3/4 cup peach preserves
1/2 cup reduced-sodium soy sauce
3 tablespoons minced fresh gingerroot
3 tablespoons water
3 garlic cloves, minced
Dash hot pepper sauce, optional
4 medium sweet red peppers
1 medium eggplant
3 small zucchini
2 small yellow summer squash
12 hot Italian pork or turkey sausage links (4 ounces each)

Steps:

  • Place the first 5 ingredients in a blender; if desired, add pepper sauce. Cover and process until blended., Cut peppers lengthwise in half; remove seeds. Cut eggplant lengthwise into 1/2-in.-thick slices. Cut zucchini and yellow squash lengthwise into quarters. Place all vegetables in a large bowl; drizzle with 1/2 cup of the sauce and toss to coat., Place vegetables on a greased grill rack. Grill, covered, over medium heat 8-10 minutes or until tender and lightly charred, turning once. Cool slightly. Reduce grill temperature to medium-low heat., Cut vegetables into bite-sized pieces. Toss with additional 1/4 cup sauce; keep warm., Grill sausages, covered, over medium-low heat 15-20 minutes or until a thermometer reads 160° for pork sausages (165° for turkey sausages), turning occasionally. Remove sausages from grill; toss with remaining sauce. Serve with vegetables.

This is sauteed first in frypan then finished off to bake in the oven to melt the cheese, just make certain that you have a large enough frypan for this, and use the large Italian sausages for this and remove the meat from the casings.

4 -6 tablespoons oil
4 -5 Italian sausages, casings removed (or use as many sausages as desired)
2 cups eggplants, diced to about 1/2-inch
2 cups zucchini, cut into about 1-inch cubes
1 small green bell pepper, coarsley chopped (can use red in place or green or use both)
1 small onion, chopped
2 tablespoons fresh minced garlic
1 -2 teaspoon dried basil
1 teaspoon dried red pepper flakes (optional or to taste)
1 (28 ounce) can plum tomatoes, drained and chopped (or use diced tomatoed, drained)
2 tablespoons chopped fresh parsley
salt and black pepper (or can use cayenne pepper)
1/3 cup grated parmesan cheese (or to taste)
1 1/2 cups grated mozzarella cheese (or to taste)

Steps:

  • Heat oil in a large nonstick frypan or Dutch oven.
  • Add in the sausage meat and cook breaking up the meat with a spoon (this should take about 10-12 minutes)then remove the sausage to a bowl.
  • To the same skillet/pot add in the chopped eggplant, zucchini, bell pepper, onion, garlic, dried basil, chili flakes; saute for about 7-8 minutes or until just softened.
  • Add the cooked sausage meat back to the skillet or pot with the chopped drained tomatoes, parsley and black pepper (or cayenne if using) reduce heat and simmer for 15 minutes.
  • Add in 1/3 cup grated Parmesan cheese; mix to combine.
  • Set oven to 350 degrees and butter a 8 x 8-inch baking dish (or larger).
  • Transfer the mixture to the baking dish.
  • Sprinkle the top with about 1-1/2 cups grated mozzarella cheese.
  • Bake for 20-22 minutes or until the cheese melts and is bubbling.

RATATOUILLE WITH ITALIAN SAUSAGE

3 zucchini (about 1 1/2 pounds)
3 summer squash (about 1 1/2 pounds)
1 onion
1 red bell pepper
1 yellow bell pepper
1 large eggplant
2 pounds Italian sausage
3 (14-ounce) cans crushed tomatoes
1 teaspoon Italian seasoning
Salt and pepper

Steps:

  • Trim and discard the stems from the zucchini and summer squash and slice them into 1/4-inch-thick rounds.
  • Peel the onion and dice into 1/4- to 1/2-inch pieces. Cut the peppers in half, remove and discard the stems and seeds, and cut into 1/2-inch pieces. Remove and discard the stem from the eggplant and cut into 3/4-inch chunks.
  • Cut the Italian sausage into 1/4- to 3/8-inch-thick slices and place in a large stock pot. Cook over medium-high heat, stirring occasionally, for 5 minutes, or until browned. Add the zucchini, squash, onion, and peppers and cook, stirring occasionally, for 20 minutes, or until the vegetables start to soften. Add the eggplant and cook for 10 minutes, or until the vegetables are almost tender. Stir in the tomatoes and Italian seasoning, season with salt and pepper, and cook for 10 minutes, or until all of the vegetables are cooked through. Serve warm.
  • Food Trivia
  • Everyone has their own version of how to cut an onion without crying. I'm not convinced that any of them work, but the most popular versions seem to be: 1) freeze the onions for half an hour before chopping; 2) peel them under running water; 3) don't slice the onion root, which releases the strongest fumes; 4) breathe through your nose while chopping. And we can't forget to include holding a piece of bread in your mouth as you chop, although I suggest you try this one when no one else is around.

