Calling for just four ingredients - chicken, salt, pepper and whatever herbs you have around - this is a recipe for roast chicken at its simplest and best. The method is fairly straightforward. You season the bird, then roast it at high heat until the skin is bronzed and crisp and the flesh juicy. If you have time to season the chicken ahead, you should; it makes a difference in flavor. And bear in mind, if you have the kind of oven that starts smoking at high heat, you can cook your bird at 400 degrees instead of 450, though you'll need an extra 5 to 20 minutes to get it done.

- Season the chicken inside and out with salt and pepper. If you have time, refrigerate the chicken, uncovered, for an hour, or overnight.
- Heat oven to 450 degrees. Place chicken breast-side up in a roasting pan or large ovenproof skillet. Stuff cavity with herbs and tie the legs together with kitchen twine. (If you don't have twine, leave the legs as they are.)
- Roast 50 minutes, then baste chicken with pan juices. Continue roasting until chicken's juices run clear when skin is pierced with a knife, 5 to 10 minutes longer. Let stand 10 minutes before carving.

- Cut the chicken thighs into strips. Crush the salt with the peppercorns in a pestle and mortar, then mix with the cornflour and five-spice and tip into a sandwich bag. Tip the chicken into the bag and shake well to coat in the flour mixture.

SALT AND PEPPER ROAST CHICKEN WITH LEMON DRESSING
I roast whole chicken using Jacques Pepin's classic method, in a large cast-iron skillet, but a small roasting pan or shallow, wide Dutch oven works as well of course. The chicken should be roasted on its sides primarily to ensure the juiciness of the breast meat and expose the back and dark meat more evenly to the heat of the oven. Lemon sauce or salmoriglio is an ancient Sicilian sauce that can be used as a marinade and/or as a dressing for any protein, chicken, steak or fish, whether roasted or grilled. The root of the sauce's name is salamoia, which means salty brine, so it's perfectly named to serve and pair with this dry-brined simple chicken.

- For the salt and pepper roast chicken: Liberally season the chicken inside and out with kosher salt and pepper. Refrigerate the chicken uncovered on lowest shelf of fridge in a rimmed pan or dish overnight or up to 24 hours and a minimum of 1 hour.
- For the lemon dressing: Heat a medium cast-iron or heavy skillet over medium-high heat, then sear the lemons cut-side down to caramelize them and sweeten juices, about 4 minutes. Remove lemons from the skillet, add 1/4 cup EVOO and reduce heat a bit. Add shallots and garlic and stir 5 to 6 minutes to soften, then add 1/4 cup water and let it absorb. Turn off heat and cool mixture a bit to room temp. Place cooled mixture in a medium glass bowl and add the juice of the lemons, lemon zest, oregano, red pepper flakes and parsley. Whisk in remaining 3/4 cup EVOO to form a thick dressing.
- Preheat your oven to 425 degrees F, rack at center. Roast the chicken in the skillet on one side for 20 minutes, then turn to opposite side and roast 20 minutes more. Finally turn the chicken on its back (breast-side up), spoon juices over the skin, and continue to roast for 15 to 20 minutes or until the chicken registers 160 to 165 degrees F. Rest bird and carve, then serve with sauce to pass and crusty bread.

- Place the chicken thighs in a large bowl. Cover the chicken with the light soy sauce, Chinese five-spice powder, salt and garlic, and stir to coat. Toss the chicken with the toasted sesame oil. Let marinate for as much time as you have; for best results, leave the chicken in the refrigerator overnight.
- When ready to fry, toss the chicken pieces in the cornstarch.
- Heat a large wok or pan over high heat and add the vegetable oil. Working in batches so as not to crowd the pan, add the chicken and fry lightly until the thighs are golden brown on all sides and cooked through, 6 to 8 minutes. Drain the chicken on paper towels and season them with salt, pepper and cilantro as they come out of the oil.

