1/4 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon grated lime rind
2 tablespoons fresh lime juice
1 cup finely chopped red onion
1/2 cup dry breadcrumbs
1/3 cup bottled sweet and sour sauce
1/4 cup finely chopped red bell pepper
1 tablespoon jamaican jerk seasoning (such as Spice Islands)
1 large egg white
1 lb ground turkey
cooking spray
4 (2 ounce) kaiser rolls or 4 (2 ounce) hamburger buns

Steps:

  • For the salsa:.
  • Combine papaya, mango, red pepper, red onion, cilantro, lime rind and juice.
  • Let stand at room temperature at least 30 minutes before serving.
  • Prepare grill to medium heat.
  • For the burgers:.
  • Combine 1 cup onion , breadcrumbs, sweet and sour sauce, red pepper,jerk seasoning,and egg white. Stir well.
  • Add turkey; mix well to combine.
  • Divide turkey mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Cover and refrigerate 20 minutes.
  • Lightly coat patties with cooking spray; place on a grill rack coated with cooking spray. Grill 7 minutes on each side or until done.
  • Cut rolls in half horizontally.
  • Place rolls, cut sides down, on grill rack; grill 1 minute or until lightly toasted.
  • Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.

Steps:

  • For salsa:
  • Whisk first 3 ingredients in medium bowl to blend. Mix in next 4 ingredients. Season salsa to taste with salt and pepper.
  • Do ahead: Can be made 8 hours ahead. Cover and chill.
  • For burgers:

3/4 cup shredded hot monterey jack pepper cheese

1 tablespoon ground epazote (optional), found at Mexican specialty stores or online
1 tablespoon dried oregano
3 tablespoons chili powder

2 jalapeños, divided, one for the burgers, one for the salsa
2 tablespoons lime juice, about 2 limes
1 small yellow onion, about 1 cup, chopped
2 tablespoons Mexican dark beer, Negra Modelo suggested
2 chipotles in adobo, for extra heat, add 1 tablespoon adobo sauce
2 tablespoons vegetable oil, divided
8 ounces tomatillos
1 clove garlic, chopped
1 serrano chili, chopped
3 tablespoons lime juice, about 2?3 limes
1/3 cup chopped cilantro
2 tablespoons chopped fresh mint
1 teaspoon kosher salt

Steps:

  • Chorizo, part 1: Fill a small bowl with hot water. Smash garlic cloves, then place into the water for 15 seconds to loosen the skin. Peel garlic, then grate it with a microplane into a mixing bowl. Add epazote, oregano, chili powder, salt, cilantro, and pork.
  • Run metal skewers crosswise through the jalapeños to create a grid. Place them directly over the gas flame of a burner to blacken. Using the skewers, rotate jalapeños to char and blacken on all sides, about 5 minutes. (Alternatively, you can broil them, lightly oiled and on a sheet pan, in an oven, about 4 minutes per side.) Remove from heat and set aside to cool, 5 minutes.
  • Add lime juice to the meat mixture. Cut the onion into rings, stack them, and slice top to bottom to dice. Mince them further by rocking the knife back and forth over the dice, then add to the pork mixture, along with the beer. When jalapeños are cool, remove some of the black char with your fingers; set one aside for the salsa. Slice the other in half lengthwise, and remove the ribs and seeds. Finely chop it and add to the pork, along with the chipotles and optional adobo. Mix thoroughly. Cover and refrigerate 18-24 hours.
  • Salsa: Fill a medium bowl with hot water. Place tomatillos in the water to loosen the husk, 3-5 minutes. Put garlic, serrano chili, remaining charred jalapeño (seeded and chopped), cilantro, mint, and salt in a food processor. Remove tomatillos from the water and peel off the husk. Slice, then add to the food processor. Pulse about 30 times, until all ingredients are roughly uniform.
  • Slice the avocados in half lengthwise and remove the pits. Run a spoon between the peel and flesh to remove each half in one piece. Place all four halves into the food processor. Pulse 6-8 more times. Taste, and add more salt if necessary. Place salsa into a bowl with chopped onions. Stir to combine, and set aside. (Makes 3 cups; store in the refrigerator up to 48 hours.)
  • Chorizo, part 2: Remove pork from refrigerator, and shape into 6 patties. Meanwhile, heat a skillet over medium-high heat. Toast buns in an even layer, cut side down, 2 minutes; set aside. Add 1 tablespoon oil to the skillet and heat until shimmering, 1 minute. Add burgers in an even layer (do not crowd) and season lightly with salt. Cook 5 minutes per side, until there's a brown crust on the outside and the internal temperature hits 150-155 F. Repeat with remaining oil, burgers, and buns.
  • Assembly: Place burgers on toasted buns. Top with a tomato slice, a dollop of salsa, and a teaspoon of grated cheese. Serve with remaining salsa on the side. Devour.