2 bunches broccolini (about 1 pound), trimmed, halved lengthwise
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons unsalted butter, cubed
Crusty bread (for serving; optional)

Steps:

  • Heat oil in a large skillet over medium-high. Add sausage and cook, stirring occasionally, until lightly browned, about 2 minutes. Add tomatoes, garlic, and thyme, stir to combine, and cook, pressing down on some of the tomatoes with the back of a wooden spoon to encourage bursting, 2 minutes. Add broccolini; season with salt and pepper. Cook, covered, 2 minutes. Remove from heat and stir in butter until melted.

Vietnamese-Style Beef Sausage and Vegetable Spring Rolls with Mint Dipping Sauce image

Sausage
1/2 pound ground beef
1 teaspoon finely chopped fresh cilantro
1 teaspoon finely chopped fresh mint
1 teaspoon finely chopped scallion
1/4 teaspoon chile flakes
1 tablespoon Thai fish sauce
1 teaspoon fresh lime juice
Dipping Sauce
1/4 cup finely shredded fresh mint leaves
1 teaspoon finely chopped small green chile
1 small clove garlic, finely chopped
1 teaspoon sugar
1 tablespoon Thai fish sauce
3 tablespoons fresh lime juice
2 tablespoons water
Peanut or canola oil, for sautéing the sausage
6 dried rice paper wrappers, about 8 1/2 inches in diameter
6 large red- or green-leaf lettuce leaves
Handful of bean sprouts
1 carrot, peeled and coarsely grated
1/2 cup coarsely grated daikon
2 scallions, white and light green parts, thinly slivered lengthwise

Steps:

  • To make the sausage, place all the ingredients in a medium bowl, and knead with your hands until thoroughly blended. Use right away, or cover and refrigerate for up to overnight.
  • To make the sauce, combine all the ingredients in a small bowl and stir to mix. Set aside.
  • To cook the sausage, film the bottom of a medium sauté pan with oil and place over medium-high heat. Add the sausage and sauté, stirring to break it into small clumps, until browned, 5 to 6 minutes. Remove from the heat and set aside.
  • To make the spring rolls, lay 1 or 2 of the rice paper wrappers on a counter and spray or brush them generously with water without saturating them. Let hydrate and soften until pliable, 1 to 2 minutes. Place a lettuce leaf in the center of each wrapper, top with about 1/4 cup of the sausage, then with some bean sprouts, carrot, daikon, and scallion. Roll up the wrapper burrito-style, first folding the edge nearest you one-third of the way over the ingredients, then tucking in the sides, and finally folding the rest of the way to make a fat cylinder. Set on a platter and cover with plastic wrap to prevent drying out while you continue to fill the remaining rice paper wrappers. Serve right away, or leave at room temperature for up to 4 hours before serving.
  • To serve, remove the plastic wrap and accompany with the dipping sauce.

LINGUINE WITH SUMMER PEPPERS AND SAUSAGE

1/2 pound hot or sweet Italian sausages, casings removed
2 large bell peppers (red and green or yellow), cut into strips
1 medium onion, thinly sliced
1 large garlic clove, chopped
1 cup dry white wine
1/2 pound linguine
1/4 cup grated Parmesan cheese
Additional grated Parmesan cheese

Steps:

  • Sauté sausages in heavy large skillet over medium-high heat until light brown, breaking up clumps with back of spoon, about 5 minutes. Add bell peppers, onion and garlic and sauté until tender and golden brown, about 12 minutes. Add wine; simmer until liquid is slightly reduced, about 6 minutes.
  • Meanwhile, cook linguine in large pot of boiling salted water until just tender but still firm to bite. Drain pasta.
  • Add pasta to skillet; toss to combine.
  • Add 1/4 cup Parmesan; toss to blend. Season with salt and pepper. Serve pasta, passing additional cheese separately.

SUMMER VEGETABLE SAUTE

WASHINGTON STATE CORN appears in markets in July and doesn't stop until September. Fresh, sweet corn is truly the taste of summer and takes only a few minutes to prepare. Vegetables are so plentiful in the summertime we always end up with bins of beans and corn, and after weeks of eating corn on the cob I came up with this simple way to celebrate the summer bounty.

