Indonesian Beef Saté (Satay) With Sweet Soy Sauce image

Southeast Asian marinated and skewered meat with a sweet soy dipping sauce. May be prepared with chicken, pork, beef sirloin or top round, or lamb shoulder. Serves 6 with rice for dinner or 18 as an appetizer on it's own.

1/4 cup salad oil
1/4 cup lemon juice
1/4 cup soy sauce
2 garlic cloves
1 large onion, cut into chunks
2 hot red chili peppers, sliced
3 tablespoons fresh coriander, chopped
1/4 cup roasted peanuts
1 teaspoon sesame oil
2 tablespoons brown sugar
1/2 teaspoon pepper
3 lbs beef sirloin, cut into 1-inch cubes
bamboo skewers, soaked for 1/2 hour in cold water so they don't burn or metal skewer
2/3 cup soy sauce
1 tablespoon dark molasses
1 tablespoon brown sugar

Steps:

  • Combine all marinade ingredients and purée in blender or food processor.
  • Allow beef to marinate in this mixture for at least 2 hours.
  • Skewer beef and broil over hot coals, turning frequently for 5-7 minutes or bake on a foil lined baking sheet in preheated 325°F oven.
  • Mix together sauce ingredients, and serve skewers with dipping sauce and rice.

24 (6-inch) bamboo or wooden skewers
3/4-pound New York strip steak or fillet
1/2 cup soy sauce
1 tablespoon honey
1 teaspoon red chili flakes
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
6 tablespoons (3 ounces) unsalted butter
2 garlic cloves, blanched and chopped finely (about 1 tablespoon)
1 green onion, chopped finely
4 tablespoons hoisin sauce
1/4 cup soy sauce
1 teaspoon red chili flakes

Steps:

  • Soak the bamboo or wooden skewers in cold water and refrigerate for 1 hour.
  • Cut the steak into 24 (3 by 1-inch) strips, each weighing about 1/2-ounce. Stick a skewer into each strip lengthwise and arrange on a large platter or baking pan. Refrigerate until needed.
  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and pour over the meat, turning to coat all sides. Let marinate at room temperature for about 15 minutes.
  • Preheat the grill or broiler while the steak is marinating.
  • Prepare the sauce: In a small skillet, melt 2 tablespoons butter. Add the garlic and green onion and saute over medium-high heat until soft, about 2 minutes. Pour in the hoisin sauce, soy sauce and chili pepper flakes and cook 1 or 2 minutes longer. Strain into a clean pan and whisk in the remaining 4 tablespoons butter. Keep warm.
  • Arrange the steak skewers on the grill or under the broiler,* being careful that the bare ends of the skewers are not directly over (or under) the flame. Grill until medium rare, about 30 to 40 seconds each side.
  • Pour the sauce into a small bowl and set in the center of a large serving platter. Arrange the skewers around the bowl and serve immediately.
  • *Bring your broiler tray directly under the flame for best results.

3 pounds beef round or sirloin, cut into 3/4-inch cubes
1/2 cup unsweetened coconut milk
1 1/4 cups grated coconut
2 1/2 teaspoons granulated sugar
1/2 cup plus 2 tablespoons dark soy sauce
1 to 2 tablespoons seeded, finely chopped red or green bird chilies (see note)
6 wooden or bamboo skewers, soaked in hot water for 10 minutes

Steps:

  • In a large bowl, combine all the ingredients, mixing well. Set aside at room temperature to marinate for 15 minutes.
  • Preheat the broiler or a grill. Slide the beef cubes onto the skewers, using 4 to 5 cubes per skewer. Press the beef into the marinade to get as much of the coconut as possible to cling to the meat. Grill, turning once, until browned and cooked to the desired doneness, 3 to 6 minutes per side. Serve immediately.

These can be served as a main course or as part of a buffet.Freezing the beef for 10-15 minutes will make slicing it into thin strips easier.

1/4 cup vegetable oil
1 cup finely chopped onion
4 garlic cloves, finely chopped
1 teaspoon grated fresh ginger
3/4 cup water
3 tablespoons dark soy sauce
4 teaspoons chili powder
1 tablespoon creamy peanut butter
1 tablespoon turmeric
1 teaspoon brown sugar
1/2 teaspoon finely grated lemon peel
2 lbs flank steaks, sliced crosswise into strips 1/8 inch thick

Steps:

  • For Marinade.
  • Heat oil in skillet over medium-high heat.
  • Add onion,garlic and ginger and saute until onion is soft.
  • Add remaining ingredients and stir to make smooth paste.
  • Reduce heat and simmer 2 minutes.
  • Add meat, stirring to coat well.
  • Remove from heat and let stand until room temperature.
  • Thread meat onto skewers, weaving strips in and out to pack tightly.
  • Prepare hibachi or grill or preheat broiler.
  • Cook meat 3 to 4 inches from heat source, basting once with any remaining marinade, until crisp and browned, about 3 minutes on each side.

