3 pounds sweet potatoes, peeled and cut into 1-inch chunks
1/2 cup half-and-half
1 1/2 teaspoons grated orange zest
1/2 cup freshly squeezed orange juice
1/4 teaspoon ground cayenne pepper
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature

Steps:

  • Place a steamer insert or a mesh colander in a large pot and add enough water to reach the bottom of the steamer. Place the sweet potatoes in the steamer and bring the water to a boil. Cover the pot, lower the heat, and cook over simmering water for about 25 minutes, until very tender. Check occasionally to be sure the water doesn't boil away.
  • Transfer the sweet potatoes to the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, slowly add the half-and-half, orange zest, orange juice, cayenne pepper, 1 tablespoon salt, and 1 teaspoon black pepper. With the mixer still on low, add the butter, 1 tablespoon at a time, until incorporated. Taste for seasonings and mix until smooth. Serve hot.

The biggest mistake people make with purees in simply not cooking the main ingredient long enough in the first place. Sweet potatoes can be boiled on the stovetop in water and such but I want to make this simple. Bake, scoop and mix. That's my favorite way. I am always surprised at what a sleeper this can be. 4 1/2 to 5 pounds medium sweet potatoes
2 sticks (8 ounces) unsalted butter
4 tablespoons dark brown sugar
2 tablespoons blackstrap molasses, plus some additional, if needed
1 teaspoon ground ginger
1 large knob fresh ginger, peeled and finely grated
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Kosher salt, to taste
Freshly ground white pepper, to taste
3/4 cup whole milk, heated
The zest and juice from 1 orange
Worcestershire sauce (optional)

Steps:

  • Preheat oven to 450 degrees F.
  • Bake the sweet potatoes: Place the sweet potatoes in a single layer on 2 baking sheets. Put the trays in the center of the oven and bake until completely yielding when pierced with the tip of a knife, 1 hour to 1 1/2 hours.
  • Make the brown butter: In a medium saucepan, melt the butter completely over medium heat. Wait until it starts to simmer and turn golden brown, 3 to 5 minutes. Remove from the heat and stir in the brown sugar, molasses, dry ginger, fresh ginger, cinnamon and cloves. Set aside.
  • Make the puree: When the potatoes are cooked, place them on a flat surface and cut them in half. Use a large spoon to scoop out the flesh. Discard the skins and run the potatoes through the food mill. Transfer to a large bowl and season with salt and pepper. Stir in the milk and all of the reserved brown butter mixture. Taste for seasoning.
  • Finish and serve: Add a few "grates" of orange zest and then cut the orange and half and squeeze in the juice. Taste for seasoning. If the puree lacks sweetness, add a little molasses. If it lacks salt, add more salt or a splash Worcestershire Sauce.

½ teaspoon salt and freshly ground pepper, to taste
½ cup buttermilk
½ cup whole milk
6 tablespoons butter

Steps:

  • Adjust oven rack to upper-middle position; heat to 425 degrees. Place potatoes on a foil-lined pan; bake 45 to 60 minutes, until tender. Peel when cool enough to handle.
  • Puree with salt and pepper in a food processor. With motor running, gradually add milks through feeder tube, then butter. Process until silken. (Can make up to 2 days ahead; store in an airtight container.) Reheat and serve.

2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/2 stick (4 ounces) unsalted butter, cubed
1/2 vanilla bean, scraped

Steps:

  • Place the potatoes, 2 cups water, salt and pepper into a medium saucepan with a lid. Bring to a boil and return to a simmer, cover and cook until very tender, about 20 minutes. Add the potatoes, but not the liquid, to a food processor, and puree until smooth. Add the butter and the vanilla bean seeds to the puree, and pulse again until all ingredients are incorporated and smooth. Hold until ready to plate.

6 pounds (about 6) sweet potatoes
2 ripe bananas, skins on
2 ounces (1/2 stick) unsalted butter, softened
1/2 cup pure maple syrup
2 tablespoons ground cinnamon
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 pound pecans
1/2 cup unsalted butter
1 tablespoon salt
2 tablespoons brown sugar

Steps:

  • Preheat oven to 425 degrees F.
  • Pierce the sweet potatoes with a fork and bake until tender, about 1 hour. Roast the bananas, with the skins on, for the last 15 minutes of cooking time. When cool enough to handle, peel the potatoes and bananas, and transfer to a food processor. Pulse until the potatoes are chunky.
  • Add the butter and maple syrup, puree until smooth. Add the cinnamon, pumpkin pie spice and salt; puree to combine. Transfer to a shallow baking pan and smooth out the surface with a spatula.
  • In a skillet, cook the pecans in butter over low heat and sprinkle with salt. Saute until well-coated, stirring occasionally, for about 5 minutes. Transfer the pecans to paper towels to drain. Arrange pecans on top of puree and sprinkle with brown sugar. Bake at 300 degrees F until heated through, about 20 minutes.

1-1/2 lbs. sweet potatoes, peeled and cut into 1-inch cubes
4 small garlic cloves, sliced thin
3 cups low-sodium chicken or vegetable broth
3 Tbs. chopped fresh thyme or 1-1/2 tsp. dried thyme
2 Tbs. unsalted butter
kosher salt
freshly ground white pepper
2 Tbs. aged balsamic vinegar or balsamic vinegar reduction

Steps:

  • Place sweet potato cubes and garlic in a saucepan and pour in chicken or vegetable broth to within a half inch of the top of the potatoes. Boil until very soft (the potatoes will sink down into the liquid as they cook), 12-15 minutes. Drain, reserving cooking liquid.
  • Return potatoes to saucepan and mash with potato masher. Slowly add some of the cooking liquid, stirring until you get the consistency of a loose puree. It need not be perfectly smooth. Stir in thyme and butter, adding more to taste if needed, and season with salt and white pepper to taste. Keep warm in a double boiler. Drizzle aged balsamic vinegar over each portion just before serving.

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the potatoes on a baking tray and roast in the oven for around 45 mins or until a knife inserts easily into the flesh.
  • Allow to cool a little, carefully peel off the skin, removing any hard bits and blitz in a food processor, with a splash of baby's milk, until smooth. You may need to scrape the sides of the bowl a few times to get a smooth consistency throughout.
  • Serve one portion and divide the rest between small containers or ice cube trays and freeze.
