Great-Grandma Maida Dixon made this salad for family gatherings. I think of her every time I make. It's sooo good. It needs to be placed in the refrigerator to allow the flavors to meld. It really is worth the wait.

1 quart sauerkraut, drained
1 onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 large carrots, chopped
1 (4 ounce) jar diced pimento peppers, drained
1 teaspoon mustard seed
1 ½ cups white sugar
1 cup vegetable oil
½ cup cider vinegar

Steps:

  • In a large bowl, mix together sauerkraut, onion, celery, green bell pepper, carrot, pimientos, and mustard seed. Set aside this mixture.
  • In a small saucepan, mix together sugar, oil, and vinegar. Bring to a boil. Remove from heat.
  • Pour sugar mixture over salad, cover, and leave it in the refregerator for 2 days before serving.

1 can (16 ounces) sauerkraut, rinsed and well drained
1 cup grated carrots
1 cup chopped celery
1 cup chopped green pepper
1 cup chopped onion
1 jar (4 ounces) diced pimientos, drained
3/4 cup sugar
1/2 cup canola oil

Steps:

  • In a large bowl, mix sauerkraut, carrots, celery, green pepper, onion and pimientos. In a jar or small bowl, combine sugar and oil. Pour over vegetables and mix well. Cover and refrigerate for at least 8 hours.

Besides the hot dogs, hamburgers and Uncle Bob's steamed clams, my aunt always had something new for us to try-like this unusual salad. Like my aunt, you may have to coax others to try it at first...but you'll have a hard time keeping them from taking a second helping.

  • Place sauerkraut in a colander and squeeze out all excess liquid using your hands; chop well.

1 1/2 c granulated sugar,more or less to taste
1/4 c apple cider vinegar,more or less to taste
1/4 c water,optional
1/4 c vegetable oil
salt and pepper to taste
32 oz bag,sauerkraut, rinsed and well drained
1 large green bell pepper, chopped fine
1 small onion, chopped fine
3 medium carrots, shredded
1 tsp celery seed or poppy seed
1 tsp caraway seed, optional
1/4 c pimiento,chopped

Steps:

  • 1. Combine sugar, vinegar,and salt and pepper in a small saucepan. Heat on medium and bring just to a boil. Remove from heat and stir until sugar has dissolved. Add water and oil, mix to combine. Set aside to cool while preparing vegetables.
  • 2. Prepare and combine all vegetable in a large bowl, pour cooled vinegar mixture over vegetables, stir to coat all the ingredients. cover and place in refrigerator overnight.

Mom and Dad lived in Cleveland Ohio for a while when many Polish people were immigrating to the U.S. and settling there. Mom got to know some of the ladies and they exchanged recipes. I don't know that she got this...

2 c sauerkraut (any kind)
1/2 c sugar
1/2 c celery, sliced thin
1/2 c green pepper, sliced thin
1/2 c shredded carrot
1/4 c chopped onion

Steps:

  • 1. Open the can or bag of sauerkraut, put it in a sieve and drain the juice, then run a knife through the cabbage to cut it a little smaller. (save the juice)
  • 2. Add the juice back to the now cut up kraut and stir in the sugar. Let it stand for 30 minutes.
  • 3. Add all the other ingredients mixing well.
  • 4. Cover the bowl tightly and let it stand on the counter top for 12 hours (over night).
  • 5. Serve as a delicious and out-of-the-ordinary side dish.

1 c celery, chopped
1 small carrot, shredded
1 large jalapeno pepper, seeded and chopped fine
3 Tbsp capers
1 bunch green onions, chopped
1/4 c white wine vinegar
1/4 c vegetable oil
3/4 c sugar
1 tsp ground black pepper
salt to taste

Steps:

  • 1. Rinse Sauerkraut and let drain. I used homemade Sauerkraut but canned, bagged or jarred will work.
  • 2. In a large bowl mix Sauerkraut and all veggies, combine well. Add salt to taste. It shouldn't need much.
  • 3. In a small bowl mix vinegar, sugar, oil and pepper. Stir until sugar is mostly dissolved. Pour dressing over vegetable mixture and combine well.
  • 4. Refrigerate up to one hour or overnight. Serve cold as a side with your favorite meal and enjoy!