1 head garlic, peeled
5 shallots, chopped
1 (1 inch) piece galangal, thinly sliced
8 red chile peppers, seeded and chopped
1 cup roasted macadamia nuts
1 teaspoon belacan shrimp paste
¼ cup vegetable oil
2 pounds boneless beef sirloin steak, cut into 1/2 inch cubes
2 cups water
2 tablespoons palm sugar
1 beef bouillon cube
1 tablespoon salt
3 tablespoons kecap manis
6 kaffir lime leaves, finely chopped
32 wooden skewers, soaked in water for 15 minutes

Steps:

  • In a mortar with a pestle, mash together the garlic, shallots, galangal, chile peppers, and macadamia nuts into a fine paste. Add the shrimp paste and oil, continue mashing until incorporated. Place the paste into a large skillet over medium-high heat, cook and stir until fragrant, about 3 minutes.
  • Stir the beef into the sauce and cook for 5 minutes, stirring constantly. Pour in the water, palm sugar, bouillon cube, and salt. Simmer until the water has evaporated, about 10 minutes, stirring frequently. Stir in the kecap manis and lime leaves, then spread the beef out on a baking sheet or large dish, and allow to cool until cool enough to handle.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the beef cubes from the tray, and thread onto skewers, reserve any leftover sauce for basting.
  • Cook on preheated grill for a few minutes until slightly browned; baste occasionally with the leftover sauce.

10 ounces ground beef chuck or sirloin, lean
1/2 teaspoon turmeric, ground
2 teaspoons ginger, minced or grated fresh
1/2 cup coconut, shredded (dried or fresh, sweetened or unsweetened)
1 tablespoon soy sauce, sweet (ketjap manis) or 1 1/2 teaspoons each regular soy sauce and molasses
1 teaspoon lime juice, fresh
2 tablespoons peanut oil or other vegetable oil
1/4 teaspoon salt, or more to taste
1/2 teaspoon black pepper, freshly ground, or more to taste

Steps:

  • 1. Combine the beef, turmeric, ginger, coconut, sweet soy sauce, lime juice, oil, 1/4 teaspoon salt, and 1/2 teaspoon pepper in a medium-sized bowl. Mix to a smooth paste with your hands, then saute a small amount of the mixture in a nonstick skillet until cooked through and taste for seasoning. Add salt and pepper to the remaining mixture as necessary.2. Lightly wet your hands with cold water, then take a small amount (about 1 tablespoon) of the meat mixture and mold it around a skewer to form a thin strip about 5 inches long. Continue until all the mixture is used up, placing the sates as they are finished on a platter or baking sheet lined with plastic wrap until ready to cook.3. Preheat the grill to high.4. When ready to cook, oil the grill grate. Arrange the sates on the hot grate and grill, turning with tongs, until nicely browned on the outside and cooked through, 2 to 4 minutes in all. Recipe from an old Australian Women's Weekly cookbook. The sate sauce should be a thick paste type that you will probably find in the Asian food aisle of the supermarket near the green and red curry pastes. We used Yeo's Satay Sauce. We changed the beef to round steak, the original recipe called for fillet. You can use whichever cut you prefer.

500 g round steaks
1 1/2 teaspoons soy sauce
pepper
2 teaspoons sesame oil
1 teaspoon cornflour
2 tablespoons water
2 tablespoons vegetable oil
1 garlic clove, crushed
1 medium onion, diced
3 teaspoons satay sauce
2 teaspoons dry sherry
1 teaspoon curry powder (We use Keens Curry)
salt
2 tablespoons water
2 teaspoons soy sauce
1/2 teaspoon sugar

Steps:

  • Trim all fat and sinew from the meat. Cut into 5mm slices. Gently pound each slice to flatten slightly.
  • Put meat in a bowl with soy sauce, pepper, sesame oil, cornflour and water. Mix well and let stand for 20mins.
  • Heat oil in a wok or pan, separate meat and sauté until browned on both sides. Remove from pan.
  • Add diced onion and garlic to the pan, sauté gently until onion is transparent.
  • Combine sate sauce, sherry, sugar, curry powder, salt, water and soy sauce. Add to onion and garlic in pan. Stir until boiling.
  • Return beef to pan and heat through. It should only take about a minute.
