SAUERBRATEN HAMBURGERS
My mother made this frequently when I was growing up. It will never replace real sauerbraten but it sure is a tasty mid-week dinner. We had it with noodles or spaetzle and red cabbage.

Steps:
- 1. Combine first 6 ingredients. Mix lightly and shape into 10 patties. Brown on both sides in a hot, greased skillet. Add 1-1 1/2 cups water and the remaining ingredients. Bring to a boil, cover and simmer for 1 hour. Garnish with gingersnaps crumbs.
ALTON BROWN'S SAUERBRATEN
I found this on the Food network website, and I served this Saturday night and got a resounding "Wow!" The meat was so tender that it fell apart when I tried to transport it from the pot to the serving platter. Both gravy and the sauerbraten got applause. We served it with mashed sweet potatoes, green bean casserole, and Sister Schubert rolls. Yum!

Steps:
- In a large saucepan over high heat combine the water, cider vinegar, red wine vinegar, onion, carrot, salt, pepper, bay leaves, cloves, juniper, and mustard seeds.
- Cover and bring this to a boil, then lower the heat and simmer for 10 minutes. Set aside to cool.
- Pat the bottom round dry and rub with vegetable oil and salt on all sides.
- Heat a large saute pan over high heat; add the meat and brown on all sides, approximately 2 to 3 minutes per side.
- When the marinade has cooled to a point where you can stick your finger in it and not be burned, place the meat in a non-reactive vessel and pour over the marinade.
- Place into the refrigerator for 3-5 days. (If the meat is not completely submerged in the liquid, turn it over once a day.). I marinated mine for 5 days.
- After 3-5 days of marinating, preheat the oven to 325 degrees F.
- Add the sugar to the meat and marinade, cover and place on the middle rack of the oven and cook until tender, approximately 4 hours.
- Remove the meat from the vessel and keep warm.
- Strain the liquid to remove the solids.
- Return the liquid to the pan and place over medium-high heat.
- Whisk in the gingersnaps and cook until thickened, stirring occasionally. (The gravy won't thicken until you remove it from the heat.).
- Strain the sauce through a fine mesh sieve to remove any lumps.
- Add the raisins if desired.
- Slice the meat and serve with the sauce.

- In a Dutch oven, heat oil over medium-high. Brown beef on all sides. Add all remaining ingredients except gingersnaps; bring to a boil. - In a large bowl, combine the water, vinegar, cloves, bay leaves, salt and brown sugar. Remove 2 cups to a small bowl; cover and refrigerate. Pour remaining marinade into a 2-gal. resealable plastic bag. Add roast; seal bag and turn to coat. Refrigerate for 1-2 days, turning twice each day., Discard marinade and spices. Pat roast dry; dredge in flour. In a large skillet over medium-high heat, brown roast in oil on all sides. Transfer to a small roasting pan. Add the onion, carrots, celery and reserved marinade. , Cover and bake at 325° for 3 to 3-1/2 hours or until meat is tender. With a slotted spoon, remove meat and vegetables to a serving platter. Strain cooking juices; thicken if desired.

- Combine the red wine, red wine vinegar, and pickling spice. Place the beef in a non-reactive container just large enough to hold the meat and 4 1/2 cups of liquid. Pour the liquid over the meat. It should be completely covered with liquid. Cover and refrigerate for 2 to 3 days, rotating every 12 hours or so. Remove the meat from the brine and pat dry. Heat 2 tablespoons of oil in a dutch oven. Sear the meat on all sides and ends until very dark brown, remove the meat. Add the onions, cook for 2 to 3 minutes, add the tomato paste, and cook, stirring for 2 minutes. Strain the brine and add it to the dutch oven. Add the meat, and stock. Bring to a boil, reduce heat, cover, and simmer for 2 hours or until fork tender, rotating occasionally. Remove the meat, whisk in the cookie crumbs. Puree with a hand held blender until smooth. Season. Thinly slice the meat against the grain. Top with the gravy. Garnish with chopped parsley.

- 2. Reserve 2 tablespoons of crushed gingersnaps. Combine remaining crushed gingersnaps, 2 tablespoons tomato sauce, onions, raisins & salt. Add meat; mix well. Shape into 4 1/2 inch thick patties.
- 3. Brown in skillet: Drain off fat. Combine remaining tomato sauce, sugar, vinegar, water, mustard, and pepper. Pour over burgers. Cover and simmer for 10 to 15 minutes, spooning sauce over meat. Remove burgers. Stir in reserved 2 tablespoons gingersnaps into sauce in skillet. Cook & stir until bubbly. Return burgers to skillet. Heat through. Serve with noodles, rice or potatoes.
- 4. This recipe is so good that I always double the recipe when ever I make it, and there are never any left overs. Also note I also plump my raisins in microwave for about 5 minutes, by covering them with water and heating in microwave for 5 minutes, then let them sit, and drain the water off,and then add them to the meat mixture.