Yield serves 4 as a side dish

Number Of Ingredients 7

1 tablespoon unsalted butter
1/2 medium yellow onion, diced
2 ears fresh yellow corn, kernels removed (about 1 1/3 cups corn)
8 ounces green beans, cut into 3/4-inch pieces
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder

Steps:

  • In a medium skillet over medium heat, melt the butter. Add the onion and sauté for 4 minutes, stirring occasionally, until browned. Stir in the corn and cook for 2 minutes. Add the beans, salt, pepper, and garlic powder. Cook for 3 minutes, stirring occasionally, and remove from the heat.
  • Add 1 tablespoon water to the skillet and cover. Let the vegetables sit, covered, off the heat for 5 to 10 minutes before serving.

RIGATONI WITH SAUSAGE, ARTICHOKES, AND ASPARAGUS

3/4 cup drained oil-packed sun-dried tomatoes, sliced, 2 tablespoons of oil reserved
1 pound hot Italian sausage, casings removed
2 (8-ounce) packages frozen artichoke hearts
1 cup asparagus, trimmed and cut in 1-inch pieces
2 large garlic cloves, chopped
1 3/4 cups chicken broth
1/2 cup dry white wine
12 ounces rigatoni or other tubular pasta
1/2 cup shredded Parmesan cheese, plus more for serving
1/3 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
8 ounces fresh mozzarella, cubed (optional)
Salt and freshly ground black pepper

Steps:

  • Heat the oil reserved from the tomatoes in a large, heavy frying pan over medium-high heat. Add the sausage and cook until browned, breaking up the meat into bite-size pieces with a fork, about 8 minutes. Use a slotted spoon to transfer the sausage to a bowl. Add the artichokes, asparagus, and garlic to the same skillet, and sauté over medium heat until the garlic is tender, about 2 minutes. Add the broth, wine, and sun-dried tomatoes. Boil over medium-high heat until the sauce reduces slightly, stirring occasionally, about 8 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta in boiling water until tender but still firm to the bite, stirring often, about 10 minutes. Drain the pasta.
  • Add the pasta, sausage, 1/2 cup of the Parmesan cheese, the basil, and parsley to the artichoke mixture. Toss until the sauce is almost absorbed by the pasta. Stir in the mozzarella, if using. Season to taste with salt and pepper. Serve, passing the additional Parmesan cheese alongside.

1 10- to 12-inch round French bread or sheepherder's bread
3 tablespoons olive oil
1/2 pound spicy Italian turkey sausages, casings removed
1 onion, chopped
2 zucchini, trimmed, diced
1 green bell pepper, diced
1 large tomato, seeded, diced
3 garlic cloves, chopped
1/4 cup chopped fresh basil
10 large eggs
1/3 cup grated Parmesan cheese

Steps:

  • Cut bread horizontally in half. Cut out soft insides, leaving 1/2-inch-thick shells. Brush inside of bread shells with 1 tablespoon olive oil.
  • Crumble sausage into large non-stick broilerproof skillet. Sauté over medium heat until brown, about 5 minutes. Transfer sausage to bowl. Add onion, zucchini, bell pepper, tomato and garlic to skillet and sauté until vegetables are tender and liquid evaporates, about 9 minutes. Mix in basil. Cool briefly.
  • Preheat broiler. Beat eggs in large bowl to blend. Season with salt and pepper. Mix in sausage, then vegetable mixture. Heat remaining 2 tablespoons oil in same skillet over medium heat. Pour in egg mixture. Cover and cook until almost set, occasionally lifting edges to allow uncooked eggs to flow underneath, about 7 minutes.
  • Sprinkle top of frittata with Parmesan. Broil until eggs are set in center and golden brown, about 3 minutes. Run spatula around edge of skillet to loosen frittata and slide into bottom shell of bread over, pressing to fit. Press top half of bread over. Cut into wedges and serve or wrap in foil and serve within 1 hour.

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add sausages, potatoes, onions, bell peppers and chili and sauté until vegetables begin to soften, about 10 minutes. Add tomatoes and 1/2 cup water and bring to boil. Reduce heat to medium, cover skillet and simmer until vegetables are tender and sausage is cooked through, about 15 minutes. Uncover skillet; simmer until sauce is thick, about 8 minutes. One at a time, crack eggshells and drop eggs onto sausage mixture, spacing evenly. Cover and cook until egg whites are set and yolks still feel soft to touch, about 4 minutes. Serve immediately.