3/4 cup panko bread crumbs
1 cup salsa, divided
1 large egg, lightly beaten
2 tablespoons minced fresh cilantro
1 garlic clove, minced
2 teaspoons canola oil
4 whole wheat hamburger buns, split

Steps:

  • In a large bowl, mash beans. Mix in bread crumbs, 1/2 cup salsa, egg, cilantro and garlic. Shape bean mixture into 4 patties; refrigerate 30 minutes., In a large skillet, heat oil over medium heat. Cook burgers 3-5 minutes on each side or until a thermometer reads 160°. Serve on buns with remaining salsa.

Ready, Set, Cook! Reynolds Wrap Contest Entry. As summer winds down and tailgate season heats up I wanted to create a recipe reminiscent of grilling out as we moved into fall! Sweet potatoes are such a fall food for my family and I love putting a healthy spin on a plain old burger with this unique recipe!

2 sweet potatoes
2 garlic heads
1 cup canned cannellini or 1 cup canned black beans
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1/8 teaspoon ground cumin
1/4 teaspoon garlic powder
2 -3 tablespoons olive oil
1 avocado, sliced
1/2 cup sweet corn
1 teaspoon chopped fresh cilantro
1 tablespoon lemon juice
2/3 cup reduced-fat sour cream
1 tablespoon honey
1 tablespoon heavy cream
salt and pepper
4 whole grain buns

Steps:

  • Preheat oven to 375 degrees.
  • Rinse sweet potatoes in cold water, wrap in Reynolds Wrap Foil and poke several times with a fork.
  • Bake for 1 hour (or more) depending on the size of the potatoes.
  • Take 2 bulbs of garlic, chop off about 1/4 inch of the tops, drizzle with olive oil and wrap in Reynolds Wrap Foil.
  • Garlic can cook 30-35 minutes with Sweet Potatoes.
  • Remove garlic and sweet potatoes from oven and allow to cool.
  • Once cool, mash cannellini beans in a large bowl with sweet potatoes.
  • Add in spices, egg, and panko.
  • Mix all of these ingredients together and refrigerate for 20 minutes to help stiffen for burgers.
  • Meanwhile mix the sour cream with the 2 roasted bulbs of garlic, squeezed for all the good stuff, honey, salt, and pepper.
  • Blend until smooth.
  • Take avocado and chop into bite size chunks and in a small ball combine with sweet corn, lemon juice and cilantro for topping.
  • Heat a large pan over medium with olive oil.
  • Take sweet potato mixture and shape into 4 patties.
  • Cook on each side approximately 6-7 minutes until patties seem to hold together and flip.
  • Add the patties to your whole wheat buns and top with avocado mixture and garlic cream sauce.
  • Add lettuce, tomato and onions if desired.

A great burger with toppings that lend a chile induced kick to the taste buds. The New Mexico Chile that is used in this recipe has a mild to medium hot flavor that is similar to an Anaheim Chile, but is a bit hotter. If you prefer a little more heat then the New Mexico Chiles use Poblano Chiles instead. This recipe was adapted from the king of the grill, Steven Raichlen's Burgers. Serve these spicy burgers with ale that accents the underlying flavors in the food while still quelling some of the chilies heat such as Harpoon India Pale Ale or for a complimentary beer that is light on the palate try a Shiner Bock.

olive oil, for brushing
4 unpeeled garlic cloves
1 1/2 lbs anaheim chilies or 1 1/2 lbs poblano chiles
1 1/2 tablespoons finely chopped cilantro
1/2 teaspoon ground cumin
3 teaspoons fresh lime juice
1/2 teaspoon dried oregano, crumbled
1/4 cup water
kosher salt & freshly ground black pepper
1 cup sharp white cheddar cheese, shredded
1 1/2 lbs ground sirloin, at room temperature
4 hamburger buns, good quality

Steps:

  • Light your grill and brush the grate with oil once it is heated. Run a bamboo skewer that has been soaked in water through the garlic cloves. Grill the skewered garlic and the chilies until blackened, occasionally turning to get all sides, about 5-6 minutes for the garlic and about 20 minutes for the chiles. Remove from grill and place in a bowl covered with saran wrap to cool. Peel, core and de-seed chiles and cut into 1/4" strips, then peel the garlic cloves.
  • Place peeled garlic and two-thirds of the chiles in a food processor or blender. Add cilantro, cumin, lime juice, oregano and water and process until smooth. Season with salt and fresh pepper and pour into a small saucepan. Simmer sauce over medium-high heat, stirring occasionally, until the sauce is slightly thickened, approximately 5 minutes. In a small bowl, toss the remaining roasted chiles with cheese.
  • Shape the sirloin into 4 equal patties about 3/4" thick and season generously with salt and pepper. Grill the burgers over a medium-hot fire for about 10 minutes, turning once, for medium-rare meat. Remove the burgers from direct heat and brush the insides of the buns with oil and grill face down until lightly toasted, no more then a 1 minute.
  • Place burgers on the bottom halves of the buns. Top the burgers with the chile-cheese mixture and a generous helping of the salsa verde. Cover with tops of buns and serve immediately, passing the remaining salsa on the side.
