1 cup butter, softened
1/2 cup sugar
4 teaspoons vanilla extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 tablespoon instant coffee granules
1/2 teaspoon salt
1 cup finely chopped pecans
2/3 cup chopped red candied cherries
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, cocoa, coffee granules and salt; gradually beat into creamed mixture. Stir in pecans and cherries. If necessary, cover and refrigerate dough until firm enough to shape., Preheat oven to 350°. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake 15 minutes or until cookies are set. Cool completely on wire racks. Dust with confectioners' sugar. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

20 cherry tomatoes
20 bocconcini mozzarella balls
1 cucumber, cut into 1/2-inch-thick slices (20 slices)
1 container garlic cheese spread, such as Alouette or Boursin (5 to 6 ounces)
1 tablespoon milk
Black sesame seeds, for garnish

Steps:

  • Cut a small piece off the bottom of a tomato so the bottom is flat, reserving the piece. Cut the remaining tomato in half. Thread the bottom half of the tomato onto a skewer and slide it down.
  • Thread a mozzarella ball onto the skewer for a head and slide it down to meet the tomato piece (Santa's body). Thread the top half of the cherry tomato onto the skewer for a hat. Poke the skewer into the center of a cucumber slice to stabilize it so the skewer will stand. Repeat with the remaining tomatoes, mozzarella balls and cucumber slices.
  • Combine the cheese spread with the milk in a small bowl and stir until creamy and pipeable. Transfer to a piping bag or resealable plastic bag. Snip off a small piece at the end of the plastic bag to create a small opening.
  • Pipe a zigzag triangle of cheese at the bottom of each Santa face for a beard, extending onto the bottom piece of tomato. Pipe the cheese around the bottom of each Santa hat, then pipe a small piece at the top of each hat.
  • Cut a small sliver off the rounded edge of the reserved tomato bottoms and place one on each beard for a mouth. Put on 2 black sesame seeds for eyes.

1 ¾ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 tablespoon instant coffee granules
½ teaspoon salt
1 cup butter, softened
½ cup white sugar
2 teaspoons vanilla extract
2 cups finely chopped pecans
1 cup confectioners' sugar for rolling

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Stir together the flour, cocoa, coffee crystals and salt; set aside.
  • In a large bowl, cream together the butter, sugar and vanilla until light and fluffy. Mix in the dry ingredients just until blended. Stir in the pecans. Roll dough into 1 inch balls and place them 2 inches apart onto an ungreased cookie sheet.
  • Bake for 15 to 20 minutes in the preheated oven, until the bottoms are lightly browned. Remove from cookie sheets and roll in confectioners' sugar while still warm. Store in a tightly covered container at room temperature.

I'm not a maraschino cherry lover, but these Mocha Balls sound so festive that I have to give them a try during the holidays. Prep time does not include refrigeration time of 1-2 hours for the dough.

1 cup butter
1/2 cup sugar
2 teaspoons vanilla
1 3/4 cups flour
1/4 cup cocoa
1 tablespoon instant coffee granules
1 1/4 teaspoons salt
1 cup chopped nuts (your choice)
1/2 cup maraschino cherry (drained and chopped)
powdered sugar

Steps:

  • Cream butter, sugar and vanilla in large bowl. In separate bowl, mix flour, cocoa, instant coffee and salt. Gradually pour in dry ingredients with sugar/butter mixture and mix well. Stir in nuts and cherries and shape into large ball. Chill for 1-2 hours before forming 1" balls and baking.
  • Preheat oven to 350 degrees. Form into 1-inch balls and place on cookie sheet. Bake for about 15-20 minutes or until cookies are light brown.
  • Dust with powdered sugar while cookies are hot.

1 (18 ounce) package refrigerated sugar cookie dough
1/4 cup baking cocoa
1 tablespoon instant espresso coffee powder, you can substitute regular instant coffee
1 cup finely chopped pecans
48 unwrapped Hershey chocolate kisses
3/4 cup confectioners' sugar

Steps:

  • Preheat oven to 375°F.
  • In a large bowl crumble cookie dough.
  • Stir in cocoa, espresso powder and pecans.
  • Shape dough into 48 pieces.
  • Wrap each piece around a Hershey Kiss.
  • Place 2 inches apart on an ungreased cookie sheet.
  • Bake for 10-12 minutes or until set.
  • Transfer to wire rack.

hazelnuts, chopped (optional)

Steps:

  • Dissolve coffee in vanilla.
  • Beat butter and sugar until fluffy.
  • Add the coffee mixture, flour and cocoa.
  • Shape 1 teaspoon of dough into balls.
  • Press a hazelnut into center of each ball.

Amazing good little chocolate covered balls. Very addictive and so pretty! Cook time is fridge time.

4 cups fine chocolate cake crumbs
1 tablespoon cocoa powder
2 tablespoons desiccated coconut
1/4 cup apricot jam, warmed
2 tablespoons coffee-flavored liqueur
2 tablespoons water
400 g dark chocolate, melted
50 g white chocolate, melted

Steps:

  • Combine crumbs, cocoa, coconut, jam, liqueur and water in a bowl and mix well.
  • Roll mixture into balls.
  • Use two level teaspoons of mixture for each ball.
  • Place balls onto baking paper lined trays and refrigerate, covered, for 30 minutes.
  • Dip balls, one at a time, into the melted dark chocolate.
  • Return to fridge on the tray and refrigerate until chocolate is set.
  • Spoon the melted white chocolate into a zip lock bag and snip one small corner off the bag.
  • Drizzle chocolate decoratively over the balls and allow chocolate to set.
  • These can be made up to 1 week ahead of serving and stored in an airtight container in the fridge.
