SIMPLEST GRILLED SHRIMP
Here is the easiest way to grill shrimp. It can be done on a gas or charcoal grill, with skewers or a grill basket or without. Whichever method you use, remember that shrimp cook quickly, particularly when they're peeled. Larger shrimp are better for the grill.

Steps:
- Build a medium-high fire in a charcoal or gas grill, making sure that the grate is clean and clear of debris. (Shrimp will stick to a dirty grate.)
- If you like, thread the shrimp onto skewers. Season the shrimp with salt and pepper. Rub them lightly with olive oil, and place the shrimp on the grill directly over the heat. Cook for 2 to 3 minutes, until lightly golden.
- Flip the skewers and cook for another 2 to 3 minutes. Take care not to overcook. Remove to a plate. A squeeze of lemon over the shrimp might be nice.

SWEET AND SPICY GRILLED SHRIMP
Steps:
- Preheat grill for medium heat and lightly oil the grate.
- Stir chile-garlic sauce and honey together in a small bowl.
- Thread shrimp onto soaked bamboo skewers, piercing through the head and tail ends.
- Cook the skewers on the preheated grill, frequently turning and basting with the sauce mixture, until shrimp are firm and pink on all sides, about 10 minutes.

Steps:
- Whisk first 8 ingredients in small bowl.
- Thread 6 shrimp onto each of six 10- to 12-inch-long metal skewers. Place skewers in 15x10x2-inch glass baking dish. Spoon all but 1/4 cup marinade over shrimp; turn to coat. Cover and chill shrimp and reserved 1/4 cup marinade at least 30 minutes and up to 2 hours.
- Prepare barbecue (medium-high heat). Grill shrimp with some marinade still clinging until just opaque in center, about 2 1/2 minutes per side. Arrange skewers on platter. Spoon reserved 1/4 cup marinade over and serve.
SPICY GRILLED SHRIMP
This is a great dish, which can be used as an appetizer, by itself, or to accompany a steak or another meat you are grilling. Serves 4 as a main dish, and around 15 if served as an appetizer.

Steps:
- Soak wooden skewers in water for about 30 minutes prior to preparing shrimp.
- Peel and devein shrimp.
- Rinse shrimp with cool water, and set aside, to drain excess water.
- Whisk together all ingredients except for shrimp.
- Let mixture stand for about 5 minutes.
- Add shrimp to mixture and let marinate for approximately 30 minutes.
- Prpare grill on medium-high heat.
- Thread shrimp on wooden skewers.
- Remove shrimp from marinade and place on grill.
- Cook for about 2 minutes per side or until pink and cook through.

SPICY GRILLED SHRIMP

- In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
- Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.

SPICY GRILLED SHRIMP
This Mark Bittman recipe from 1999 is big on flavor, but not too much effort. The hardest part is preparing the grill. It calls for just a few spices - garlic, lemon, paprika and cayenne - to yield an intense flavor. Feel free to adjust the cayenne to taste, and pay close attention to your paprika: For best results, make sure it's fresh. If it doesn't taste vibrant and smoky, it's time to buy more.

- Start a charcoal or gas grill, or heat the broiler. Make the fire as hot as it will get, and put the rack close to the heat source.
- Mince garlic with salt; mix with cayenne and paprika, then make into a paste with olive oil and lemon juice. Smear paste on shrimp. Grill or broil shrimp, 2 to 3 minutes a side, turning once. Serve immediately or at room temperature, with lemon wedges.

- Whisk together all but shrimp in a large bowl. Add shrimp to the mix, stir to coat. Let stand for only 30 minutes, no more, no less. Start grill 10 minutes before putting the shrimp on. Use grill basket or skewers. Grill 2-3 minutes on each side.

AMAZING SPICY GRILLED SHRIMP
Steps:
- Whisk together the olive oil, sesame oil, parsley, hot sauce, minced garlic, ketchup, chile sauce, salt, pepper, and lemon juice in a mixing bowl. Set aside about 1/3 of this marinade to use while grilling.
- Place the shrimp in a large, resealable plastic bag. Pour in the remaining marinade and seal the bag. Refrigerate for 2 hours.
- Preheat an outdoor grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
- Lightly oil grill grate. Cook shrimp for 2 minutes per side until opaque, basting frequently with reserved marinade.
