Chicken-Apple Sausage Bites with Hot Sweet Mustard image

1 package frozen puff pastry, thawed
1 egg, well beaten
3 chicken apple sausages, cooked and cut into thirds
1 cup spicy Dijon mustard
1 cup spicy whole-grain mustard
1/2 cup honey

Steps:

  • Preheat oven to 400 degrees F.
  • Line 1 baking sheet with parchment paper and place 1 sheet of puff pastry on it.
  • Cut the sheet of pastry into 9 equal squares, each about 3 by 3-inches.
  • Brush each square with the egg and place 1 piece of sausage in the middle of each pastry square. Fold the corners of the pastry inward to come together in the middle. Pinch the corners together in the center. Cover with plastic wrap and chill until ready to bake.
  • When ready to bake remove the plastic wrap from the trays and brush the pastry with the remaining egg-wash. Bake until the pastry is golden brown, about 10 to 12 minutes.
  • Meanwhile in a small mixing bowl mix the mustards together with the honey until well combined. Serve the sausage bites hot from the oven with a bowl of Hot Sweet Mustard on the side.

4 ounces white country bread, cut into 1/2-inch cubes
¼ cup extra-virgin olive oil, divided
freshly ground black pepper to taste
kosher salt to taste
2 tablespoons unsalted butter
⅔ cup minced onion
⅔ cup minced celery
½ pound sweet Italian pork sausage, casings removed
6 cloves garlic, minced
¾ teaspoon dried sage
4 eggs, beaten
1 small Granny Smith apple - peeled, cored, and finely chopped
2 tablespoons chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 12-cup mini muffin tins with cooking spray.
  • Toss bread cubes with 2 tablespoons olive oil on a baking sheet; season with salt and pepper.
  • Bake bread cubes in the preheated oven until toasted, about 10 minutes. Transfer to a large bowl.
  • Melt butter and 2 tablespoons olive oil in a large skillet over medium-high heat. Add onion and celery; cook and stir until golden, about 5 minutes. Stir sausage, garlic, and sage into onion mixture and cook, breaking up the meat until no trace of pink remains, about 5 minutes.
  • Mix sausage mixture, eggs, apple, and chicken broth into bowl of toasted bread cubes. Season with salt and pepper. Let stand until flavors absorb, about 5 minutes.
  • Scoop stuffing mixture into muffin cups and bake in the preheated oven until golden, 20 to 25 minutes.
  • Transfer muffin tins to a rack to cool, about 5 minutes. Loosen the muffins with a sharp paring knife to lift them out.

6 cups cubed sourdough bread
1 tablespoon unsalted butter
8 ounces Hillshire Farm® Rope Smoked Sausage, cut in 1/4" cubes
1 ½ cups chopped Honeycrisp apple
1 cup chopped yellow onion
4 teaspoons minced garlic
2 tablespoons chopped fresh sage
1 ¼ cups unsalted chicken stock
3 tablespoons chopped fresh parsley
¾ teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon ground nutmeg
3 large eggs, lightly beaten

Steps:

  • Preheat oven to 425 degrees F. Coat a 24-cup mini-muffin pan with cooking spray.
  • Arrange bread on a baking sheet in a single layer. Bake until toasted and dry, about 10 minutes. Remove from oven and place in a large bowl. Reduce oven temperature to 350 degrees F.
  • Heat butter in a large skillet over medium-high until foamy, about 2 minutes. Add sausage; cook about 4 minutes, stirring occasionally, until lightly browned. Add apple, onion, garlic, and sage; cook 3 to 4 minutes, stirring occasionally, until apple and onion are slightly softened. Remove from heat and cool 5 minutes. Transfer to the bowl with bread.

Concocted this recipe this morning! Was SO GOOD and fun to eat!! Times are very scary right now with my hubby being laid-off, and just wanted to make us a special treat for breakfast. This put smiles back on our faces!! :D Photo by me.

1 lb. ground hot (or mild) italian sausage (such as johnsonville or jimmy dean would be ok, too)
1 egg
1 cup flour
1 cup milk
1 tsp. vanilla
2 tbl. vegetable oil
1 tbl. sugar
1 tbl. baking powder
1/2 tsp. salt

Steps:

  • 1. Cook sausage til done in frying pan, breaking up into small pieces as you go. Remove with slotted spoon to a papertowel-lined plate. Make batter. Batter: In medium bowl, whisk egg til frothy. Whisk in milk, vanilla and oil. In small bowl, whisk well the dry ingredients to mix. Dump the dry ingredients into the wet ingredients and stir all til just moistened but still a little lumpy. Fold in about 2/3 of the cooked sausage. Spray a mini muffin pan with vegetable oil spray. Fill each cup with sausage batter almost all the way to the tops. Sprinkle each with rest of crumbled cooked sausage. Bake in 350 degree oven til golden. Depending on your oven, 13-15 minutes. You'll be able to see the sides turning a light golden brown. Remove from pan with a spoon and serve with butter and warm maple syrup for dunking! Wah lah! :D Easy peasy and SOOOO Good!!! :D
  • 2. Variation: If you like an Apple~Sausage flavor, just add 1/2 cup chunky applesauce to the batter and decrease the milk to 3/4 cup.

Freshly ground pepper
2 tablespoons unsalted butter
2/3 cup finely chopped onion
2/3 cup finely chopped celery
1/2 pound sweet Italian sausage, casings removed
6 garlic cloves, finely chopped
3/4 teaspoon dried sage
1 small Granny Smith apple, peeled and finely chopped
4 large eggs, beaten
2 tablespoons chicken broth

Steps:

  • Preheat the oven to 350°. Grease two 12-cup mini-muffin pans with cooking spray. On a baking sheet, toss the bread with 2 tablespoons of the oil; season with salt and pepper. Bake for about 10 minutes, until toasted. Transfer the croutons to a bowl. Meanwhile, in a large skillet, melt the butter in the remaining 2 tablespoons of oil. Add the onion and celery and cook over moderately high heat, stirring occasionally, until golden, about 5 minutes. Add the sausage, garlic and sage and cook, stirring and breaking up the meat, until no trace of pink remains, 5 minutes. Mix the sausage, apple, eggs and broth into the croutons; season with salt and pepper. Let stand for 5 minutes. Pack the stuffing into the muffin cups and bake for 20 to 25 minutes, until golden. Transfer to a rack and let stand for 5 minutes. Loosen the muffins with a sharp paring knife and lift them out. Serve warm. Make Ahead The muffins can be refrigerated overnight in the pans. Rewarm before serving.

1 1/2 cups shredded sharp cheddar cheese
1/4 cup finely chopped celery
2 tablespoons grated onions
1/8 teaspoon garlic powder
2 medium apples, finely chopped (about 1/2 to 3/4 cup chopped finely)

Steps:

  • Combine all ingredients; knead until well blended.
  • Form into 1-inch balls and place on a baking sheet.
  • Bake in a preheated 350 degree oven for 15 to 20 minutes, or until browned; turn after 10 minutes.
