1 ½ tablespoons olive oil
1 lb ground beef
1 medium red onion, diced
1 clove garlic, minced
1 jalapeño, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground coriander
1 teaspoon cumin
4 scallions, diced
1 cup frozen peas, defrosted
2 tablespoons fresh cilantro, chopped
3 cups all-purpose flour
¼ teaspoon salt
2 teaspoons olive oil
1 cup water, plus 2 tablespoons more
1 tablespoon flour, mixed with 1 tablespoon of water
3 cups canola oil
lime wedge, for serving

Steps:

  • In a large pan over medium-high heat, heat the olive oil. Once hot, add the ground beef. Use a spatula to break apart the meat and cook for 3 minutes. Add onion and cook until beef is brown and onion is translucent, about 4 minutes.
  • Add the garlic, jalapeño, salt, pepper, coriander, cumin, and scallions to the meat. Cook for 2 minutes. Add the peas and cilantro, then cook for another 2 minutes. Remove the meat filling from the heat and let cool.
  • In a large bowl, combine the flour, salt, olive oil, and water. Use your hand or a spatula to mix together. Once the dough pulls away from sides of the bowl, transfer to a lightly floured surface and knead for 4 minutes or until the dough is smooth and soft.
  • Shape dough into a ball and brush with olive oil. Cover with plastic wrap and a warm damp tea towel. Let rest for 30 minutes.
  • Remove tea towel and plastic wrap and roll the dough out into a 10-inch (25-cm) long log. Cut into 10 even sections. Take one section and roll it into a ball. Place the ball on a lightly floured surface and use a rolling pin to roll it out into a thin circle about 10 inches (25-cm) in diameter. Repeat with the remaining dough. Stack the dough circles as you roll them out, sprinkling a bit of flour between each one and keeping them covered with plastic wrap so they don't dry out.
  • In a greased large pan over high heat, place one of the circles of dough and cook for 10 seconds on each side. Repeat with remaining dough.
  • Cut one of the par-cooked dough circles into four quarters. Take one quarter and, with the round side closest to you, fold the bottom half to the right. Use the flour paste to seal the fold. Repeat with the left side, crossing over your previous fold to create a cone like pocket. Fill the pocket with meat filling, then fold the remaining tip of the dough towards you and seal with flour paste. Repeat with the remaining dough and filling.
  • In a large, deep pan, heat the canola oil to 350°F (180°C). Once the oil is at the correct temperature, carefully place 4-6 sambusas in the pan. Fry for about 5 minutes, flipping once, until light, golden brown. Remove from oil and drain on paper towels.

4 cups all-purpose flour
1 tablespoon sugar
2 teaspoons salt
1-3/4 cups shortening
1/2 cup ice water
1 egg, lightly beaten
1 tablespoon white vinegar
FILLING:
2 pounds lean ground beef (90% lean)
1 cup diced carrots
2 medium potatoes, peeled and cut into 1/4-inch cubes
1 medium onion, chopped
1 to 2 teaspoons salt
1/4 teaspoon pepper
Half-and-half cream

Steps:

  • In a large bowl, combine flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. In a small bowl, combine the water, egg and vinegar. Add to shortening mixture, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for 30 minutes., Meanwhile, combine the first six filling ingredients. Divide pastry into 15 equal portions. On a lightly floured surface, roll out one portion into a 6-1/2-in. circle. , Mound a heaping 1/3 cup filling on half of circle. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Transfer to a greased baking sheet. Repeat with remaining pastry and filling. , Cut three slits in the top of each turnover; brush with cream. Bake at 375° for 35-40 minutes or until vegetables are tender and crust is golden brown.

SAMBOSAS (AFGHAN MEAT TURNOVER)



Sambosas (Afghan Meat Turnover) image

This is a traditional Afghan appetizer, great for parties, a very simple dish that if you ask 100 Afghan chefs you'll get 100 slightly different recipes. This is the one my family always made, and paired it with my yogurt sauce(check my other recipes) for dipping.

