or 2 (or more) serrano chiles
or jalapeño chiles (preferably red)
1 1/2 cups coarsely chopped shallots (about 8 ounces)
1/4 cup chopped peeled fresh ginger
3 tablespoons chopped lemongrass (from bottom 4 inches of 2 large stalks)
6 macadamia nuts
4 garlic cloves, coarsely chopped
2 teaspoons (packed) golden brown sugar
2 teaspoons turmeric
1 1/2 teaspoons salt
1 teaspoon ground coriander
1 teaspoon paprika
1 bay leaf, crumbled
1/2 teaspoon freshly ground black pepper
2 tablespoons (or more) vegetable oil
1 cup water
Marinade and shrimp:
2 tablespoons fresh lime juice
3 tablespoons (or more) vegetable oil
3 pounds uncooked unpeeled large shrimp, or 2 1/2 pounds uncooked peeled large shrimp, deveined, tails left intact
or 2 1/2 pounds uncooked peeled large shrimp, deveined, tails left intact

Steps:

  • For sambal :
  • Combine 6 Thai bird chiles (or 2 serrano or jalapeño chiles) and next 12 ingredients in processor. Using on/off turns, blend until finely chopped and paste forms. If spicier sambal is desired, add more chopped chiles to taste and blend again until paste forms. Transfer sambal to small bowl. Heat 2 tablespoons oil in heavy large saucepan over medium-high heat. Add sambal and cook until fragrant and lightly browned, stirring constantly and adding more oil by tablespoonfuls if mixture is dry, about 7 minutes. Add 1 cup water; reduce heat to medium and simmer until most of water is absorbed but mixture is still creamy, stirring often, about 4 minutes. Transfer to small bowl and cool. DO AHEAD:Can be made 1 day ahead. Cover sambal and chill.
  • For marinade and shrimp:
  • Whisk lime juice, 3 tablespoons oil, and 2 tablespoons sambal in small bowl. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewhisk marinade before using, adding more oil by teaspoonfuls if marinade is thick.
  • If using unpeeled shrimp, use kitchen scissors to cut shrimp shell along rounded back of tail; scrape out vein with tip of bamboo skewer or tip of small knife. Place peeled or unpeeled shrimp in large glass baking dish. Brush shrimp all over with marinade. Allow shrimp to marinate at room temperature at least 15 minutes and up to 30 minutes.
  • Meanwhile, prepare barbecue (medium-high heat). Brush grill rack with oil. Grill shrimp until just opaque in center, 2 to 3 minutes per side. Transfer shrimp to platter. Rewarm remaining sambal and serve alongside for dipping or for spooning atop shrimp.
  • Ingredient tip:
  • Unpeeled shrimp cook up more succulent and flavorful but are a bit messier to eat than peeled shrimp (which you can use, if you prefer). For ease of preparation, the seafood department at some supermarkets sells uncooked unpeeled shrimp that have already been deveined.

SAMBAL SHRIMP LETTUCE WRAPS

Sambal Shrimp Lettuce Wraps image

If you purchase frozen peeled, deveined shrimp, they'll come with their tails taken off, which is totally fine for this recipe. If you want to grill instead, thread the shrimp onto a skewer after marinating.

Categories     Bon Appétit     Dinner     Seafood     Shellfish     Shrimp     Chile Pepper     Hot Pepper     Honey     Sesame Oil     Cucumber     Lettuce     Mint     Peanut

Yield 4 servings

Number Of Ingredients 12

1/2 cup hot chili paste (such as sambal oelek)
1/4 cup honey
1/4 cup unseasoned rice vinegar
4 tsp. toasted sesame oil, divided
1 1/2 lb. large shrimp
Kosher salt
1-2 Tbsp. vegetable oil
2 Persian cucumbers, thinly sliced into rounds
Flaky sea salt
2 heads of Bibb lettuce, leaves separated, covered, chilled
1/2 cup mint sprigs
1/2 cup crushed salted, dry-roasted peanuts

Steps:

