HOMEMADE CAESAR SALAD DRESSING
My family loves this rich and creamy Caesar salad dressing. It's not overly garlicky or fishy -- it's just right.

Steps:
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined. Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
- Note: Anchovy paste can be found near the canned tuna in the supermarket.

- 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and slowly increase speed to Variable 4.
- 4. Blend for 20 seconds. Refrigerate in airtight container for three to four days.

- In a food processor, combine drained anchovy fillets (or paste), garlic, mustard, eggs, lemon juice and zest. Add a generous grinding of black pepper. Blend ingredients, and while blending, slowly add olive oil in a very thin stream. Salt and pepper to taste.