Yield 25-30 Sambosas depending on size of wonton, 4-6 serving(s)

Number Of Ingredients 9

1 lb ground beef (ground chuck is best)
2 garlic cloves
1 small yellow onion
1 (8 ounce) package wonton wrappers (any size will work)
1/4 teaspoon ground cardamom (to taste)
1/4 teaspoon cayenne pepper (to taste)
salt & pepper
vegetable oil, for deep frying
yogurt, sauce for dipping

Steps:

  • Brown ground beef in a non-stick pan, seasoning with salt and pepper. When its just cooked through, drain on paper towels to dispose of excess grease. Return beef to pan, along with enough drained oil so it's moist, add the cardamom, cayenne, crushed/chopped garlic and the finely chopped onion. Cook until the onion & garlic is softened and spice is fragrant. Remove from heat and cool.
  • To form the sambosas, take about a tablespoon (if using the small wontons, more if using the egg roll size), not too much, ensuing that you can fold the wonton over into a triangle without the filling falling out. Brush one side of the wonton with water at the edge to make a tight seal, using either your fingers or tines of a fork to do this. Make all the sambosas and keep on a sheet covered with paper towels to prevent sticking. You can do all this ahead of time and store covered with Plastic Wrap in the fridge till ready to cook.
  • When ready to finish the sambosas, put a nonstick pan or pot onto med/high heat and add enough oil for shallow frying, about half to 3/4 an inch of oil should do it. Shallow fry in batches till golden brown, and drain on a wire rack or paper towels. Sprinkle lightly with salt and serve, best when hot but are good at room temp too. I serve them with my family's chilled yogurt sauce(see other recipe). Not healthy but delicious, even my southern wife and family loves them!

1 1/2 lbs ground beef or 1 1/2 lbs lamb
2 onions, diced
1/2 green bell pepper, diced
1 tablespoon garlic powder
1 tablespoon ground coriander
2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne
2 cups water
35 wonton wrappers, square
1 cup yogurt
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/2 yellow onion
1 1/2 cups water
8 ounces tomato sauce
1 1/2 teaspoons oil
1/2 teaspoon ground coriander
1/2 teaspoon salt
1 small carrot, diced
1/2 cup cooked chickpeas
1 teaspoon dried mint
1 bunch fresh cilantro, chopped

Steps:

  • To Make the Yogurt Sauce: Mix together the 1 cup yogurt, 1/2 teaspoons garlic powder and 1/4 teaspoons salt.
  • Chill until ready to serve.
  • To Make the Tomato Sauce: Slice the 1/2 yellow onion and boil in a medium-size saucepan with the 1 1/2 cups water until tender.
  • Drain.
  • In a blender put the cooked onion slices, 8 oz. tomato sauce, 1 1/2 teaspoons oil, 1/2 teaspoons ground coriander and 1/2 teaspoons salt.
  • Puree.
  • Put into a medium-size saucepan.
  • Add the diced carrot and chickpeas and cook the tomato sauce until the carrots are tender.
  • To Make the Stuffed Pasta: In a large frying pan cook the meat, 2 diced onions, green bell pepper, 1 Table. garlic powder, 1 Table. ground coriander, 2 teaspoons salt, 1/2 teaspoons ground black pepper and 1/4 teaspoons cayenne.
  • When browned, add 2 cups water and cook until the water evaporates.
  • Let cool somewhat.
  • Put 1 Table. of the meat mixture in the center of a won ton square (3 1/2 " x 3 1/2").
  • Wet edges with water.
  • Pull 2 opposite corners together in center and firmly seal.
  • Do the same with the opposite corners, sealing all together.
  • Repeat with remaining filling and won ton wrappers until of it is all used up.
  • Oil a metal vegetable steamer and place the filled won tons on it.
  • Cover and steam 15-20 minutes.
  • To Serve: Spread a thin layer of yogurt sauce on each plate.
  • Put stuffed pasta on each plate and drizzle a little yogurt over each.
  • Drizzle tomato sauce over each pasta.
  • Garnish with the dried mint leaves and chopped fresh cilantro.

