This is a delicious recipe from Betty Crockers recipe card library from 1971. Posting here for a request. This is a flavorfull recipe that is inexpensive and quick to make. A delicious blend of cream of mushroom soup, Ketchup and cheese. My family loves this dish when I make it.

Number Of Ingredients 10

4 ounces corkscrew macaroni (uncooked)
1/2 cup onion (finely chopped)
1/3 cup green pepper (chopped)
1 tablespoon butter
1 (12 ounce) can Spam (cut into cubes)
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
1/2 cup ketchup
1/3 cup shredded cheddar cheese
salt (optional)
pepper (optional)

Steps:

  • Heat oven to 400 F
  • Cook pasta as directed on package and drain.
  • In large skillet, cook and stir onion and green pepper in butter until onion is tender.
  • Stir in macaroni and remaining ingredients.
  • Pour into ungreased 1 1/2 quart casserole and cover. Bake 30 minutes.

From Betty Crocker. Yes, it has spam in it...but it just tastes like cubed ham, which you could use in place of the spam if you prefer. This casserole has a nice tangy flavor to it.

8 ounces macaroni, uncooked (I like the spiral shaped ones)
1/2 cup onion, chopped
1/3 cup green pepper, chopped
1 tablespoon butter or 1 tablespoon margarine
1 (12 ounce) can Spam or 1 (12 ounce) can ham, cut into cubes
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup ketchup
1/2 cup cheddar cheese, shredded

Steps:

  • Heat oven to 400 degrees.
  • Cook macaroni as directed on package; drain.
  • In a large skillet cook and stir onion and green pepper in butter until tender.
  • Stir the macaroni and remaining ingredients into the skillet.
  • Pour mixture into an ungreased 1 1/2 quart casserole dish.
  • Cover and bake for 30 minutes or until hot and bubbly.

Saucy Salsa Baked Pork Chops - With a Twist ! image

Tender, juicy and a bit sweet and spicy ! I looked for a recipe here that would incorporate what I had on hand for my pork chops but couldn't find one. So I came up with this! I made this in about 50 minutes (including prep time) so it was as fast as it was tasty ! The marmalade is a bit different but it really did add a nice sweetness to offset the spicy salsa. Hope you enjoy it as much as we did !

2 tablespoons olive oil
2 pork chops
1/2 cup mild salsa
2 tablespoons orange marmalade
1/2 onion, thinly sliced (optional)
salt
pepper
garlic powder

Steps:

  • Heat your oven to 375°F.
  • Heat your frying pan to medium.
  • Add the oil to the pan.
  • Add the pork chops. Season with salt, pepper and garlic powder.
  • Lightly brown for about 2 minutes per side.
  • In a separate bowl, combine the salsa (I used mild but you can choose the heat that you like) and marmalade.
  • Remove the pork chops and place into an oven proof dish. (I used a glass pyrex pie plate).
  • Smother the chops with the salsa mixture and chopped onions.
  • Put into the oven for approximately 40 minutes.
  • Turn the chops 1/2 way and baste with the sauce.
  • Serve with the extra sauce over the chops!
