Salt potatoes are a regional specialty of Syracuse, New York, a.k.a. The Salt City. Salt potatoes date to the 1800s, invented by local salt mine workers who created a simple and inexpensive lunch by boiling small potatoes in brine. The potatoes are still very popular today with the Central New York crowd, making an incredibly easy and delicious side dish.

4 pounds new potatoes
1 ½ cups fine salt
8 tablespoons butter, melted

Steps:

  • Wash the potatoes and set aside. Fill a large pot with water; stir in salt until it no longer dissolves and settles on the bottom. Place potatoes in the pot and bring to a boil; reduce heat and simmer until potatoes are tender but firm, about 15 minutes. Drain; cover to keep hot.
  • While the potatoes are cooking, melt the butter in a small pan over medium high heat, or in microwave. Serve immediately poured over potatoes.

2 cups kosher salt
Several turns coarsely ground black pepper
4 fresh rosemary sprigs, ripped in pieces
4 fresh thyme sprigs, ripped in pieces
1/2 cup extra-virgin olive oil
12 small yellow potatoes, such as fingerling or Yukon, rinsed, scrubbed, and patted dry

Steps:

  • Combine the salt, pepper, and herbs in a large bowl. Pour the oil into a large cast iron skillet and set over medium-high flame or charcoal grill. When the oil reaches a slight smoke, add the potatoes in a single layer and fry until they get nice and crackled on all sides. Cover the potatoes completely with the salt mixture, and cook for about 1 hour until the salt forms a cooked crust and the potatoes are tender. Break open the crust to serve.

18-24 Cornish or Jersey new potatoes
2-3 bay leaves
25g butter
bunch of spring onions , chopped
4 slices smoked streaky bacon
1 tbsp olive oil
sea salt and freshly ground black pepper

Steps:

  • Scrub new potatoes well and rinse in cold water. Cook in boiling salted water for 15-20 minutes with bay leaves until tender.
  • Meanwhile, preheat the grill to high. Melt butter in a small pan, add a bunch of spring onions, chopped and cook gently for 1-2 minutes to soften.
  • Grill the smoked streaky bacon until crisp and golden, drain on kitchen paper, then break into small pieces.
  • Drain the potatoes and toss with the spring onions, olive oil, some sea salt and freshly ground black pepper. Put the potatoes in a warmed serving dish and top with the bacon pieces. Drizzle with more olive oil if needed.

4 slices of lean bacon, chopped fine
1 pound boiling potatoes
1 onion, chopped fine (about 1/2 cup)
1 garlic clove, minced
2 scallions, sliced thin
1 tablespoon finely chopped fresh parsley leaves

Steps:

  • In a skillet cook the bacon over moderate heat, stirring, for 5 minutes, or until it is crisp, transfer it to paper towels to drain, and in the fat remaining in the skillet cook the potatoes, peeled, sliced thin, and patted dry, and the onion, covered, stirring occasionally, for 5 minutes, or until the potatoes are browned. Reduce the heat to moderately low, stir in the garlic, and cook the mixture, uncovered, stirring occasionally, for 15 minutes. Only three simple ingredients... and one word YUMMY! I found this on Recipe Cottage when I was out of garlic, parmesan... etc. This was a great surprise! SO GOOD... I would say one of the best recipes I've found on the net! (I've added garlic with the butter now when I have it)

2 lbs baby red potatoes or 2 lbs new potatoes
3 quarts water
1 cup table salt or 2 cups kosher salt
1/4-1/2 cup butter or 1/4-1/2 cup olive oil

Steps:

  • Wash and scrub potatoes.
  • Fill medium to large saucepan with water and add salt to water until salt will no longer dissolve and lays at bottom(If you don't measure, this is the easiest way).
  • Bring water to steady boil and add potatoes.
  • Reduce heat to medium, cover and simmer until tender(When knife or fork stabs easily, 25-40 minutes depending on potatoes).
  • Drain potatoes.
  • Toss in serving dish with melted butter or olive oil and add whatever you have on hand to taste -- pepper, parmesan or garlic. Enjoy!

6 slices bacon (6 ounces)
1/2 cup sliced white parts scallion, plus
1/3 cup thinly sliced scallion top (from 1 bunch)
3/4 teaspoon salt
1/2 teaspoon black pepper
6 medium russet potatoes, potatoes (baking, 2 1/2 pounds)
1 (8 ounce) container sour cream

Steps:

  • Cook bacon in a 12-inch heavy skillet over moderate heat, turning over occasionally, until browned and crisp, 6 to 8 minutes.
  • Transfer bacon to paper towels to drain, then carefully transfer drippings from skillet to a small heatproof bowl and stir in white parts of scallions, salt, and pepper.
  • Put oven rack in middle position and preheat oven to 450°F.
  • Tear off 6 (1-foot-long) sheets of heavy-duty foil.
  • Make deep crosswise cuts in potatoes 1/4 inch apart, leaving bottom 1/4 inch intact (do not cut all the way through).
  • Place each potato on a sheet of foil and drizzle each with 1 tablespoon bacon-dripping mixture, separating slices to allow some to drip into cuts.
  • Gather up foil around potatoes, crimping foil to tightly enclose.
  • Roast potatoes until tender, 45 to 50 minutes.
  • Just before serving, stir together sour cream and scallion greens and crumble bacon over mixture.
  • Carefully open foil packets and transfer packets to a platter.
  • Serve potatoes with sour-cream topping.
