Found this in a cookbook at the library. Sounded good! UPDATE: I've now made this and it IS good. I used garlic powder instead of the clove and it worked fine.

6 pork chops (4 to 6 ounces each)
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cayenne pepper
1/4 teaspoon salt
1 garlic clove, finely chopped

Steps:

  • Mix rub ingredients.
  • Rub generously on pork.
  • Refrigerate 1 hour.
  • Preheat oven to 350°F.
  • Bake for 40 minutes or until done.

1/2 teaspoon garlic pepper blend
1 tablespoon canola oil
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup medium salsa
Minced fresh cilantro

Steps:

  • Sprinkle pork chops with pepper blend. In a large skillet, brown chops in oil. Remove and keep warm., In the same skillet, combine pineapple and salsa. Bring to a boil. Return chops to the pan. Reduce heat; cover and simmer until tender, 15-20 minutes. Sprinkle with cilantro.

Yippee-ay-oh-so-good! Chili powder, cumin, red pepper and garlic rub these flavorful chops just the right way.

1 tablespoon chili powder
1 tablespoon vegetable oil
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 large garlic clove, finely chopped
8 pork loin or rib chops, 1/2 inch thick (2 1/2 pounds)

Steps:

  • Mix all ingredients except pork.
  • Spread chili powder mixture evenly on both sides of pork. Cover and refrigerate at least 30 minutes but no longer then 24 hours.
  • Heat coals or gas grill for direct heat. Cover and grill pork 4 to 6 inches from medium heat 10 to 12 minutes, turning frequently, until slightly pink when cut near bone.

6 pork rib chops, cut 3/4-inch thick (about 2-1/2 lb.)
1 15 ounce can Mexican-style or Tex-Mex-style chili beans
1.25 cup bottled salsa
1 cup fresh* or frozen whole kernel corn
2 cup hot cooked rice
Snipped fresh cilantro (optional)

Steps:

  • Trim excess fat from chops. Place chops in the bottom of a 3-1/2- or 4-quart crockery cooker. Add chili beans and salsa. Cover; cook on high-heat setting for 2-1/2 hours or low-heat setting for 5 hours. When that step is complete, turn to high-heat setting, if necessary. Stir in corn. Cover and cook 30 minutes longer on high-heat setting. Serve over rice. Sprinkle with cilantro, if desired. Makes 6 servings.

2 bone-in pork loin chops (3/4 inch thick)
1/4 cup chopped onion
1/4 cup maple syrup
2 tablespoons water
1 tablespoon cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Brown pork chops on both sides. This recipe came from my grandmother. The directions are for baking in the oven, but I have done these in the crock pot as well as they turn out great. These are really good with mashed potatoes. A great comfort food meal. Easy and delicious!

6 pork chops
1 (10 3/4 ounce) can cream of chicken soup
3 tablespoons ketchup
3 tablespoons Worcestershire sauce
1/2 cup water
1 tablespoon olive oil

Steps:

  • Trim pork chops.
  • Heat oil in a large skillet over medium- high heat.
  • Add chops and brown on both sides.
  • Spray a 9x13-inch baking pan with cooking spray.
  • Place browned chops in pan.
  • In a glass measuring cup, mix together soup, ketchup, Worcestershire and water.
  • Pour over the pork chops.
  • Cover with foil and bake at 350°F for 1 hour or until done (it will depend on the thickness of the chops).

4 lean pork loin or rib chops, about 1/4 inch thick (about 1 1/4 pounds)
1 tablespoon reduced-sodium chicken broth
1 tablespoon lime juice
1/2 teaspoon chili powder
1 clove garlic, crushed
Cilantro-Mint Salsa (see recipe)
salt and pepper to taste

Steps:

  • Place pork in shallow glass or plastic dish or heavy-duty resealable plastic bag. Mix broth, lime juice, chili powder and garlic rub on both sides of pork, using back of spoon. Cover dish or seal bag and refrigerate at least 1 hour but no longer than 24 hours. Prepare Cilantro-Mint Salsa. Heat coals or gas grill. Place pork on grill sprinkle with salt and pepper. Cover and grill 4 to 5 inches from medium heat 8 to 11 minutes, turning frequently, for medium doneness (160°).