  • Whisk hot chili paste, honey, vinegar, and 2 tsp. sesame oil in a small bowl to combine. Season shrimp lightly with kosher salt and place in a resealable plastic bag. Pour in half of marinade and seal bag. Transfer remaining marinade to a small bowl and set aside for serving. Let shrimp sit at room temperature, turning the bag occasionally to ensure even coating, 10-15 minutes.
  • Remove shrimp from marinade, allowing excess to drip back into bag, and transfer to paper towels to drain. Heat 1 Tbsp. vegetable oil in a large cast-iron skillet over medium-high until shimmering. Working in batches and adding another 1 Tbsp. oil along the way if the skillet is looking dry, arrange shrimp in skillet in a single layer and cook undisturbed 2 minutes (the marinade will have darkened in color and some of the sugars in it will have started to caramelize). Turn shrimp over and cook 30 seconds. Transfer to a platter.
  • Arrange cucumbers on platter next to shrimp; season with sea salt and drizzle with remaining 2 tsp. sesame oil. Arrange lettuce leaves and mint sprigs on platter so that each component is visible and easily accessible. Place crushed peanuts in a small bowl and set out next to platter along with reserved marinade (for spooning into wraps).

TEMPURA SHRIMP MAKI ROLL WITH SAMBAL AIOLI AND WASABI TOBBIKO

Tempura Shrimp Maki Roll with Sambal Aioli and Wasabi Tobbiko image

Provided by Food Network

Categories     main-dish

Time 55m

Yield 24 pieces of sushi

Number Of Ingredients 23

3 cups short grain rice
3 3/4 cups water
1/2 cup rice wine vinegar
3 tablespoons mirin
3 tablespoons sugar
2 tablespoons lemon juice
1 tablespoon sambal
1 teaspoon garlic
3 egg yolks*
1 cup canola oil
Salt
Pepper
1/2 cup rice flour
1/2 cup all-purpose flour
1 teaspoon salt
2 cups club soda
12 medium sized shrimp, peeled, deveined with tail removed
4 sheets nori
Sushi rice
Sambal aioli
1 cup julienne cucumber
1/2 cup julienne red bell pepper
1/2 cup wasabi tobbiko

Steps:

  • For the sushi rice: Wash the rice several times until the water runs clear. Cover the rice with cold water and soak for 20 minutes. Drain and place the rice in a rice cooker. Add 3-3/4 cups water. Cover and cook until the water is absorbed. While the rice is cooking, combine the rice wine vinegar, mirin and sugar in a small saucepan and cook over low heat until the sugar is dissolved. Remove from the heat. When the rice is cooked, remove from the cooker and place in a large wooden bowl. Using a rubber spatula, fold in the vinegar and sugar mixture. When the vinegar mixture is folded in, cover the bowl with a damp towel and let rest for 30 minutes.
  • For the sambal aioli: In the bowl of a food processor or blender, combine the lemon juice, sambal, garlic and egg yolks and process until combined. With the processor running, slowly drizzle in the canola oil to create an emulsion. If the aioli needs to be thinned out after all of the oil has been added, thin with a little water or lemon juice. Season with salt and pepper.
  • *RAW EGG WARNING
  • Food Network Kitchens suggest caution in consuming raw and lightly-cooked eggs due to the slight risk of Salmonella or other food-borne illness. To reduce this risk, we recommend you use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell.
  • To make the Tempura Shrimp Maki Roll: Preheat a fryer to 360 degrees F. In a large bowl, combine the rice flour, all-purpose flour and salt. Add the club soda until the consistency of pancake batter is achieved. Butterfly the shrimp by slicing lengthwise down the back. Dip the shrimp in the tempura batter and then place in the fryer and fry until golden brown, about 3 minutes. Remove from the oil to a paper towel-lined plate.
  • On a sushi mat, lay down 1 piece of the nori, shiny side down. Spread the sushi rice on one half of the nori, about 1/4-inch thick. Spread about 1 tablespoon of the sambal aioli over the rice. In the center of the rice, lay down 1/4 cup of the cucumber and a few strip of red bell pepper in a line that reaches from one side of the nori to the other. Top the cucumber with 3 pieces of the tempura shrimp. Sprinkle 1/4 cup of the wasabi tobbiko over the shrimp. Roll the sushi up, using the sushi mat. To seal the roll, use a little water along the edge of the nori. Cut the roll into 6 pieces. Repeat this procedure 3 more times to create 4 rolls.

GRILLED SHRIMP WITH FIERY LEMONGRASS-CHILE SAMBAL

Grilled Shrimp With Fiery Lemongrass-Chile Sambal image

Steve Raichlen visited 53 countries (6 or 7 continents - if you include the occasional barbcue obsessed scientist stationed in Antartica) on a quest to get to the heart of the most universal cooking method grilling over an open flame. Most countries have evolved their unique grills, rubs, marinades, grilling techniques, and styles of barbecue & that way, the country grills say a lot about its culture. True, a lot of great grilling takes place on Third World street corners, but you can also find some pretty amazing barbecue at luxury resorts. This comes from the hotel Amandari in Indonesia, which is built right into a rice paddy near the artist town of Ubud in Bali Dinner began with a Balinese welcome dance performed by local children They dined at a table for two strewn with rose petals in an open pavilion facing a lily pond. There was a team of chefs that cooked for them alone, on portable grills over charcoal (the best way for excellent flavor!) The succesion of dishes revealed Balinese cooking in all its polymorphic glory. A profoundly complex cuisine only hinted at in the food at your typical street-corner stall, Bon Appetit Magazine, July 2009 edition. The shrimp is grilled with an aromatic paste of lemongrass, ginger, turmeric, chile peppers & paprika. There is a 15-30 minute marinating time not included.:)

SHRIMP TOAST WITH PINEAPPLE-SAMBAL SALSA

Shrimp Toast with Pineapple-Sambal Salsa image

I love this shrimp toast recipe because it's simple, flavorful and you can make most of it ahead of time, which is always a win in my book. It's actually one of the first true recipes I remember learning. Growing up, I have great memories of learning how to make the shrimp mousse as a filling for dumplings or putting it on toast for this recipe. Years later when I trained in France, I picked up a few other techniques to make the mousse even lighter and airier. It's such an impressive yet simple recipe and can be used in many applications. Crunchy, salty and packs a punch of heat and sweetness from the salsa. What's better than that?

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

1 1/2 pounds raw frozen small shrimp, peeled, deveined and thawed (see Cook's Note)
3 large eggs
2 sticks (1 cup) cold unsalted butter, chopped up into 1/8-inch dice
Kosher salt and freshly ground white pepper
2 tablespoons minced fresh ginger
2 tablespoons sliced scallions (white parts only)
Vegetable oil, for testing
Vegetable oil, for frying
1/2 cup sliced scallions (green parts only)
1/4 cup sesame seeds
1 cup shrimp mousse (1/2 pound)
16 very thin slices bread, crusts removed, preferably stale or dried, such as Pepperidge Farm Very Thin 100% Whole Wheat
2 cups diced fresh pineapple
2 teaspoons sambal oelek, plus more to taste

Steps:

  • For the shrimp mousse: In a food processor, add the shrimp and eggs and blend until almost smooth. Add the butter and season with salt and pepper. Pulse until the butter is incorporated, but still visible in small pieces. Gently fold in the ginger and scallions.
  • Test a small piece for flavor by sauteing 1 teaspoon in a small nonstick skillet with oil until the mousse is bright pink and cooked through, 2 to 3 minutes, or microwaving until bright pink and cooked through, 1 to 2 minutes.
  • Place the uncooked mousse in an airtight container, cover and refrigerate for up to 2 days. Makes 4 cups.
  • For the shrimp toast: In a large saute pan, heat 2 to 3 tablespoons oil, or enough to generously coat the pan, over medium-high heat.
  • Reserve 2 to 3 tablespoons of the scallion greens for garnish. On a plate, gently combine the remaining scallions and sesame seeds.
  • Spread 1/4-inch layer of the shrimp mousse on each slice of the bread and sprinkle on the scallion and sesame seed mixture.
  • Carefully place 1 or 2 shrimp toasts in the saute pan, mousse-side down and cook until golden brown, 2 to 3 minutes per side. Transfer to a paper towel-lined plate, drain well and cut diagonally. Repeat with the remaining shrimp toasts.
  • In a small bowl, combine the pineapple with the sambal oelek. Start with the 2 teaspoons of sambal oelek and add more as you'd like until you've reached the desired heat level you like.
  • On a platter, align the triangles and garnish with the pineapple-sambal salsa and remaining 2 to 3 tablespoons of scallion greens to serve.

SHRIMP AND POTATOES IN SAMBAL (SAMBAL GORENG KENTANG UDANG)

Shrimp and Potatoes in Sambal (Sambal Goreng Kentang Udang) image

If you're seeking seriously intense heat and rich, layered flavors to go along with it, Indonesian sambal will deliver a two-for-one punch. The chef Retno Pratiwi uses a mix of red bell peppers and two kinds of red chiles to form the base of the exquisite, bright red sauce, softening it with a little coconut sugar and brightening it with aromatics. You can reduce the number of chiles or opt for milder ones if you're not looking for a kick. Then use it to cook shrimp, as in this recipe, or to enliven other meats and vegetables.

Yield 6 servings

Number Of Ingredients 14

2 large russet potatoes, peeled and cut into small cubes
2 tablespoons vegetable or other neutral oil
3 tablespoons coconut oil
2 red bell peppers, seeded, stemmed and roughly chopped
10 to 15 Thai bird's-eye chiles, stemmed and roughly chopped
Kosher salt, to taste
4 to 6 red chiles (such as red serrano, Fresno or cayenne), stemmed and roughly chopped
10 small shallots, sliced
1 small tomato, chopped (or 1 scant cup cherry tomatoes)
1 tablespoon coconut sugar
4 lemongrass stalks, trimmed, smashed and tied into knots
1 2-inch piece galangal, peeled and lightly smashed to loosen the fibers
10 to 15 fresh makrut lime leaves
1 1/2 to 2 pounds deveined shrimp (tails left intact)

Steps:

  • Heat oven to 350 degrees. Spread the potatoes on a sheet pan and toss with 2 tablespoons vegetable or other neutral oil. Roast until potatoes are golden brown and tender, tossing occasionally, about 40 minutes.
  • Meanwhile, heat 2 tablespoons of the coconut oil in a large sauté pan over medium heat and add the bell peppers and chiles along with a pinch of salt. (The cooking chiles can irritate; you may want to turn on an exhaust fan or open a nearby window.) Cook, stirring occasionally, until softened, 15 to 18 minutes. Transfer peppers and chiles to a food processor and set aside.
  • Put the remaining 1 tablespoon of coconut oil in the same pan and set over medium heat. Add the shallots and a pinch of salt, and cook, stirring often, until they turn a deep golden brown, about 10 minutes. Add shallots to the food processor along with the tomato; process into a smooth purée. Transfer the sambal purée back to the same pan, adding the sugar, lemongrass, galangal and lime leaves. Cook over low heat, stirring occasionally, until the oil starts to separate and the sambal has thickened and turned a deep red, about 30 minutes.
  • Stir the shrimp and cooked potatoes into the sambal; cover and cook until the shrimp are just cooked through, about 10 minutes. Serve immediately, or at room temperature with a side of rice. (Before serving, remove the lemongrass, galangal and lime leaves.)

Time 20m

Yield 2 servings

Number Of Ingredients 11

Kosher salt
4 ounces linguine
1 tablespoon olive oil
2 cloves garlic, sliced paper thin
1 tablespoon roughly chopped shallots or red onion
1 tablespoon sambal (Indonesian chile paste)
1 lemon, juiced
1/2 pound 16/20 count shrimp (8 to 10 shrimp), peeled and deveined
3 tablespoons unsalted butter
1/4 cup thinly sliced scallions (sliced on a bias), for garnish
1 tablespoon breadcrumbs, for garnish

Steps:

  • Combine 64 ounces (1/2 gallon) water with 1 tablespoon salt in a large pot and bring to a hard rolling boil. Add the linguine and cook until al dente according to the package directions.
  • While the pasta cooks, heat a large saute pan over high heat until smoking, about 2 minutes. Add the olive oil and heat until shimmering, about 20 seconds. Add the garlic and shallot and cook, stirring vigorously, until fragrant, about 1 minute. Add the sambal, lemon juice, shrimp and 1/2 teaspoon salt and cook, tossing, until the shrimp start to turn opaque, about 2 minutes. Add the butter, reduce the heat to medium and cook until the sauce is thickened, about 1 minute.
  • The pasta should be al dente about now. Set aside 3 tablespoons of the pasta water, then drain the linguine; transfer both to the saute pan and cook over medium high heat, tossing, until mixed thoroughly.
  • Remove from the heat and plate the pasta high and tight in the center. Garnish with the scallions directly on the pasta, then garnish that with the breadcrumbs. Enjoy!