1/2 lb ground beef
1/4 cup chopped onion
2 tablespoons Bisquick baking mix
1/2 teaspoon salt
1/4 teaspoon garlic salt
1/2 cup catsup
2 tablespoons sour cream
1 1/2 cups Bisquick baking mix
1/3 cup water

Steps:

  • Heat oven to 400*.
  • Cook and stir ground beef and onion until meat is brown and onion is tender. Stir in 2 Tblsp. baking mix, salt, garlic salt, catsup and sour cream; heat through.
  • Stir 1 1/2 cups baking mix and the water to a soft dough. Gently smooth dough into a ball on floured cloth-covered board. Knead 5 times.
  • Roll dough into a 12-inch square; cut into four 6-inch squares. Place squares on ungreased baking sheet; spoon 1/3 cup meat mixture on each. Fold dough over to make triangles and press edges together to seal securely. Cut slit in center of each turnover.
  • Bake 15 to 20 minutes.

Number Of Ingredients 11

2 tablespoons corn, peanut or vegetable oil
1/2 cup finely chopped onion
1/4 pound ground beef
1/3 cup water
1 cup canned or freshly cooked drained chickpeas
Salt to taste if desired
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 tablespoon ground coriander
12 prepared raw won ton skins, available in Chinese markets and specialty shops
Oil for deep frying

Steps:

  • Heat the 2 tablespoons of oil in a saucepan and add onion. Cook, stirring, until golden brown. Add meat and cook, breaking up lumps with edge of a heavy metal spoon.
  • When meat loses raw look, add the water, stirring. Cook, stirring, until most of liquid evaporates.
  • Spoon meat mixture into a sieve and press to drain off oil.
  • Put chickpeas in container of a food processor or electric blender and grind as fine as possible. Put ground chickpeas in a mixing bowl and add the meat mixture, salt, pepper, garlic powder and coriander. Blend thoroughly.
  • Lay out won ton skins, a few at a time, on flat surface. Rub outer rims with water. Spoon equal portions of meat mixture into center of each. Fold over rims to make triangles, pressing with fingers to seal.
  • Heat oil for deep frying to about 365 degrees. Add turnovers, a few at a time, and cook until golden brown, turning as necessary, about 1 minute. Drain on paper towels.

1 tablespoon sugar
3/4 teaspoon salt
3/4 cup cold butter
3 tablespoons cold butter

1 -1 1/2 teaspoon fresh rosemary
1 -1 1/2 teaspoon minced fresh thyme
1/2 cup chicken broth
1/8 teaspoon pepper

1 tablespoon Dijon mustard
1/2 cup soft breadcrumbs
1/4 cup parmesan cheese

Steps:

  • In a bowl, combine the flour, sugar and salt. Cut in 3/4 cup butter until mixture resembles coarse crumbs. Gradually add water tossing with a fork until mixture forms a ball. Shape into a flattened ball; wrap in plastic and refrigerate.
  • In a large skillet cook onions rosemary and thyme until onions begin to turn golden brown. Add broth and pepper; cook over high heat until liquid is absorbed. Cool slightly.
  • In a bowl, beat eggs and set aside 2 T.
  • Stir cream and mustard into remaining beaten eggs. Stir in bread crumbs, Parmesan cheese and onion mixture.
  • Divide dough into six portions. On a lightly floured surface, roll each portion into a six inch circle.
  • Place on two greased baking sheets. Spoon 1/2 cup onion mixture on one side of each.
  • Fold dough over filling; press edges with fork to seal. Brush with reserved beaten egg.
  • Bake at 400 degrees for 20-25 minutes or until filling reaches 160 degrees and crust is golden brown.

Steps:
