3-Ingredient Pan-Simmered Italian Boneless Pork Chops image

You will NOT believe how good these pork chops are, after seeing how EASY they are to make. These are so simple, yet worthy of serving to company. I get rave reviews every time I serve them and I'm always asked for the recipe, yet almost embarrased to give it! The trick is to cook slowly with enough heat, but not so much that the chops are boiling to get tough and dry. And the cooking time is very flexible...you can simmer these for up to 6 hours if you'd like. (By the way, I consider the salt and pepper "freebies" in the ingredient count!)

4 -6 boneless center cut loin pork chops (1/2-3/4-inch thick)
1 (14 1/2 ounce) can del monte stewed tomatoes, Italian Recipe (with basil, garlic and oregano)
1 tablespoon olive oil
salt and pepper

Steps:

  • Heat oil over medium-high heat in large frying pan that has a lid.
  • Season pork chops with salt and pepper.
  • Sear chops in pan till lightly browned, about 1-2 minutes per side.
  • REMOVE frying pan from burner (so you don't burn yourself on next step).
  • Slowly pour can of stewed tomatoes over chops. Distribute tomatoes so some are under chops and the balance is evenly covering the tops of the pork chops.
  • Cover pan and return to burner. Reduce heat to low and simmer (do not boil) for 2-3 hours, or until chops are fork tender. You can leave the chops on low for even longer, if you prefer - adjust to your schedule.
  • Uncover and let simmer for another hour (or longer) until some of the water in the pan evaporates.
  • Serve with side of mashed potatoes (the pan juice goes well with them!) or over pasta of your choice with some parmesan cheese.

2 tablespoons olive oil
2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
Salt and freshly ground black pepper
1 small onion, thinly sliced
1 (15-ounce) can diced tomatoes, in juice
1 teaspoon herbes de Provence
1/4 teaspoon dried red pepper flakes, or more to taste
1 tablespoon chopped fresh Italian parsley leaves

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
  • Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
  • Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

1 tablespoon olive oil
4 pork chops, 1 inch thick
salt & fresh ground pepper
2 cloves garlic, minced
2 cups sliced mild pickled peppers (plus 2 T. juice)
3 -5 hot pepperoncini peppers (optional)

Steps:

  • Heat the oil in a large skillet over medium high heat.
  • When hot, pat chops dry, sprinkle with salt and pepper and add to skillet.
  • Cook chops, turning once for about 5 minutes on each side, or until brown.
  • Lower the heat to medium and scatter garlic around chops.
  • Cover and cook 5 to 8 minutes more.
  • Check for doneness.
  • Remove to a plate and keep warm.
  • Add the peppers and juice to the skillet.

  • In a nonstick skillet, brown pork chops on both sides. In a 3-qt. slow cooker, combine the mushrooms, onion and garlic. Top with the pork chops. , In a bowl, combine the tomato sauce, lemon juice, salt, oregano, basil and parsley. Pour over pork. Cover and cook on low for 6-8 hours or until meat is tender.Remove pork and keep warm. 4 -6 lean pork chops, butterflied
1/2 cup butter, melted
2 lemons, juiced
1 egg, briskly beaten
1 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese
1 tablespoon italian seasoning
2 tablespoons olive oil

Steps:

  • Oil bottom of baking dish. Preheat oven to 350°.
  • Mix bread crumbs, Parmesan cheese, and Italian seasoning.
  • Add juice of lemons to melted butter.
  • Dip pork chops in beaten eggs and then into seasoned bread crumbs to coat evenly.
  • Lay them in the dish. Bake for 30 minutes and baste occasionally with melted butter and lemon juice mixture .

Easy, easy, easy (did I mention it's easy?) weeknight meal. The marinade adds a nice, tangy flavor to the pork chops. The sweet and spicy peppers on top add even more flavor. Pepper jack cheese gives the chops a nice kick. Very tasty!

1 bottle Italian salad dressing
1 jalapeno pepper
1 green pepper
1 red pepper
1/4 c minced garlic
1 Tbsp olive oil, extra virgin
6 pork chops, boneless
6 slice pepper jack cheese

Steps:

  • 1. Marinate pork chops in Italian dressing and refrigerate for 1 hour. I used the Italian dressing packet that you mix with water, oil and vinegar. (I think that this is the best tasting dressing.)
  • 2. Slice peppers into long thin strips and saute with chopped jalapeno (I left a couple large jalapeno slices to place on top), oil and garlic.
  • 3. Cook pork chops in skillet (about 5-6 mins each side) until brown and no longer pink inside.
  • 4. Place pork chops on plate and top with the garlic, peppers and jalapeno mix. Add a slice of pepper jack cheese on top of pork chop before placing pepper mix for an added cheesy flavor. Serve with potatoes and veggies!
