the cider and let rest for at least 20 minutes or up to one hour. Drain before putting on pizza, reserving liquid. 3) Sausage-in a pan over medium-high heat, combine the sausage and fennel. Cook, breaking apart frequently until the sausage is browned on it's edges. Using a slotted spoon, transfer the sausage to a paper towel lined plate. Reserve the cooking juices. 4) Onions- in a skillet over medium heat, melt the 1 Tbs. butter with the 1 Tbs. brown sugar. Stir to combine and then add onions. Cook until tender and slightly browned on the sides, 10 minutes or so. 5) Sauce- Combine reserved cider from apples, 1/2 c. heavy cream, tsp. cornstarch, garlic, 1 Tbs. liquid from sausage, and a 1/2 tsp each salt and pepper in a small saucepan. Simmer over medium heat for 10-15 minutes or until the mixture thickens. 6) Assembly! I like to do: sauce, apples, some cheese, onions and sausage, some more cheese. Bake on a sheet pan or pizza stone for 10-15 minutes. Take out of oven, top with arugula, and rest a few minutes before cutting.
CHICKEN APPLE SAUSAGE PIZZA
Steps:
- Preheat oven to 450 degrees F. Melt butter in large skillet. Add onions and cook slowly over low heat, stirring occasionally until soft and golden, about 40 minutes. Season with salt & pepper. Spread onion mixture evenly over the pizza crust.
- Arrange sausage slices over onions and sprinkle with cheese and walnuts.
- Bake for 10 minutes.