- Gather your ingredients.
- For the shrimp: Combine the peppers, salt and 5-spice powder in a small bowl or ramekin. Crush the garlic with a hard whack of the knife placed flat over the cloves and hitting them with the heel of your hand. Peel away the skins and clean away the hard root ends. Peel and grate or slice or chop the ginger root. Core and quarter the lettuce and reserve half for another use. Shred the remaining lettuce very thinly and line a platter with it.
- Heat the oil, 2 slow turns of the pan, in a large, shallow nonstick skillet over medium to medium-high heat. Add the garlic and swirl. Add shrimp and cook, tossing the shrimp until pink and opaque or firm, 4 to 5 minutes. Add Shaoxing or alternative and lime juice and swirl to absorb into shrimp, 1 minute. Top with scallions. Slide the shrimp onto the lettuce.
- For the chicken and rice: Heat the water for rice in a 3-quart saucepot to a boil. Salt water, add rice and reduce heat to simmer. Cook rice covered for 15 minutes, shaking pan occasionally. Turn off heat and fluff with fork.
- Cut chicken into large bite-size pieces. Pop skins of garlic and halve the cloves. Peel ginger with tip of a teaspoon. Julienne the ginger into thin sticks or very thinly slice it into rounds.
- Heat a large nonstick skillet over medium to medium-high heat. Add the sesame oil, garlic and ginger; do not let them brown, swirl constantly a minute or 2. Then add the chicken and tuck the garlic and ginger in between. Let the chicken brown 3 to 4 minutes. Turn, add rice wine, dark and light soy sauces, light brown sugar and scallions and reduce heat to simmer. Cover and braise about 12 minutes.
- Uncover the chicken and raise heat to thicken sauce a bit. Add basil to serve.
- Serve the chicken from the pan and transfer the rice to a bowl.
CARDAMOM CHICKEN WITH SALT AND PEPPER CRUST
Don't be turned off by the idea of 'just' salt and pepper. The marinade is intense with flavor, but it's the final seasoning of simple salt and pepper that really makes it delicious. Gotta use Kosher salt and freshly ground pepper here, please don't bother with the regular stuff. Such a difference.

SALT AND PEPPER PORK CHOPS SHRIMP OR CHICKEN WINGS

- If using pork chops: remove the bone from each pork chop, if desired. Butterfly the pork chop by slicing it horizontally into two thin pieces. Lightly pound the butterflied chops to uniform thickness. Prepare the marinade by mixing all the ingredients called for, and marinade the meat or seafood for 30 minutes, or up to 24 hours. Heat the oil in a wok or a deep, heavy skillet to 365 degrees. Thoroughly blend the dry batter ingredients in a wide bowl. Drain the marinated chops (or seafood pieces) and drop the pieces one by one into the dry batter. Make sure each piece is well coated and pat or gently shake off any excess dry batter. In batches, to insure even cooking and that the pieces will not stick together, deep fry the meat or seafood in the hot oil for 2 to 4 minutes. Depending on the thickness of your chop or piece of seafood, you may need to fry more or less time. Make sure the oil temperature does not go below 350 degrees. Place the fried chops or seafood on a paper towel to drain off excess oil. After all of the pieces have been fried, keep 2 tablespoons of the oil in the wok or pan, discarding the rest. Place all of the "final touch" ingredients except for the salt and white pepper or the Roasted Szechuan Pepper-Salt in the wok or skillet and sauté over medium heat until you can smell their aromas. Place the fried chops or seafood back in the pan and stir-fry them with the final touch ingredients for 30 seconds or until the mixture is heated throughout and the flavors are blended. Sprinkle over the salt and white pepper - or the Roasted Szechuan Pepper-Salt. Serve with steamed rice, if desired.

- Sprinkle chicken all over with 1 teaspoon salt and pepper. Place buttermilk in a shallow bowl; add chicken, and turn to coat. Place four on a plate. Working with one piece at a time, lift chicken from bowl, letting excess buttermilk drip back to bowl. Dip chicken in flour to coat both sides. Transfer coated chicken to a separate plate.
- Heat neutral oil in a large skillet over medium-high until oil is hot (about 350°). Shake excess flour from chicken, and add chicken to oil (oil should come about two-thirds up the height of the chicken). Cook until exterior is golden-brown and a meat thermometer says 165°F. About 6 minutes per side. Remove chicken with tongs and transfer to a paper towel-lined plate. Sprinkle evenly with 1 tsp. salt. Let rest 5 minutes.
