3/4 cup fat-free evaporated milk
1 medium onion, chopped
1 teaspoon salt
1 teaspoon chili powder

1-1/2 pounds lean ground turkey
SAUCE:
2 cups ketchup
1-1/2 cups packed brown sugar
1/4 cup chopped onion
2 tablespoons Liquid Smoke, optional
1/2 teaspoons garlic salt

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble turkey over mixture and mix well. Shape into 1-in. balls. Place on a rack coated with cooking spray in a shallow baking pan. Bake, uncovered, at 350° for 10-15 minutes. , Meanwhile, combine the sauce ingredients; pour over meatballs. Bake 30-35 minutes longer or until meat is no longer pink.

This recipe has been used in my family since I was a kid--not too sure where it came from aside from my mom. It also works very well in a crock pot if you have several hours to let the sauce sit and thicken.

1 lb lean ground beef
1/2 cup dry breadcrumbs
1/4 cup milk
1 egg
2 -3 garlic cloves, crushed
2 tablespoons onions, finely chopped
1/2 teaspoon Worcestershire sauce
rosemary (optional)
1/2 cup packed brown sugar
1 tablespoon cornstarch
1 (540 ml) can pineapple tidbits in syrup
1/3 cup vinegar
1 tablespoon soya sauce
1 green pepper, coarsely chopped (optional)

Steps:

  • Mix together all meatball ingredients until thoroughly combined.
  • Form into balls. For appetizer make smaller balls, for meal make larger balls.
  • Place on baking sheet and bake at approx 350°F until brown (15-20 minutes depending on size of meatballs).
  • To make sauce, mix brown sugar and cornstarch in skillet.
  • Stir in pineapple (with syrup), vinegar and soya sauce. Heat to boiling, stirring constantly, then reduce heat.
  • Add meatballs, cover and simmer for approximately 10 minutes.
  • Add peppers and simmer approximately 5 minutes more.

I would also suggest serving this over noodles with a salad and crusty rolls for an easy no-fuss meal that will come together quickly.

This is a meatball recipe that my Mom used to make. We gobbled them up. Usually she served them with mashed potatoes and we used the sauce as gravy, but you could serve them with rice.

1 lb ground beef
3/4 cup saltine crackers or 3/4 cup breadcrumbs
1 1/4 teaspoons salt
3/4 cup milk
1/4 teaspoon pepper
herbs, to taste
onion, to your taste
1/2 cup ketchup
1/2 cup brown sugar
1/4 cup white vinegar
2 cups water
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • For meatballs: Combine ground beef, cracker or bread crumbs, salt, milk, pepper and onions/herbs. Blend well.
  • Make mixture into balls, and brown them on all sides.
  • For sauce: Simmer together ketchup, brown sugar, vinegar, water first quantity of water, until hot and sugar is dissolved.
  • Thicken smoothly with cornstarch and second quantity of water.
  • Add meatballs to sauce and simmer until meatballs are cooked through.

1 lb ground beef
6 ounces Stove Top stuffing mix (1 package)
680 ml pasta sauce
1/2 cup colby cheese
2 cups sliced mushrooms
1/2 cup water
1 cup sliced fresh mushrooms
cooked pasta

Steps:

  • Place pasta sauce in crockpot.
  • Mix stuffing, meat, water and cheese in bowl and then roll into 1" balls.
  • Place balls in crockpot, then top with sliced mushrooms.
  • Cook on low for 6-8 hours, or high for 3-4 hours.
  • Serve over top pasta of your choice.
